  1. Slice onion thin. Separate onion into rings. Place in deep bowl. Slice cucumbers thin; place in bowl; mix. Add in 1/2 c. apple cider vinegar, 1/2 c. water, and salt and pepper to taste. Refrigeratebefore serving. To refrigeratefaster, put ice cubes on top of salad and fold in place of water.
  2. What is really great about this, is which if you have leftover onions from the salad you can put them over mashed potatoes. So good.
