%3C/p%3E%3Cp%3EI%20had%20the%20most%20awesome%20birthday%20celebration,%20with%20a%20few%20select%20friends,%20and%20a%20whole%20lot%20of%20drama.%20These%20cupcakes%20were%20made%20before%20the%20day,%20since%20I%20never%20bake%20on%20my%20birthday,%20even%20though%20I%20love%20baking,%20my%20birthday%20is%20a%20day%20where%20I'm%20to%20be%20pampered%20:)%3C/p%3E%3Cp%3EI%20also%20started%20working%20about%202%20months%20ago,%20which%20is%20why%20I%20haven't%20been%20too%20regular%20with%20the%20posting,%20or%20browsing%20the%20blogs.%20I%20can't%20help%20but%20wonder%20how%20people%20are%20doing%20their%20own%20thing%20at%20work,%20having%20all%20the%20time%20in%20the%20world.%20I've%20had%20literally%20no%20time!%3C/p%3E%3Cp%3EAnyway,%20I'd%20been%20seeing%20the%20flour%20frosting%20around%20the%20blogosphere%20a%20lot,%20and%20specially%20noticed%20it%20when%20Ree,%20the%20Pioneer%20Woman%20posted%20it%20as%20the%20best%20frosting%20she's%20ever%20tasted.%20It's%20called%20a%20million%20different%20names,%20the%20one%20I%20liked%20the%20best%20is%20heritage%20frosting.%20Reading%20up%20on%20it%20a%20bit,%20it%20sounded%20like%20something%20I%20would%20like,%20not%20too%20sweet,%20rich%20but%20not%20overbearingly%20slow,%20fluffy,%20and%20just%20a%20lot%20of%20fun.%20I%20can't%20stand%20the%20powdered%20sugar%20buttercreams,%20and%20I'm%20always%20looking%20for%20alternatives.%20This%20one%20was%20perfect.%20I%20loved%20it.%20My%20parents,%20the%20world's%20biggest%20frosting%20haters%20also%20ate%20these%20cupcakes,%20frosting%20and%20all.%20So%20it's%20a%20pure%20winner%20for%20me,%20and%20for%20anyone%20else%20who%20likes%20a%20not%20so%20sweet%20frosting.%20Usually%20sugar%20is%20the%20base,%20that%20gives%20stability%20to%20a%20buttercream,%20but%20here,%20the%20flour/cornstarch%20provides%20that%20required%20structure,%20allowing%20for%20a%20much%20more%20sophisticated%20end%20result.%3C/p%3E%3Cp%3ESince%20I%20was%20experimenting%20with%20the%20frosting,%20I%20went%20with%20an%20old%20favorite%20recipe%20for%20the%20cupcake,%20Hershey's%20perfectly%20chocolate%20cake.%20It's%20one%20of%20the%20moistest%20cakes%20I've%20ever%20eaten.%20And%20you%20know%20what's%20amazing.%20I%20accidently%20left%20out%20the%20oil%20[I'm%20too%20scatter%20brained],%20and%20you%20would%20never%20know%20it%20looking%20at%20the%20cupcakes.%20I%20had%20happily%20gorged%20on%20a%20few,%20when%20I%20noticed%20the%20oil%20sitting%20on%20the%20counter.%20I%20haven't%20had%20the%20chance%20to%20try%20it%20again,%20so%20I%20can't%20recommend%20just%20leaving%20it%20out%20completely%20[maybe%20I%20made%20some%20other%20mistake%20too,%20because%20of%20which%20the%20cupcakes%20turned%20out%20well],%20but%20if%20you%20do%20try%20it,%20please%20let%20me%20know.%20It'd%20be%20so%20awesome%20to%20have%20a%20fat%20free%20cupcake!%3C/p%3E%3Cp%3ELook%20how%20smooth%20and%20luscious%20:D%3C/p%3E%3Cp%3EChocolate%20cupcakes%20with%20Heritage%20Frosting%3C/p%3E%3Cp%3EFor%20the%20cupcakes%20-%3C/p%3E%3Cp%3EYield%20-%20about%2028%3C/p%3E%3Cp%3EInstructions%20-%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20F%20[180%20C].%20Line%20two%20muffin%20pans%20with%20liners.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20sift%20together%20the%20flour,%20cocoa%20powder,%20baking%20powder,%20baking%20soda,%20and%20salt.%20Whisk%20in%20the%20sugar.%3C/p%3E%3Cp%3EAdd%20in%20the%20eggs,%20milk,%20oil%20and%20extract,%20beating%20for%20about%202%20minutes%20on%20medium.%20Now%20pour%20in%20the%20boiling%20water.%20The%20batter%20will%20be%20very%20thin,%20don't%20worry.%3C/p%3E%3Cp%3EScoop%20into%20prepared%20pans,%20and%20bake%20for%20about%2020%20minutes,%20or%20until%20a%20skewer%20inserted%20comes%20out%20clean.%20Cool%20on%20a%20wire%20rack%20while%20you%20prepare%20the%20frosting.%3C/p%3E%3Cp%3EFor%20the%20Heritage%20frosting%20-%3C/p%3E%3Cp%3E1%20cup%20[260%20g]%20milk%3C/p%3E%3Cp%3E1%20cup%20[240%20g]%20sugar%3C/p%3E%3Cp%3E2%20tbsp%20cornstarch%3C/p%3E%3Cp%3Epinch%20of%20salt%3C/p%3E%3Cp%3E1%20tsp%20vanilla%3C/p%3E%3Cp%3E1%20cup%20[2%20sticks%20/%20226%20g]%20butter%3C/p%3E%3Cp%3EInstructions%20-%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan,%20heat%20together%203/4%20cup%20of%20the%20milk,%20the%20sugar%20and%20salt,%20until%20sugar%20is%20dissolved.%20Don't%20allow%20it%20to%20come%20to%20a%20boil,%20keep%20the%20heat%20on%20slow.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20together%20the%20remaining%201/4%20cup%20of%20the%20milk%20and%20the%20cornstarch,%20to%20create%20a%20slurry/paste%20like%20mixture.%20Pour%20this%20slowly%20into%20the%20sugar%20mixture,%20and%20continue%20heating%20over%20medium%20heat,%20stirring%20gently.%20Do%20not%20stir%20too%20much,%20or%20you%20will%20break%20up%20the%20molecules%20that%20are%20forming,%20and%20thus%20ruin%20your%20base.%20Cook%20for%20about%201-2%20mins,%20till%20it%20forms%20a%20thick%20paste.%20Do%20not%20allow%20it%20to%20come%20to%20a%20rolling%20boil.%3C/p%3E%3Cp%3ENow%20pour%20this%20mixture%20into%20the%20waiting%20bowl%20of%20your%20mixer.%20Allow%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EOnce%20cool,%20cut%20butter%20into%201%20tbsp%20chunks.%20With%20your%20mixer%20on%20medium%20low,%20using%20the%20whisk%20attachment,%20beat%20the%20cornstarch%20mixture.%20Begin%20adding%20the%20chunks%20of%20butter,%20one%20at%20a%20time,%20until%20each%20is%20mostly%20incorporated.%20Once%20all%20the%20butter%20is%20added,%20increase%20the%20spead%20to%20medium%20high,%20and%20whip%20for%20about%205%20mins,%20until%20the%20frosting%20is%20fluffy%20looking.%20Use%20immediately.%3C/p%3E){kind=link}
