%3C/p%3E%3Cp%3EFor%20a%20long%20time,%20I%20could%20never%20make%20it%20to%20the%20level%20of%20perfection%20she%20does,%20but%20I%20finally%20mastered%20it,%20thank%20goodness.%20(But%20it%20still%20always%20tastes%20better%20when%20she%20makes%20it!)%20It%20is%20a%20favorite%20of%20my%20husband%20and%20son%20as%20well,%20so%20it%20shows%20up%20on%20our%20dinner%20table%20as%20much%20as%20possible.%3C/p%3E%3Cp%3EUnfortunately%20though,%20it%20hasn't%20been%20able%20to%20make%20an%20appearance%20in%20a%20while.%20Why?%20Because%20of%20our%20crazy%20schedule!%20We%20are%20so%20busy%20there%20are%20days%20I%20don't%20know%20if%20I%20am%20coming%20or%20going;%20and%20days%20like%20that%20don't%20lend%20themselves%20to%20the%20time%20I%20need%20to%20give%20mom's%20perfect%20recipe%20the%20attention%20it%20deserves.%3C/p%3E%3Cp%3EHowever,%20now%20I%20can%20take%20that%20recipe%20and%20cut%20the%20time%20by%20over%20half%20and%20have%20the%20flavor%20I%20adore%20in%20an%20even%20easier%20meal!%20Kids%20will%20love%20these,%20they%20are%20just%20their%20size!%20I%20think%20they%20would%20be%20fantastic%20at%20a%20party%20too,%20or%20even%20tailgating%20at%20the%20big%20game!%3C/p%3E%3Cp%3ENothing%20will%20ever%20take%20the%20place%20of%20mom's%20meatloaf%20in%20my%20heart.%20The%20original%20will%20always%20be%20the%20best,%20but%20at%20least%20this%20way%20I%20can%20enjoy%20it%20more%20often%20in%20today's%20busy%20world!%3C/p%3E%3Cp%3EMeatloaf%20Muffins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350.%20Spray%20a%20muffin%20tin%20with%20nonstick%20spray.%20In%20a%20large%20bowl%20combine%20beef,%20eggs,%20bread%20crumbs,%20onion,%20salt%20and%20pepper.%20Using%20hands,%20combine%20well.%20Fill%20each%20well%20of%20muffin%20tin%20to%20top%20with%20a%20meat%20ball.%20Press%20down%20a%20little%20to%20obtain%20muffin%20shape.%20Place%20ketchup%20in%20plastic%20bag.%20Snip%20one%20edge.%20Pipe%20ketchup%20on%20top%20of%20muffins.%20Bake%20for%2025%20minutes.%20Increase%20heat%20to%20400.%20Bake%2010-15%20minutes%20more%20until%20internal%20temp%20reaches%20165.%20Let%20sit%202%20minutes%20before%20removing.%20Garnish%20with%20parsley.%20*NOTE*%20If%20mixture%20doesn't%20seem%20to%20be%20coming%20together%20with%201%20cup%20breadcrumbs,%20feel%20free%20to%20add%20more.%20It%20will%20depend%20on%20the%20moisture%20level%20of%20your%20mix.%3C/p%3E%3Cp%3EDisclaimer:%20I%20received%20a%20gift%20card%20in%20exchange%20for%20this%20post.%20All%20thoughts,%20opinions%20and%20the%20recipe%20are%20all%20mine.%3C/p%3E){kind=link}
