,%20though%20I%20am%20rather%20fond%20of%20the%20creamy%20spinach%20one%20I%20posted%20a%20few%20months%20back%20and%20inbetween%20then%20and%20now%20theres%20been%20alrights%20and%20hmm's..however%20all%20has%20changed%20and%20this%20is%20definately%20my%20new%20favourite%20dal!%20Its%20thick%20and%20mmm,%20oh%20and%20fragrant,%20and%20I%20found%20myself%20eating%20from%20the%20spoon%20whilst%20putting%20the%20remanants%20into%20my%20lunchbox%20for%20tomorrow..without%20the%20pork%20part%20its%20a%20great%20veggie%20dish!%3C/p%3E%3Cp%3EThe%20actual%20type%20of%20dal%20I%20used%20came%20about%20after%20originally%20wanting%20to%20make%20another%20recipe%20from%20Simon%20Hopkinson's%20book%20'Week%20In,%20Week%20out'%20which%20I%20reviewed%20a%20while%20back%20(and%20where%20the%20delightful%20aforementionned%20spinachy%20one%20came%20from!)%20for%20Fragrant%20Duck%20'pilaf'%20and%20it%20called%20for%20Moong%20Dal.%20First%20hurdle%20though%20was%20trying%20to%20find%20a%20bag%20of%20the%20stuff%20that%20wasn't%20into%20giant%20proportions%20-%20ASDA%20only%20had%202kg%20bags....so%20I%20eventually%20asked%20my%20Dad,%20who%20luckily%20lives%20nearer%20lots%20of%20ethnic%20grocers%20and%20he%20got%20me%20two%20smaller%20packets,%20one%20of%20Moong%20Dal%20Chilka,%20which%20is%20yellow%20and%20green,%20and%20also%20a%20bag%20of%20yellow%20Mung%20Dal.%20To%20be%20honest%20I%20have%20found%20the%20different%20names%20baffling%20at%20times%20though%20think%20one%20or%20the%20other%20would%20be%20correct..%3C/p%3E%3Cp%3EHowever,%20today%20I%20found%20myself%20on%20a%20day%20off%20from%20work,%20not%20much%20in%20the%20cupboards%20or%20fridge%20and%20horrible%20weather%20not%20exactly%20enticing%20me%20to%20leave%20the%20house%20I%20decided%20to%20have%20a%20go%20at%20making%20my%20own%20spice%20mix%20from%20the%20cupboards%20and%20leaving%20the%20duck%20recipe%20for%20another%20time,%20but%20still%20using%20the%20above%20lentils%20and%20choosing%20the%20pork%20shoulder%20steaks%20instead%20that%20I'd%20defrosted%20overnight.%20This%20recipe%20is%20nothing%20like%20the%20Duck%20one,%20I%20will%20definately%20make%20and%20post%20that%20another%20time,%20this%20came%20about%20purely%20from%20imagination%20and%20wanting%20to%20use%20my%20cute%20little%20spice%20tin%20I%20was%20given%20last%20year!%3C/p%3E%3Cp%3EThe%20pork%20part%20is%20good,%20with%20a%20nice,%20if%20a%20little%20plain%20marinade,%20however%20the%20real%20star%20is%20the%20Dal.%20I'm%20not%20entirely%20sure%20the%20two%20fully%20worked%20together%20and%20to%20be%20honest%20I%20would%20be%20happy%20enough%20just%20with%20a%20big%20hot%20bowl%20of%20the%20Dal!%20The%20pork%20was%20really%20for%20feeding%20carnivorous%20boyfriend%20and%20he%20enjoyed%20it!