.%20But%20as%20you've%20probably%20worked%20out%20from%20the%20blog%20title,%20these%20'cupcakes'%20are%20butter%20and%20sugar%20free.%20Which%20makes%20for%20a%20slightly%20different%20texture%20to%20what%20you%20might%20be%20expecting.%3C/p%3E%3Cp%3EI%20don't%20even%20know%20what%20I%20was%20expecting%20to%20be%20honest,%20but%20as%20I%20put%20this%20together,%20I%20was%20resigned%20to%20the%20fact%20that%20they%20wouldn't%20work.%20The%20mixture%20was%20quite%20tough,%20and%20the%20ratio%20of%20wet-to-dry%20didn't%20look%20quite%20right.%20There%20didn't%20seem%20to%20be%20enough%20liquid,%20but%20I%20decided%20to%20just%20go%20with%20it%20and%20bake%20them%20anyway.%3C/p%3E%3Cp%3EYes,%20when%20you%20need%20two%20utensils%20to%20scrape%20a%20thick%20mixture%20off%20one%20spoon%20from%20another%20into%20a%20cupcake%20hole,%20it%20aint%20looking%20good.%20But%20I'm%20really%20glad%20that%20I%20decided%20to%20ignore%20the%20demons%20inside%20my%20head%20screaming%20at%20me%20to%20stop%20and%20just%20give%20up.%3C/p%3E%3Cp%3ECos%20look!%3C/p%3E%3Cp%3EThey%20did%20not%20turn%20out%20tough%20and%20tasteless%20-%20they%20actually%20have%20more%20of%20a%20'bready'%20texture%20and%20pretty%20moist.%3C/p%3E%3Cp%3EAnd%20well%20as%20the%20banana%20and%20coconut,%20these%20have%20orange%20juice%20concentrate%20and%20vanilla%20essence%20too,%20to%20add%20to%20the%20sweetness.%20So,%20don't%20be%20put%20off%20by%20the%20tough%20mixture%20if%20you%20try%20this%20out%20-%20it's%20er,%20'meant'%20to%20be%20like%20that%20-%20as%20you%20will%20still%20end%20up%20with%20delightfully%20sweet%20cupcakes!%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20190%20degrees%20C.%20In%20a%20small%20bowl,%20mash%20the%20banana%20with%20the%20beaten%20egg,%20orange%20juice,%20oil%20and%20vanilla.%3C/p%3E%3Cp%3E2.%20In%20a%20large%20mixing%20bowl,%20sift%20in%20the%20flour%20with%20the%2050g%20coconut%20and%20baking%20powder.%3C/p%3E%3Cp%3E3.%20Fold%20in%20the%20banana%20mixture,%20then%20spoon%20evenly%20into%2010%20lined%20cupcake%20holes.%20Top%20with%20a%20little%20extra%20coconut,%20then%20bake%20for%20about%2020%20minutes%20until%20just%20risen.%3C/p%3E%3Cp%3EOther%20healthy%20baking%20recipes%20you%20might%20enjoy.%3C/p%3E%3Cp%3EOther%20butter%20free%20and%20sugar%20free%20baking%20recipes%20that%20might%20take%20your%20fancy.%3C/p%3E){kind=link}
