%20and%20I%20like%20to%20get%20together%20and%20celebrate%20ourselves,%20our%20friendship%20and%20the%20Xmas%20season.%20We%20were%20also%20celebrating%20the%20new%20remodeled%20kitchen%20at%20one%20of%20my%20friend%E2%80%99s%E2%80%A6%20She%20invited%20us%20all%20for%20a%20night%20of%20music,%20great%20company%20and%20Madelyn%E2%80%99s%20cooking.%3C/p%3E%3Cp%3EThat%E2%80%99s%20the%20funny%20thing%E2%80%A6%20my%20friend%20loves%20to%20cook,%20and%20she%20does%20it%20very%20well,%20but%20when%20she%20invites,%20Madelyn%20does%20the%20cooking.%20I%20do%20not%20mind%20at%20all%20because%20it%20gives%20me%20a%20chance%20to%20showcase%20a%20few%20recipes%20I%E2%80%99ve%20had%20in%20the%20works.%20Tired%20of%20the%20same%20Xmas%20food%20fare%20people%20eat%20at%20most%20parties%20during%20the%20season,%20I%20planned%20a%20healthy%20pasta%20menu%20with%20low-fat%20cheeses%20and%20tons%20of%20flavors.%20Annie%20Mariel%20would%20bring%20the%20salad%E2%80%A6%20something%20composed,%20that%E2%80%99s%20her%20type%20of%20cooking.%3C/p%3E%3Cp%3EThis%20pasta%20dish%20is%20super%20simple%20and%20you%20don%E2%80%99t%20even%20need%20to%20cook%20the%20pasta%20beforehand.%20Due%20to%20time%20and%20availability%20this%20time%20around,%20I%20made%20this%20recipe%20using%20regular%20semolina%20pasta,%20but%20I%20have%20certainly%20made%20it%20using%20brown%20rice%20pasta%20and%20whole%20wheat%20pasta.%20In%20none%20of%20those%20cases%20I%20have%20pre-boiled%20the%20pasta.%20There%20is%20no%20need%20to%20do%20that%20as%20long%20as%20you%20have%20enough%20liquid%20for%20the%20pasta%20to%20cook%20in.%20The%20liquid%20will%20come%20from%20the%20tomato%20sauce%20and%20the%20liquid%20in%20the%20filling.%20This%20is%20a%20mix%20and%20bake%20recipe%20perfect%20for%20entertaining%20or%20a%20pasta%20night%20with%20the%20family.%3C/p%3E%3Cp%3ECHEESE,%20SPINACH%20AND%20MUSHROOM%20STUFFED%20MANICOTTI%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20350F.%3C/p%3E%3Cp%3ELet%E2%80%99s%20put%20together%20the%20filling%E2%80%A6%3C/p%3E%3Cp%3EIn%20a%20medium%20skillet%20over%20medium-hi%20heat,%20add%20a%20drizzle%20of%20olive%20oil%20and%20add%20the%20onion,%20garlic%20clove%20and%20mushrooms.%20Mix%20together%20and%20cook%20without%20stirring%20too%20much%20so%20the%20mushroom%20get%20to%20brown%20and%20caramelize.%20Move%20them%20once%20in%20a%20while,%20but%20leave%20them%20alone%20for%20periods%20of%20time%20and%20allow%20them%20to%20get%20brown.%3C/p%3E%3Cp%3EWhen%20the%20mushrooms%20are%20brown%20and%20fragrant,%20and%20to%20me%20they%20smell%20like%20steak,%20believe%20it%20or%20not,%20add%20a%20splash%20of%20soy%20sauce%20and%20a%20splash%20of%20balsamic%20vinegar%20to%20season.%20Add%20the%20thyme%20leaves%20and%20saut%C3%A9%20a%20few%20times.%20Discard%20the%20pieces%20of%20garlic%20you%20may%20find%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20mix%20together%20the%20ricotta,%20the%20cottage%20cheese,%20%C2%BD%20cup%20shredded%20cheeses%20and%20%C2%BD%20cup%20Parmesan%20cheese.%20Also%20add%20the%20toasted%20pine%20nuts%20and%20the%20spinach,%20squeezing%20any%20extra%20liquid%20from%20it,%20but%20it%20does%20not%20have%20to%20be%20super%20dry.%20We%20want%20some%20moisture%20still%20because%20it%20will%20help%20cook%20the%20pasta.%20Also,%20add%20the%20cooked%20mushrooms.%20Mix%20everything%20together.%20Season%20with%20salt,%20pepper%20and%20a%20drizzle%20of%20olive%20oil%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20another%20bowl,%20add%20the%20chopped%20tomatoes,%20a%20drizzle%20of%20olive%20oil,%20a%20drizzle%20of%20balsamic%20vinegar%20and%20season%20with%20salt,%20pepper%20and%20the%20basil%20or%20Italian%20seasonings%20mix.%20Mix%20everything%20together%20to%20combine%20all%20ingredients%20well.%3C/p%3E%3Cp%3ETransfer%20%C2%BD%20the%20sauce%20to%20the%20bottom%20of%20a%209%E2%80%9D%20x%2013%E2%80%9D%20baking%20dish.%20I%20used%20a%20disposable%20baking%20dish%20because%20I%20do%20not%20bring%20my%20vegetarian-only%20dishes%20to%20anyone%E2%80%99s%20home%20where%20I%20am%20not%20300%25%20they%E2%80%99re%20vegetarian%20just%20like%20me.%3C/p%3E%3Cp%3EUsing%20a%20small%20spoon,%20fill%20each%20dried%20manicotti%20sleeve%20with%20the%20cheese/spinach/mushroom%20filling%20we%20just%20did.%20Place%20each%20manicotti%20sleeve%20one%20next%20the%20other%20in%20the%20baking%20dish.%20Some%20will%20go%20one%20way,%20the%20rest%20across,%20but%20they%20should%20all%20fit.%20This%20is%20the%20most%20time%20consuming%20part%20of%20the%20process.%20Keep%20on%20going%20until%20all%20manicotti%20sleeves%20are%20filled%20with%20cheese.%20If%20you%20have%20any%20leftover%20filling,%20like%20I%20did,%20don%E2%80%99t%20worry.%20I%20have%20a%20Round%202%20recipe%20for%20you%20to%20use%20it%20in%20a%20new%20different%20application.%3C/p%3E%3Cp%3E9.%20%20Pour%20the%20rest%20of%20the%20tomato%20sauce%20over%20the%20filled%20manicotti.%20Top%20with%20the%20remaining%20shredded%20Italian%20cheeses%20and%20grated%20Parmesan.%3C/p%3E%3Cp%3E10.%20%20Place%20i