%3C/p%3E%3Cp%3EOne%20thing%20I%20have%20learnt%20over%20the%20last%20few%20months%20with%20Dal's%20is%20to%20make%20a%20Tarka,%20a%20finishing%20touch%20to%20the%20dish:%3C/p%3E%3Cp%3E1/2%20tsp%20fennel%20seeds%3C/p%3E%3Cp%3E1/2%20tsp%20fenugreek%20seeds%3C/p%3E%3Cp%3E1%20tsp%20yellow%20mustard%20seeds%3C/p%3E%3Cp%3E1/2%20tsp%20cumin%20seeds%3C/p%3E%3Cp%3ELightly%20toast%20the%20spices,%20cool%20and%20grind%20together,%20reserve%20for%20later%20stages.%3C/p%3E%3Cp%3EFor%20the%20pork;%20marinade%202%20pork%20shoulder%20steaks%20in%201/2%20tsp%20turmeric,%201/4%20tsp%20ground%20cayenne,%20pinch%20white%20pepper,%201/2%20tsp%20ground%20coriander%20and%201%20clove%20roughly%20chopped%20garlic,%20blended%20with%202%20tsp%20sunflower%20oil.%20Leave%20for%20a%20couple%20of%20hours%20if%20possible.%3C/p%3E%3Cp%3EDal%20recipe:%3C/p%3E%3Cp%3E(makes%20enough%20for%203%20happy%20portions)%3C/p%3E%3Cp%3ESoak%20250g%20of%20Moong%20Dal%20Chilka%20for%20a%20couple%20of%20hours%20in%20cold%20water,%20rinse%20and%20drain.%3C/p%3E%3Cp%3EHeat%201%20tsp%20oil%20in%20a%20saucepan,%20add%20the%20drained%20dal%20and%20fry%20for%20a%20couple%20of%20minutes,%20add%20apx%20750ml%20cold%20water,%201%20knorr%20vegetable%20stockpot,%20a%20pinch%20of%20chilli%20powder,%20pinch%20ground%20coriander%20and%201/2%20tsp%20of%20the%20ground%20Tarka%20mix,%20bring%20to%20boil%20and%20simmer%20for%2025%20minutes,%20add%20a%20tin%20of%20drained%20Kala%20Chana%20(a%20darker,%20nuttier%20chickpea,%20use%20normal%20if%20you%20can't%20find)%20simmer%20for%20a%20further%2010%20minutes%20or%20until%20you%20have%20a%20creamy,%20thickish%20mixture.%20Add%20a%20little%20salt%20to%20taste.%3C/p%3E%3Cp%3EWhen%20the%20Dal%20has%20started%20cooking,%20fry%20the%20pork%20steaks%20along%20with%20a%20sliced%20onion%20until%20almost%20cooked%20through,%20add%20more%20oil%20if%20needed,%20remove%20the%20pork%20and%20add%201%20tsp%20white%20wine%20vinegar,%20simmer%20for%20a%20couple%20of%20minutes,%20add%201/2%20tin%20chopped%20tomatoes,%201%20tsp%20of%20the%20tarka%20mix,%20cover%20and%20simmer%20for%2010%20mins,%20return%20the%20pork%20and%20cook%20through%20-%20about%20a%20further%205-6%20minutes,%20allow%20to%20rest%20for%20a%20couple%20of%20minutes%20before%20serving%20in%20a%20warm%20place.%3C/p%3E%3Cp%3ETo%20finish,%20heat%20a%20small%20pan%20with%201%20tbsp%20butter%20until%20foaming,%20add%20the%20remaining%20Tarka%20mix%20and%20cook%20for%20a%20couple%20of%20seconds,%20stir%20into%20the%20dal.%20Serve%20immediately%20with%20the%20pork,%20if%20desired.%3C/p%3E%3Cp%3EIf%20you%20were%20just%20making%20the%20dal%20alone,%20I%20would%20still%20make%20the%20same%20quantity%20of%20spice%20mixture,%20though%20maybe%20adjust%20to%20your%20tastes%20by%20adding%20a%20little%20less%20of%20the%20mixture.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EAs%20a%20bit%20rambled%20above,%20full%20ingredients%20are:%3C/p%3E){kind=link}
