%3C/p%3E%3Cp%3ESometimes%20as%20I%20am%20creating%20something%20in%20my%20kitchen,%20I%20ponder%20the%20alchemy%20of%20cookery%20.%20.%20.%20I%20wonder%20things%20like%20.%20.%20.%20who%20was%20it%20that%20discovered%20that%20eggs%20were%20good%20to%20eat%20.%20.%20.%20and%20then%20.%20.%20.%20having%20discovered%20that%20they%20were%20indeed%20very%20good%20to%20eat%20.%20.%20.%20who%20was%20it%20who%20discovered%20that%20if%20you%20beat%20them%20together%20with%20flour,%20butter,%20sugar%20and%20leavening%20.%20.%20.%20you%20ended%20up%20with%20cake???%3C/p%3E%3Cp%3EAnd%20then,%20having%20pondered%20that%20.%20.%20.%20%20and%20in%20the%20nature%20of%20what%20I%20was%20making%20today%20.%20.%20.%20who%20was%20it%20that%20discovered%20that%20if%20you%20separated%20the%20white%20and%20yolks%20.%20.%20.%20the%20yolks%20could%20be%20beaten%20light%20and%20fluffy%20.%20.%20.%20and%20that%20having%20done%20so,%20if%20you%20beat%20sugar%20into%20them%20and%20then%20baked%20them%20.%20.%20.%20the%20result%20was%20lovely%20sweet,%20crunchy%20and%20light%20meringues???%3C/p%3E%3Cp%3EYes,%20I%20do%20have%20an%20enquiring%20mind%20.%20.%20.%20and%20sometimes%20I%20really%20do%20wonder%20about%20these%20things%20.%20.%20.%20perhaps%20it's%20just%20in%20my%20nature.%3C/p%3E%3Cp%3EToday,%20having%20use%20the%20yolks%20for%20another%20purpose,%20I%20found%20myself%20with%20a%20surplus%20of%20egg%20whites.%20%20I%20decided%20to%20make%20some%20lovely%20light%20and%20sweet%20meringues.%20%20Lightly%20spiced%20meringues%20.%20.%20.%20redolent%20of%20ground%20cardamom%20and%20cinnamon%20.%20.%20.%20%20and%20then%20scattered%20with%20coarsely%20chopped%20raw%20pistachio%20nuts%20before%20baking%20.%20.%20.%3C/p%3E%3Cp%3ESome%20people%20are%20afraid%20of%20meringues,%20but%20they're%20really%20not%20all%20that%20difficult%20to%20execute,%20if%20you%20follow%20a%20few%20simple%20rules.%20%20Room%20temperature%20whites.%20%20Clean,%20%20grease-free%20glass%20or%20metal%20%20bowl%20and%20clean%20beaters.%20%20If%20you%20add%20the%20sugar%20slowly,%20it%20will%20kind%20of%20melt%20into%20the%20egg%20whites%20and%20you%20will%20get%20a%20nice%20smooth%20texture,%20not%20gritty%20at%20all,%20and%20lovely%20volume.%20%20Oh%20.%20.%20.%20%20and%20don't%20use%20really%20fresh%20egg%20whites%20.%20.%20.%20you%20want%20them%20almost%20to%20the%20sell%20by%20date%20.%20.%20.for%20some%20reason,%20that's%20how%20you%20get%20lots%20of%20volume.%20%20The%20older%20the%20egg%20white%20.%20.%20.%20the%20larger%20the%20meringues.%3C/p%3E%3Cp%3EThese%20are%20beautiful%20served%20with%20sliced%20berries%20anda%20%20bit%20of%20whipped%20cream%20.%20.%20.%20kind%20of%20like%20a%20de-constructed%20Eton%20Mess%20.%20.%20.%20and%20every%20bit%20as%20lovely.%20%20Today%20I%20added%20a%20bit%20of%20lemon%20juice%20and%20icing%20sugar%20to%20the%20cream%20.%20.%20.%20so%20I%20got%20a%20kind%20of%20whipped%20lemon%20posset%20cream.%20%20You%20don't%20need%20much%20lemon%20juice,%20only%20a%20squirt.%20%20Your%20cream%20thickens%20up%20very%20nicely.%20%20If%20you%20find%20it%20a%20bit%20too%20thick%20.%20.%20.%20then%20just%20stir%20in%20a%20bit%20more%20cream.%3C/p%3E%3Cp%3ED-E-L-I-C-I-O-U-S!!%20%20The%20perfect%20light%20dessert%20for%20a%20warm%20%22late%22%20summer's%20day%20.%20.%20.with%20the%20last%20of%20the%20strawberries%20of%20the%20season%20.%20.%20.%3C/p%3E%3Cp%3E*Cardamom%20&%20Pistachio%20Meringues*%3C/p%3E%3Cp%3EMakes%204%20to%206%3C/p%3E%3Cp%3EHoney%3C/p%3E%3Cp%3Ecoloured,%20crisp%20sweet%20meringues.%20lightly%20spiced%20with%20cinnamon%20and%3C/p%3E%3Cp%3Ecardamom%20and%20sprinkled%20with%20chopped%20pistachio%20nuts.%20%20Perfect%20for%20serving%3C/p%3E%3Cp%3Ewith%20poached%20or%20fresh%20fruits.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20180*C/350*F/%20gas%20mark%204.%20%20Line%20two%20baking%20sheets%20with%20some%20nonstick%20baking%20paper.%20%20Set%20aside.%3C/p%3E%3Cp%3EMeasure%3C/p%3E%3Cp%3Ethe%20egg%20whites%20into%20a%20large%20grease%20free%20glass%20bowl.%20%20Whip%20with%20an%3C/p%3E%3Cp%3Eelectric%20whisk%20until%20they%20are%20firm%20and%20fluffy.%20%20Fold%20in%20the%20sugar%20and%3C/p%3E%3Cp%3Espices.%20%20%20Continue%20to%20whip%20with%20an%20electric%20whisk%20until%20the%20mixture%20is%3C/p%3E%3Cp%3Eglossy%20and%20thick.%3C/p%3E%3Cp%3ESprinkle%20the%20lined%20baking%20sheets%20with%20some%3C/p%3E%3Cp%3Ecaster%20sugar.%20%20Place%20into%20the%20heated%20oven%20to%20warm.%20%20Remove%20from%20the%20oven%3C/p%3E%3Cp%3Eand%20then%20using%20two%20spoons%20scoop%208%20ot%209%20huge%20dollops%20of%20the%20whipped%20egg%3C/p%3E%3Cp%3Ewhites%20%20onto%20the%20baking%20sheets,%20leaving%20plenty%20of%20space%20in%20between%20for%3C/p%3E%3Cp%3Espreading.%20%20%20%20Sprinkle%20with%20the%20chopped%20pistachio%20nuts.%3C/p%3E%3Cp%3EPlace%3C/p%3E%3Cp%3Einto%20the%20oven%20and%20immediately%20turn%20the%20temperature%20down%20to%20140*C/275*F/%3C/p%3E%3Cp%3Egas%20mark%201.%20%20Bake%20for%20about%20an%20hour%20until%20they%20are%20pa
