%20recipe%20book.%20If%20you%20read%20my%20previous%20post,%20you%20will%20know%20what%20it%20is.%3C/p%3E%3Cp%3EThe%20cake%20is%20made%20by%20first%20baking%20the%20chocolate%20chiffon%20cake%20then%20assembled%20with%20whipped%20cream%20frosting%20and%20cherries.%20Hubby%20once%20asked%20why%20I%20don't%20use%20our%20famous%20chocolate%20cake%20as%20the%20base.%20To%20me,%20the%20moist%20chocolate%20cake%20is%20too%20dense%20for%20such%20cake.%20The%20lightness%20of%20the%20chiffon%20cake%20is%20just%20perfect%20for%20this%20type%20of%20dessert.%3C/p%3E%3Cp%3EChocolate%20Chiffon%20Cake:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20350%20deg%20F.%20Line%20the%20bottom%20of%202%208x2%20round%20pan%20with%20greaseproof%20paper.%20Do%20not%20grease.%3C/p%3E%3Cp%3E2.%20Measure,%20sift%20and%20mix%20the%20first%20set%20of%20dry%20ingredients%20above%20then%20make%20a%20well%20in%20the%20center.%20Add%20in%20order%20the%20oil,%20eggyolks%20and%20water.%3C/p%3E%3Cp%3E3.%20Mix%20with%20a%20wire%20whip%20or%20wooden%20spoon%20until%20there%20are%20no%20lumps.%20Do%20not%20overmix.%20It%20usually%20just%20take%20me%20about%20a%20minute%20or%20two%20to%20do%20this.%20Set%20aside.%3C/p%3E%3Cp%3E4.%20Beat%20the%20eggwhites%20with%20the%20cream%20of%20tartar%20until%20frothy%20then%20gradually%20add%20the%20sugar%20and%20beat%20on%20high%20until%20stiff%20but%20still%20glossy.%3C/p%3E%3Cp%3E5.%20Mix%201/3%20of%20the%20beaten%20eggwhites%20to%20the%20cake%20batter%20and%20fold%20gently%20until%20fully%20incorporated.%20Fold%20in%20the%20remaining%20eggwhites.%3C/p%3E%3Cp%3E6.%20Bake%20for%20about%2030%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3E7.%20After%20removing%20from%20the%20oven,%20cool%20the%20cake%20in%20an%20upside%20down%20position%20in%20a%20wire%20rack.%3C/p%3E%3Cp%3EPrepare%20the%20soaking%20syrup:%3C/p%3E%3Cp%3ESYRUP:%3C/p%3E%3Cp%3E1/3%20cup%20sugar%3C/p%3E%3Cp%3E1/3%20cup%20water%3C/p%3E%3Cp%3E3%20TBSP%20CHERRY%20brandy%3C/p%3E%3Cp%3EBoil%20the%20sugar%20and%20water%20and%20let%20simmer%20for%20a%20few%20minutes.%20Remove%20from%20heat%20and%20add%20in%20the%20cherry%20brandy.%3C/p%3E%3Cp%3ESpoon%20or%20brush%20this%20syrup%20over%20the%20surface%20of%20the%20unmolded%20cake.%3C/p%3E%3Cp%3EFor%20the%20Fillng%20&%20Frosting:%3C/p%3E%3Cp%3E2%20cups%20chilled%20whipped%20cream%3C/p%3E%3Cp%3E1/2%20c%20sifted%20powdered%20sugar%3C/p%3E%3Cp%3E1%20bar%20Cream%20Cheese%20(optional)%3C/p%3E%3Cp%3ECherry%20pie%20filling%3C/p%3E%3Cp%3EShaved%20chocolate%3C/p%3E%3Cp%3EFirst%20some%20notes%20about%20the%20frosting:%3C/p%3E%3Cp%3E1.%20The%20original%20recipe%20calls%20for%202/3%20cup%20sugar.%20To%20me%201/2%20cup%20is%20enough.%20The%20sweetness%20of%20the%20cake,%20the%20syrup%20and%20the%20chocolate%20shavings%20will%20make%20up%20for%20that%20part.%3C/p%3E%3Cp%3E2.%20Most%20Black%20Forest%20Cake%20recipe%20don't%20call%20for%20cream%20cheese%20but%20I%20tell%20you%20the%20cream%20cheese%20will%20make%20it%20the%20best%20BFC%20you've%20ever%20had.%20I%20divide%20my%20BFC%20cakes%20into%20two%20categories:%20Regular%20and%20Premium.%20The%20cream%20cheese%20is%20added%20to%20the%20latter.%3C/p%3E%3Cp%3E3.