,%20it%20takes%20no%20more%20then%2020%20minutes%20to%20watch%20most%20shows.%20I%20do%20get%20a%20lot%20of%20ideas%20from%20them%20-%20not%20only%20for%20recipes,%20but%20also%20techniques.%20One%20show%20I've%20tried%20many%20recipes%20from%20is%20Secrets%20of%20a%20Restaurant%20Chef.%20Our%20all-time%20favorite%20from%20the%20show%20is%20Anne%20Burrell's%20Eggs%20Flamenco,%20but%20I've%20tried%20many%20others.%20I%20saw%20her%20make%20this%20calamari%20and%20decided%20I%20must%20try%20it.%20I%20knew%20I%20could%20get%20whole%20calamari%20at%20Whole%20Foods%20and%20the%20other%20ingredients%20are%20all%20standard%20in%20my%20kitchen.%3C/p%3E%3Cp%3EIt%20comes%20together%20pretty%20quickly.%20If%20you're%20having%20company,%20you%20can%20stuff%20the%20rolls%20and%20prep%20the%20sauce%20ahead,%20then%20just%20pop%20the%20rolls%20into%20the%20sauce%20about%2030%20minutes%20before%20you%20want%20to%20serve%20dinner.%20Anne's%20original%20recipe%20calls%20for%20pulsing%20the%20shrimp%20in%20a%20food%20processor%20but%20I%20left%20mine%20chunky%20because%20we%20prefer%20more%20bite.%20I%20have%20to%20say,%20this%20was%20very%20tasty%20but%20texturally%20it%20wasn't%20our%20favorite.%20The%20filling,%20even%20with%20the%20chunks%20of%20shrimp,%20was%20very%20soft%20-%20if%20I%20made%20it%20again,%20I'd%20probably%20try%20to%20use%20more%20shrimp%20and%20less%20breadcrumb%20and%20egg.%20But%20give%20it%20a%20try%20-%20you%20might%20love%20the%20texture%20-%20and%20cooking%20the%20rolls%20in%20the%20sauce%20lends%20a%20delicious%20taste.%3C/p%3E%3Cp%3EBraised%20Calamari%20Stuffed%20with%20Shrimp%20and%20Spinach%3C/p%3E%3Cp%3Erecipe%20adapted%20from%20Secrets%20of%20a%20Restaurant%20Chef%20with%20Anne%20Burrell%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3ETo%20make%20the%20calamari:%3C/p%3E%3Cp%3ERoughly%20chop%203%20of%20the%20calamari%20tubes%20and%20add%20to%20a%20large%20bowl%20with%20the%20coarsely%20chopped%20shrimp%20and%20garlic.%20Add%20the%20spinach,%20eggs,%20bread%20crumbs,%20cheese,%20herbs,%20and%20pinch%20of%20crushed%20red%20pepper.%20Season%20with%20salt%20and%20stir%20to%20combine.%20The%20mixture%20should%20be%20a%20little%20chunky%20but%20moist%20and%20holding%20together.%20Optional:%20Test%20the%20seasoning%20of%20the%20mix%20by%20making%20a%20mini%20patty,%20cooking%20it%20in%20a%20small%20pan%20and%20eating%20it.%20It%20should%20taste%20really%20good!%20If%20it%20doesn't%20it%20is%20probably%20missing%20salt.%20Add%20more%20salt,%20to%20taste.%20Divide%20the%20stuffing%20among%20the%208%20remaining%20calamari%20bodies%20and%20secure%20closed%20with%20toothpicks.%3C/p%3E%3Cp%3ETo%20make%20the%20sauce:%3C/p%3E%3Cp%3ECoat%20a%20large,%20wide%20skillet%20or%20saucepan%20with%20olive%20oil%20and%20add%20the%20onions%20and%20a%20pinch%20of%20crushed%20red%20pepper.%20Season%20with%20salt%20and%20put%20the%20saucepan%20over%20medium%20heat.%20Saute%20the%20onions%20until%20they%20are%20soft%20and%20aromatic,%20about%207%20to%208%20minutes.%20Add%20the%20garlic%20and%20cook%20another%202%20minutes%20until%20fragrant.%20Stir%20in%20the%20wine%20and%20cook%20until%20the%20wine%20has%20reduced%20by%20half.%20Pass%20the%20tomatoes%20through%20a%20food%20mill%20or%20puree%20them%20in%20a%20food%20processor%20and%20add%20them%20and%201%20cup%20of%20water%20to%20the%20pan.%20Season%20with%20salt,%20to%20taste,%20and%20simmer%20the%20sauce%20for%2015%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20calamari%20to%20the%20pan%20and%20cook%20for%2020%20to%2025%20minutes%20turning%20them%20over%20halfway%20through%20the%20cooking%20time.%20Remove%20the%20calamari%20from%20the%20pan%20and%20remove%20the%20toothpicks.%20Reduce%20the%20sauce%20to%20thicken,%20if%20needed.%20Arrange%20the%20calamari%20on%20a%20serving%20platter%20and%20cover%20with%20the%20sauce%20before%20serving.%3C/p%3E){kind=link}
