%20Taste%20of%20Home%20magazine%20last%20week.%20I%20couldn't%20resist.%20The%20title%20is%20Cheesecakes%20and%20More!%20And%20it%20bragged%20160%20rich%20and%20creamy%20favorites.%20I%20didn't%20stand%20a%20chance.%20It%20was%20destined%20to%20be%20mine.%20Jacquie%20has%20a%20sweet%20tooth%20that%20was%20possibly%20positively%20inherited%20by%20me%20and%20so%20she%20went%20%22birthday%20cake%20shopping%22%20in%20my%20new%20magazine.%20Then%20informed%20me%20that%20she%20wanted%20a%20combo.%20I%20guess%20she%20couldn't%20make%20up%20her%20mind%20between%20the%20Frosted%20Chocolate%20Chip%20Cheesecake%20and%20the%20Chocolate%20Chip%20Cookie%20Cheesecake.%3C/p%3E%3Cp%3EHow%20could%20I%20not%20grant%20the%20wishes%20of%20the%20birthday%20girl?%3C/p%3E%3Cp%3E(btw...yes,%20I%20will%20announce%20the%20Tate's%20Bake%20Shop%20Giveaway%20winner%20in%20a%20minute.%20Hold%20your%20horses.%20The%20birthday%20girl%20gets%20first%20billing)%3C/p%3E%3Cp%3ESo,%20without%20further%20ado....let%20me%20introduce%20you%20to%20a%20fabulous,%20rich%20but%20not%20too%20sweet,%20delicious%20Chocolate%20Chip%20&%20Cookie%20Cheesecake.....%3C/p%3E%3Cp%3E(Ingredient%20picture%20only%20shows%20what's%20in%20the%20filling.%20Does%20not%20include%20crust%20and%20topping%20ingredients)%3C/p%3E%3Cp%3EChocolate%20Chip%20&%20Cookie%20Cheesecake%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325'%20F%3C/p%3E%3Cp%3ECrust%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20wafer%20and%20cookie%20crumbs%20with%20melted%20butter.%20Press%20into%20the%20bottom%20and%20up%20the%20sides%201%201/2%22%20of%20a%20greased%209%22%20springform%20pan.%20Chill%20in%20the%20fridge%20for%2015%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20large%20bowl,%20beat%20the%20cream%20cheese,%20sugar%20and%20vanilla%20until%20nice%20and%20smooth.%20Add%20the%20eggs%20and%20beat%20on%20low%20speed%20until%20combined.%20Do%20not%20over%20beat.%20Stir%20in%20the%20semi-sweet%20and%20milk%20chocolate%20chips.%3C/p%3E%3Cp%3EPour%20into%20prepared%20crust%3C/p%3E%3Cp%3EPlace%20the%20cheesecake%20on%20a%20baking%20sheet%20(this%20is%20a%20must%20unless%20you%20want%20a%20mess),%20and%20bake%20for%2055%20-%2060%20minutes%20or%20until%20the%20center%20is%20almost%20set.%3C/p%3E%3Cp%3EI%20recommend%20placing%20a%20roasting%20pan%20on%20another%20rack%20in%20the%20oven%20and%20pour%20a%20cup%20of%20water%20inside%20to%20create%20humidity%20which%20will%20help%20in%20preventing%20your%20cheesecake%20from%20cracking.%20You%20should%20also%20rotate%20the%20cake%20halfway%20through%20baking%20and%20add%20more%20water%20to%20the%20roasting%20pan.%3C/p%3E%3Cp%3ESet%20aside%20while%20you%20mix%20together%20the%20topping:%20In%20a%20small%20bowl%20combine%20the%20sour%20cream,%20sugar%20and%20vanilla.%20Spread%20over%20the%20top%20of%20the%20baked%20cheesecake.%20Return%20the%20cheesecake%20to%20the%20oven%20and%20bake%20for%20about%208%20minutes.%3C/p%3E%3Cp%3ECool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EChill%20overnight.%20Just%20before%20serving,%20run%20a%20knife%20around%20the%20edge%20of%20the%20pan%20to%20loosen.%20Garnish%20with%20cookie%20crumbs%20and%20cookie%20halves%20if%20desired.%3C/p%3E%3Cp%3EAnd%20serve%20to%20your%20favorite%20chocolate%20lover%20and%20watch%20them%20fall%20in%20love%20with%20this%20fabulous,%20fun,%20rich%20cheesecake.%3C/p%3E%3Cp%3EBtw....can%20anyone%20tell%20me%20how%20to%20remove%20the%20bottom%20of%20the%20springform%20pan%20without%20messing%20up%20the%20cake?%20Or%20are%20you%20suppose%20to%20leave%20it%20there%20until%20it's%20all%20gone?%3C/p%3E%3Cp%3EAnd%20noooooow.....the%20moment%20you've%20all%20been%20waiting%20for.%20The%20winner%20of%20the%20Tate's%20Bake%20Shop%20Cookbook%20and%203%20boxes%20of%20delicious%20homemade%20cookies....is....%3C/p%3E%3Cp%3EOne%20more%20thing...this%20is%20my%20entry%20this%20week%20in%20the%20Hearth%20'n%20Soul%20Blog%20Hop%3C/p%3E){kind=link}