%20Whipped%20cream%20must%20be%20chilled%20overnight%20or%20at%20least%203%20hours%20but%20I%20now%20use%20Bakersfield%20Whippit%20non-dairy%20cream%20so%20I%20do%20not%20have%20to%20chill%20it.%3C/p%3E%3Cp%3E4.%20If%20you%20are%20in%20the%20Philippines%20and%20find%20the%20imported%20%22whipping%22%20cream%20expensive%20or%20live%20in%20a%20place%20where%20there%20are%20no%20whipping%20cream%20(like%20here,%20ugh),%20do%20not%20worry,%20the%20Alaska%20All-Purpose%20Creamer%20can%20do%20the%20job.%20I%20find%20it%20better%20smelling%20than%20Nestle.%20Do%20I%20sound%20like%20I'm%20endorsing?%3C/p%3E%3Cp%3ETo%20make%20the%20frosting,%20whip%20your%20chilled%20cream%20with%20the%20powdered%20sugar%20using%20an%20electric%20beater%20until%20it%20doubles%20in%20volume.%20In%20a%20separate%20bowl%20beat%20the%20creamcheese%20until%20light%20and%20fluffy.%20Fold%20this%20into%20the%20whipped%20cream.%3C/p%3E%3Cp%3EIf%20you%20want%20a%20more%20stable%20whipped%20cream%20frosting,%20you%20can%20add%20gelatin%20to%20it.%20Do%20this%20as%20your%20first%20step.%20Sprinkle%20a%20tablespoon%20(1%20packet%20Knox)%20to%204%20tablespoons%20cold%20water.%20Let%20stand%20for%205%20minutes%20to%20soften%20the%20gelatin.%20Microwave%20at%20half%20power%20for%2010-30%20seconds%20to%20melt%20the%20gelatin%20or%20you%20can%20melt%20it%20using%20the%20double%20boiler%20method.%20Let%20cool%20but%20do%20not%20allow%20it%20to%20set.%20Add%20this%20after%20the%20cream%20has%20attained%20the%20necessary%20volume%20and%20continue%20beating%20the%20cream%20until%20soft%20peaks%20are%20formed.%3C/p%3E%3Cp%3ETo%20assemble%20the%20cake,%20fill%20it%20with%20the%20whipped%20cream%20frosting,%20spoon%20cherry%20pie%20filling%20over%20the%20whipped%20cream.%20I%20process%20my%20cherry%20pie%20filling%20in%20the%20food%20processor%20because%20I%20do%20not%20want%20whole%20cherries%20in%20the%20filling.%20Top%20the%20iced%20layer%20with%20the%20second%20cake.%20Frost%20the%20entire%20cake.%20Pipe%20some%20rosettes%20on%20top%20of%20the%20cake,%20spoon%20some%20more%20pie%20filling%20on%20top.%20Garnish%20with%20whole%20cherries%20and%20chocolate%20shavings.%3C/p%3E%3Cp%3EMore%20notes:%3C/p%3E%3Cp%3EFor%20the%20garnish,%20I%20buy%20the%20whole%20cherries%20with%20stem.%20For%20the%20chocolate%20shavings,%20I%20use%20a%20thin%20knife%20if%20I%20want%20to%20make%20curls%20and%20run%20it%20over%20a%20chocolate%20bar.%20When%20I%20am%20lazy,%20I%20use%20a%20peeler.%3C/p%3E%3Cp%3EIf%20you%20want%20a%20four-layer%20BFC,%20double%20the%20cake%20recipe%20and%20bake%20it%20in%202%209%22%20pan%20then%20just%20torte%20each%20cake%20to%20make%204%20layers.%3C/p%3E%3Cp%3EAfter%20discovering%20Bakersfield%20Whippit,%20I%20feel%20in%20love%20with%20it.%20It%20is%20a%20very%20stable%20whipped%20cream.%20I%20just%20have%20to%20add%20water%20to%20the%20paste%20and%20whip%20it.%20It%20whips%20beautifully.%20Heaven.%20It%20is%20very%20stable%20and%20doesn't%20melt.%20It%20gives%20very%20beautiful%20result.%20When%20using%20Whippit,%20I%20omit%20the%20sugar%20because%20it%20is%20already%20slightly%20sweetened.%3C/p%3E%3Cp%3EHope%20you%20like%20it.%20Enjoy!%3C/p%3E){kind=link}
