,%20they%20tasted%20horribly%20tangy%20and%20most%20of%20the%20berries%20were%20miserably%20tiny.%20This%20latest%20batch%20is%20really%20value%20for%20money.%20The%20berries%20are%20very%20fresh...firm,%20plump%20and%20covered%20with%20this%20whitish%20bloom...the%20natural%20shimmery%20silver%20coating%20which%20protects%20them%20against%20the%20sun...a%20sign%20of%20freshness.%20Most%20importantly,%20they%20are%20sweet!%20Maybe%20the%20origin%20counts?%20These%20are%20from%20Oregon.%20Or%20could%20it%20be%20that%20fruits%20that%20are%20bought%20when%20they%20are%20in%20seasons%20would%20naturally%20taste%20better?%3C/p%3E%3Cp%3EI%20used%20up%20one%20pack%20to%20make%20these%20classic%20blueberry%20muffins.%20They%20are%20wonderful%20breakfast%20treats%20for%20our%20family.%20These%20are%20so%20simple%20to%20make%20that%20my%20younger%20child%20did%20almost%2090%25%20of%20the%20work.%20I%20did%20the%20remaining%2020%25...the%20additional%2010%25%20was%20the%20extra%20effort%20needed%20to%20clean%20up%20the%20mess%20he%20created%20during%20the%20preparation.%20I%20should%20have%20taken%20a%20video%20clip%20on%20the%20way%20he%20'cracked'%20the%20egg...it%20was%20almost%20like%20performing%20a%20magic%20trick%20%5E-%5E%20I%20couldn't%20spot%20a%20single%20bit%20of%20egg%20shell%20in%20the%20bowl%20and%20that%20was%20despite%20the%20fact%20that%20he%20unceremoniously%20squashed%20the%20egg%20shell%20with%20his%20hands!%3C/p%3E%3Cp%3EDuring%20those%20earlier%20days%20when%20I%20first%20started%20out%20baking,%20I%20was%20always%20seeking%20for%20the%20secrets%20to%20making%20muffins%20that%20could%20rise%20high%20and%20mighty%20upon%20baking.%20It%20was%20much%20later%20that%20I%20finally%20discovered%20the%20techniques%20behind,%20upon%20reading%20this%20online%20article%20%22The%20Secrets%20of%20the%20Dome%22%20(the%20title%20sounds%20so%20Harry%20Potter!)%20I%20have%20since%20tried%20out%20all%20the%20three%20tips%20mentioned%20in%20the%20article:%3C/p%3E%3Cp%3E1.%20fill%20the%20muffin%20cups%20to%20the%20brim;%3C/p%3E%3Cp%3E2.%20use%20a%20recipe%20that%20yields%20fairly%20thick%20batter;%3C/p%3E%3Cp%3E3.%20bake%20the%20muffins%20at%20a%20very%20high%20temperature%20of%20about%20210%20degC%20for%20the%20initial%20few%20minutes.%3C/p%3E%3Cp%3EThe%20first%20tip%20is%20real%20easy%20to%20accomplish%20and%20it%20works!%20The%20second%20one%20will%20depend%20on%20luck...I%20have%20came%20across%20muffin%20batters%20which%20is%20very%20runny%20and%20I%20ended%20up%20with%20very%20flat%20muffins.%20I%20have%20long%20since%20given%20up%20on%20the%20third%20one.%20The%20problem%20lies%20mainly%20with%20my%20oven...the%20temperature%20is%20almost%20beyond%20my%20control.%20Yes,%20I%20can%20easily%20preheat%20the%20oven%20to%20210%20degC,%20but%20I%20have%20no%20control%20over%20what%20the%20final%20temperature%20will%20be%20if%20I%20were%20to%20turn%20it%20down%20to%20180%20degC%20after%208%20mins.%20It%20could%20easily%20drop%20all%20the%20way%20to%20150%20degC%20;(%3C/p%3E%3Cp%3EFor%20the%20mixing%20of%20the%20batter,%20I%20prefer%20to%20adopt%20the%20'muffin-method'.%20I%20find%20this%20method%20much%20easier%20and%20usually%20less%20fat%20is%20required%20as%20compared%20to%20muffins%20made%20by%20the%20'creaming-method'.%20I%20also%20prefer%20the%20texture%20of%20muffins%20made%20with%20the%20muffin-method.%20Somehow%20it%20gives%20me%20a%20more%20wholesome,%20'breakfast'%20feel%20as%20compared%20to%20those%20using%20the%20creaming-method%20which%20tends%20to%20yield%20more%20cupcake-like%20crumbs.%20I%20must%20add,%20these%20muffins%20will%20only%20taste%20good%20when%20they%20are%20served%20warm...either%20eat%20them%20fresh%20or%20heat%20them%20up%20again%20before%20serving.%3C/p%3E%3Cp%3EI%20hope%20I'm%20able%20to%20post%20another%20blueberry%20breakfast%20treat%20soon%20;)%3C/p%3E%3Cp%3EClassic%20Blueberry%20Muffins%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%2012%20small%20muffins)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20180degC%20(350%20degF).%3C/p%3E%3Cp%3EWash%20and%20drain%20blueberries.%20Dry%20with%20paper%20towels%20and%20toss%20them%20in%20a%20tablespoon%20of%20flour.%3C/p%3E%3Cp%3EPlace%20egg,%20oil,%20milk,%20sugar%20and%20vanilla%20extract%20in%20a%20bowl.%20With%20a%20manual%20whisk,%20whisk%20until%20thoroughly%20combined.%3C/p%3E%3Cp%3ESieve%20together%20flour,%20baking%20powder,%20baking%20soda%20and%20salt%20into%20a%20mixing%20bowl.%20Make%20a%20well%20in%20the%20centre.%3C/p%3E%3Cp%3EPour%20the%20liquid%20mixture%20into%20the%20dry%20mixture.%20With%20a%20spatula,%20gently%20fold%20all%20the%20ingredients%20to%20form%20a%20wet%20batter.%20Mix%20until%20the%20flour%20is%20just%20incorporate%20into%20the%20batter.%20Add%20the%20blueberries%20and%20fold%20in%20gently.%20DO%20NOT%20over%20mix.%20The%20batter%20should%20appear%20lumpy.%3C/p%3E%3Cp%3ESpoon%20batter%20into%20paper%20muffin%20cups.%20Bake%20for%2015~20mins%20until%20muffins%20turn%20golden%20brown%20or%20a%
