.%3C/p%3E%3Cp%3EHeres%20the%20thing,%20i'm%20not%20a%20huge%20fan%20because%20it%20can%20me%20a%20bit%20on%20the%20tough%20side.%20I%20keep%20the%20kale%20raw*%20in%20this%20recipe.%20Just%20like%20a%20traditional%20pesto%20theres%20the%20cheese,%20garlic,%20nuts%20and%20olive%20oil.%20The%20flavors%20worked%20wonderfully%20with%20the%20cornmeal%20crusted%20chicken%20breasts.%20The%20lightly%20seasoned%20cornmeal%20has%20a%20slightly%20nutty%20taste%20to%20it%20and%20makes%20for%20a%20nice%20crisp%20coating!%3C/p%3E%3Cp%3EI%20served%20mine%20with%20some%20roasted%20carrots%20and%20homemade%20chips.%3C/p%3E%3Cp%3ECornmeal%20Crusted%20Chicken%20with%20Kale%20Pesto%3C/p%3E%3Cp%3EPlace%20the%20chicken%20breasts%20between%20two%20pieces%20of%20plastic%20wrap%20and%20pound%20thin.%3C/p%3E%3Cp%3ECoat%20the%20chicken%20first%20in%20the%20egg%20then%20into%20the%20cornmeal%20seasoned%20with%20the%20garlic%20powder,%20salt%20and%20pepper.%20Heat%20a%20saute%20pan%20over%20medium/%20medium%20high%20heat,%20add%20enough%20olive%20oil%20to%20coat%20the%20bottom%20and%20cook%20the%20chicken%20on%20each%20side%20until%20golden%20and%20the%20chicken%20is%20cooked%20through.%3C/p%3E%3Cp%3EFor%20the%20pesto%20add%20the%20kale,%20cheese,%20garlic%20and%20almonds%20into%20a%20food%20processor.%20Pulse%20a%20few%20times%20to%20begin%20to%20break%20the%20ingredients%20down.%20With%20the%20machine%20on,%20drizzle%20in%20enough%20olive%20oil%20to%20just%20make%20it%20come%20together.%20Taste,%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EThis%20is%20a%20decent%20sized%20batch%20so%20place%20into%20a%20mason%20jar%20and%20top%20with%20a%20little%20extra%20olive%20oil%20to%20keep%20the%20extra%20in%20the%20fridge.%3C/p%3E%3Cp%3ETop%20each%20chicken%20breast%20with%20a%20nice%20dollop%20of%20the%20kale%20pesto.%3C/p%3E%3Cp%3EHAPPY%20EATS!!!%3C/p%3E%3Cp%3E*this%20is%20my%20original%20recipe*%3C/p%3E%3Cp%3E*it%20is%20not%20recommended%20to%20eat%20raw%20kale%20more%20then%20once%20of%20twice%20a%20week%20if%20you%20have%20a%20thyroid%20condition%20and%20not%20recommended%20for%20people%20of%20blood%20thinners%20because%20of%20the%20high%20vitamin%20k%20content*%3C/p%3E){kind=link}
