  • 1 whole chicken breast, split, boned & skinned
  • 1 (1 ounce.) slice Swiss or possibly mozzarella cheese, halved
  • 1 thin slice smoked ham, halved
  • 3 tbsp. fine dry bread crumbs
  • 1 tbsp. grated Parmesan cheese
  • 1 teaspoon paprika
  • 1/8 teaspoon garlic salt
  • Healthy pinch dry whole tarragon
  • 2 tbsp. butter

  2. Place each chicken breast on a sheet of waxed paper; flatten to 1/2" thickness, using meat mallet or possibly rolling pin. Place a piece of cheese and ham in center of each piece of chicken. Roll up lengthwise, and secure with a wooden pick. Combine next five ingredients, stirring well. Place butter in a 1 c. glass measure; microwave at HIGH 40 seconds or possibly till melted. Dip each chicken breast half in butter; roll each piece in crumb mix. Place rolls, seam side down in a 1 qt shallow casserole. Cover with waxed paper and microwave at HIGH for 4 min or possibly till chicken is fork tender, rotating dish after 2 min or possibly bake in conventional oven at 300 to 325 degrees for 45 to 60 min. Yield: 2 servings.
