,%20I%20went%20into%20oatmeal%20phase%20and%20stayed%20there,%20switching%20between%20Quaker%20and%20Kashi%20brands,%20for%20almost%20a%20year.%20I%20grew%20tired%20of%20washing%20my%20oatmeal%20bowl%20at%20work%20every%20morning,%20and%20those%20days%20when%20I%20didn%E2%80%99t%20wash%20it,%20I%20felt%20icky%20and%20it%20was%20harder%20to%20wash%20the%20next%20time,%20further%20enhancing%20the%20annoyance.%20And%20plus,%20homemade%20oatmeal%20for%20dinner,%20laden%20with%20brown%20sugar,%20dried%20cranberries,%20and%20walnuts,%20is%20much%20better,%20and%20I%20like%20to%20do%20that%20once%20a%20week%20to%20keep%20the%20oatmeal%20vibe%20alive%20%20.%3C/p%3E%3Cp%3EThen%20those%20granola%20bars,%20those%20lovely%20granola%20bars,%20came%20into%20my%20life.%20I%20make%20different%20versions%20of%20them%20regularly,%20recently%20using%20barley%20in%20place%20of%20oats%20(more%20protein%20&%20fiber)%20and%20dried%20blueberries%20for%20the%20fruit%20(which%20ain%E2%80%99t%20cheap,%20so%20that%20won%E2%80%99t%20happen%20often,%20that%E2%80%99s%20for%20sure).%20They%20are%20perfectly%20chewy%20but%20still%20crunchy,%20healthy%20but%20still%20somewhat%20sweet%20and%20tasty,%20and%20most%20importantly%20they%20are%20filling.%3C/p%3E%3Cp%3EI%E2%80%99m%20still%20in%20granola%20bar%20phase,%20but%20every%20so%20often%20it%E2%80%99s%20nice%20to%20rotate%20something%20into%20the%20weekly%20mix,%20and%20generally%20that%20rotation%20includes%20muffins.%20I%20was%20inspired%20by%20a%20plethora%20of%20posts%20using%20bananas%20and%20chocolate%20chips%20over%20the%20past%20few%20weeks,%20including%20David%E2%80%99s%20banana%20cake%20and%20Kristin%E2%80%99s%20banana%20chocolate%20walnut%20cake,%20and%20set%20out%20to%20make%20a%20healthy%20breakfast%20version%20to%20use%20some%20bananas%20I%E2%80%99d%20frozen%20(cryogenic-style,%20to%20preserve%20their%20ripeness)%20a%20couple%20of%20weeks%20ago.%3C/p%3E%3Cp%3E[For%20those%20of%20you%20turning%20your%20nose%20up,%20stop%20it.%20Right%20this%20instant.%20Those%20'naners%20are%20perfectly%20edible%20and%20when%20baking,%20the%20darker%20they%20are,%20the%20better.%20I%20like%20to%20let%20them%20get%20really%20dark%20before%20freezing%20them,%20as%20they're%20most%20tasty%20at%20that%20point.]%3C/p%3E%3Cp%3EI%E2%80%99m%20also%20recently%20turned%20on%20by%20non-all-purpose%20flours,%20and%20after%20a%20little%20research%20I%20surmised%20that%20bananas%20and%20spelt%20flour%20would%20be%20soulmates,%20or%20something.%20Ironically,%20I%E2%80%99d%20just%20bought%20some%20for%20a%20focaccia%20recipe%20(stay%20tuned,%20friends),%20so%20out%20of%20the%20freezer%20the%20%E2%80%98naners%20came%20and%20after%20a%20little%20thawing,%20straight%20into%20the%20oven%20they%20went,%20along%20with%20some%20spelt%20flour,%20some%20walnuts,%20and%20chocolate%20(banana%E2%80%99s%20other%20soulmate;%20it%20has%20more%20than%20one..).%3C/p%3E%3Cp%3EThe%20end%20result?%20Like%20I%20said,%20a%20match%20made%20in%20heaven,%20for%20certain.%3C/p%3E%3Cp%3EHave%20any%20of%20you%20used%20spelt%20flour?%20And%20if%20so,%20what%20for?%3C/p%3E%3Cp%3EMo%E2%80%99%20breakfast:%3C/p%3E%3Cp%3ETomato-Poached%20Eggs%3C/p%3E%3Cp%3EHomemade%20Granola%20Bars%3C/p%3E%3Cp%3EOat%20Bran%20&%20Fruit%20Muffins%3C/p%3E%3Cp%3EMuffins,%20Muffins,%20bo-buffins,%3C/p%3E%3Cp%3EBanana-fana%20fo-fuffins,%3C/p%3E%3Cp%3EFee-fi-mo-muffins,%3C/p%3E%3Cp%3EMuffins!%3C/p%3E%3Cp%3ESpelt%20Banana-Chocolate-Walnut%20Muffins%3C/p%3E%3Cp%3EAdapted%20from%20Wednesday%20Food%20Blogging%3C/p%3E%3Cp%3EDid%20I%20mention%20these%20lil%E2%80%99%20muffins%20are%20vegan?%20Probably%20not,%20since%20I%E2%80%99m%20not%20a%20vegan.%20It%20just%20sorta%20happened%20that%20way,%20as%20I%20was%20searching%20for%20ultra-healthy%20adaptations.%20And%20FYI,%20the%20flax%20seeds%20are%20a%20great%20substitute%20for%20eggs%20that%20provide%20loads%20of%20fiber%20and%20omega-3%E2%80%B2s%20(1%20T%20ground%20flax%20seeds%20+%203%20Tbsp%20water%20(or%20other%20liquid)%20=%201%20egg).%20Lovely%20even%20for%20us%20non-vegans.%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F.%20Spray%20a%20muffin%20tin%20with%20cooking%20spray;%20set%20aside.%20Whisk%20ground%20flax%20seeds%20and%20water%20in%20a%20small%20bowl;%20set%20aside.%3C/p%3E%3Cp%3ECombine%20spelt%20flour%20through%20chocolate%20chips%20in%20small%20bowl.%20Combine%20rum,%20bananas,%20sugar%20and%20walnut%20oil%20in%20a%20larger%20bowl,%20add%20flax%20mixture.%20Add%20dry%20ingredients,%20a%20half%20cup%20at%20a%20time,%20and%20stir%20until%20combined.%20Pour%20into%20prepared%20muffin%20tins%20and%20bake%20for%20~30%20minutes,%20or%20until%20toothpick%20inserted%20in%20muffin%20comes%20out%20clean.%20If%20necessary,%20cover%20with%20a%20piece%20of%20aluminum%20foil%20to%20prevent%20over-browning.%3C/p%3E%3Cp%3E*Of%20note,%20various%20sites%20claim%20that,%20although%20spelt%20flour%20is%20not%20gluten-free,%20it%E2%80%99s%20tolerated%20by%20people%20with%20wheat%2
