%3C/p%3E%3Cp%3EJo%20used%20to%20be%20the%20housekeeper%20at%20the%20Manor%20when%20I%20first%20started%20working%20there.%20Over%20the%20years%20we%20became%20good%20friends,%20and%20I%20really%20missed%20her%20when%20she%20and%20her%20husband%20left%20the%20area%20to%20pursue%20their%20dreams.%20She's%20now%20a%20Chiropodist,%20and%20her%20husband,%20well%20.%20.%20.%20he%20is%20still%20a%20plumber,%20but%20quite%20happy%20in%20his%20work!%3C/p%3E%3Cp%3EJo%20and%20her%20husband%20took%20me%20out%20to%20my%20very%20first%20Indian%20Restaurant%20actually!%20We%20had%20a%20really%20good%20time.%20They%20also%20took%20us%20to%20our%20very%20first%20Gherka%20Restaurant,%20and%20introduced%20us%20both%20to%20Thai%20Food%20as%20well!%20I%20guess%20you%20could%20say%20that%20they%20are%20very%20worldly%20in%20their%20tastes%20when%20they%20eat%20out!%3C/p%3E%3Cp%3EThey%20also%20enjoy%20a%20good%20curry%20at%20home.%20Colin%20likes%20the%20blow%20your%20head%20off%20kind%20.%20.%20.%20a%20hearty%20hot%20Madras,%20whilst%20Jo%20opts%20for%20something%20a%20bit%20milder.%3C/p%3E%3Cp%3EThis%20is%20probably%20a%20bit%20too%20mild%20for%20her,%20but%20she%20(and%20you)%20can%20certainly%20adjust%20the%20heat%20by%20adding%20more%20tikka%20paste,%20or%20even%20some%20chili%20powder.%20I%20found%20it%20just%20right%20for%20me.%20One%20thing%20she%20won't%20mind%20though%20is%20the%20fact%20that%20it's%20relatively%20low%20in%20fat%20and%20filled%20with%20lovely%20spinach,%20both%20for%20colour%20and%20texture.%3C/p%3E%3Cp%3ESo%20anyways,%20I%20never%20eat%20a%20curry%20now%20without%20thinking%20about%20Jo,%20and%20giving%20her%20a%20nod%20of%20thanks%20for%20having%20broadened%20my%20tastes!%3C/p%3E%3Cp%3E*Chicken%20Curry%20with%20Rice*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EThis%20is%20quick%20and%20easy%20and%20relatively%20low%20in%20fat.%20There%20is%20no%20cream%20or%20coconut%20milk%20added.%20The%20spinach%20makes%20it%20quite%20healthy%20as%20well.%20You%20could%20cut%20the%20fat%20even%20more%20by%20using%20chicken%20breast%20meat%20instead%20of%20thighs.%20I%20think%20you%20could%20safely%20cut%20the%20oil%20in%20half%20as%20well.%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large%20pan.%20Add%20the%20onion%20and%20fry,%20stirring,%20over%20medium%20heat,%20for%20about%205%20minutes%20until%20golden.%20Add%20the%20garlic%20and%20chicken.%20Stir%20fry%20for%20another%205%20minutes,%20until%20golden.%3C/p%3E%3Cp%3EAdd%20the%20curry%20paste,%20tomatoes%20and%20stock.%20Stir%20and%20bring%20to%20the%20boil.%20Reduce%20the%20heat%20to%20a%20simmer%20and%20simmer%20on%20low%20heat%20for%20about%2015%20minutes,%20giving%20it%20a%20stir%20every%20so%20often%20to%20make%20sure%20it%20doesn't%20catch%20on%20the%20bottom.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20is%20cooking,%20cook%20the%20rice.%20Bring%201%20pint%20of%20water%20to%20the%20boil.%20(2%20cups)%20Add%20the%20rice%20and%20salt%20and%20stir.%20Cover%20and%20reduce%20the%20heat%20to%20it's%20lowest%20setting.%20Cook%20for%20the%20time%20stated%20on%20the%20package%20of%20rice.%20Once%20cooked,%20cover%20with%20a%20teatowel%20and%20the%20lid.%20Leave%20for%205%20minutes%20to%20absorb%20the%20steam.%3C/p%3E%3Cp%3EStir%20the%20spinach%20into%20the%20curry%20and%20cook%20until%20just%20wilted.%20Spoon%20the%20rice%20into%20heated%20bowls.%20Ladle%20on%20the%20curry%20and%20serve%20immediately,%20along%20with%20the%20naan%20bread%20and%20some%20mango%20chutney.%3C/p%3E%3Cp%3EYou%20can%20get%20a%20good%20Peshwari%20Naan%20Bread%20recipe%20here.%20It's%20delicious!%3C/p%3E){kind=link}
