%3C/p%3E%3Cp%3EI%20just%20realized%20my%20last%20post%20was%20in%20February%20-%20where%20I%20promised%20to%20write%20about%20my%20recipe%20for%20bread%20sans%20the%20beer.%20%20Well,%20I'm%20still%20working%20on%20that.%20%20I've%20been%20trying%20to%20bake%20a%20bread%20that's%20higher%20in%20protein%20so%20I%20can%20feel%20good%20about%20sending%20my%20daughters%20out%20the%20door%20in%20the%20morning%20with%20nothing%20more%20than%20a%20piece%20of%20toast%20in%20their%20hands.%20%20I've%20been%20experimenting%20with%20adding%20things%20like%20eggs%20instead%20of%20oil,%20quinoa%20flour%20for%20half%20the%20white%20flour,%20whole%20wheat%20and%20then%20the%20pretty%20good%20King%20Arthur%20white%20whole%20wheat%20flour%20-%20but%20I%20can't%20quite%20get%20the%20crunchy%20crusty%20crust%20I'm%20looking%20for%20with%20my%20substitutions.%20%20And%20you%20know%20what,%20dear%20readers?%20%20You%20deserve%20perfection,%20and%20dammit,%20I'm%20going%20to%20give%20it%20to%20you%20-%20I%20refuse%20to%20post%20until%20I%20like%20the%20bread%20myself,%20and,%20perhaps%20even%20more%20challenging,%20until%20my%20daughters%20like%20my%20bread.%20%20So%20there.%20%20My%20bread%20still%20lives%20in%20the%20land%20of%20the%20experiment.%20%20I%20wish%20I%20had%20one%20of%20those%20test%20kitchens%20like%20Martha%20Stewart%20and%20Chris%20Kimball%20have,%20but%20I%20don't.%20%20I%20have%20a%20kitchen%20that%20has%20to%20make%20breakfast,%20lunch%20and%20dinner%20for%20my%20hungry%20horde.%20%20And%20I%20don't%20have%20time%20to%20mess%20around%20for%20hours%20on%20end.%20%20That's%20all%20I'm%20going%20to%20say%20about%20it%20for%20now.%20%20I'm%20not%20bitter.%20%20Not%20at%20all.%3C/p%3E%3Cp%3EHowever,%20last%20night%20I%20will%20admit%20to%20making%20a%20darn%20good%20stir%20fry%20-%20and%20I'm%20hoping%20I%20haven't%20posted%20this%20one%20here%20before%20-%20or%20something%20like%20it.%20%20If%20I%20have%20forgive%20me%20-%20it's%20because%20I'm%20still%20wrapped%20up%20in%20bread%20-%3C/p%3E%3Cp%3EI%20took%20the%20basics%20from%20a%20Cooks%20Illustrated%20recipe%20for%20a%20Stir%20Fry%20with%20Curry%20Sauce,%20and%20then,%20because%20once%20again%20I%20didn't%20have%20most%20of%20the%20ingredients,%20substituted%20all%20sorts%20of%20things.%20%20If%20you%20want%20the%20un-bastardized%20recipe,%20go%20to%20the%20link%20-%20but%20you%20can%20make%20it%20my%20way%20too%20-%3C/p%3E%3Cp%3E1/4%20-%201/2%20lb%20or%20so%20boneless%20chicken%20breasts%20*see%20note%3C/p%3E%3Cp%3E1TLBS%20soy%20sauce%3C/p%3E%3Cp%3E1TLBS%20Marsala%20wine%20(cuz%20that's%20what%20I%20have%20-%20Cooks%20calls%20for%20sherry%20-%20I%20almost%20never%20have%20sherry.%20%20A%20dry%20white%20wine%20would%20not%20be%20out%20of%20place%20here%20either.%3C/p%3E%3Cp%3ESauce:%3C/p%3E%3Cp%3E1%20tsp%20Garam%20Masala%20(ok,%20so%20here's%20part%20of%20where%20Cooks%20and%20I%20differ%20-%20they%20call%20for%202%20tsp%20of%20curry%20-%20but%20I%20happen%20to%20have%20this%20jar%20of%20garam%20masala%20-%20which,%20I%20just%20want%20to%20point%20out%20that%20my%20auto%20correct%20wants%20to%20correct%20to%20gram%20nasal%20-%20you%20could%20happily%20go%20with%20the%20curry,%20or%20add%20another%20spice%20of%20some%20type)%3C/p%3E%3Cp%3E1TBLSP%20of%20grated%20fresh%20ginger.%20%20I%20keep%20a%20knobby%20ginger%20root%20in%20my%20freezer%20and%20just%20grate%20it%20frozen%20when%20I%20need%20it.%3C/p%3E%3Cp%3EVegetables%3C/p%3E%3Cp%3E1-2%20TBLSP%20of%20Canola%20or%20Peanut%20or%20Grapeseed%20Oil%20(all%20these%20oils%20can%20take%20high%20heat%20-%20I%20don't%20recommend%20olive%20oil,%20which%20can't)%3C/p%3E%3Cp%3E1%20sliced%20spring%20onion%20-%20kinda%20looks%20like%20a%20scallion%20on%20steroids,%20has%20a%20lot%20of%20the%20properties%20of%20a%20leek,%20but%20with%20a%20nice%20little%20fresh%20oniony%20bite%3C/p%3E%3Cp%3E1%20carrot,%20sliced%3C/p%3E%3Cp%3E1%20-%202%20cups%20of%20a%20frozen%20vegetable%20medly,%20thawed%20in%20a%20sieve%20under%20running%20water.%20%20I%20used%20green%20beans,%20peas,%20%20broccoli%20and%20cauliflower-%20garbanzo%20beans%20would%20be%20good,%20what%20ever%20you%20have%20.%20%20Most%20people%20have%20broccoli.%3C/p%3E%3Cp%3E1%20clove%20of%20garlic%20chopped%20fine%3C/p%3E%3Cp%3EFirst%20-%20put%20the%20chicken%20in%20a%20bowl%20and%20toss%20with%20the%20soy%20and%20marsala%20and%20just%20leave%20it%20there%20to%20marinate%20while%20you%20get%20every%20thing%20else%20together.%20%20(this%20works%20great%20with%20raw%20shrimp%20too)%3C/p%3E%3Cp%3EThen%20make%20the%20sauce%20-%20dump%20all%20the%20ingredients%20into%20a%20bowl%20or%20a%20measuring%20cup.%3C/p%3E%3Cp%3EChop%20all%20the%20stuff%20that%20needs%20chopping.%20%20Thaw%20all%20the%20stuff%20that%20needs%20thawing.%3C/p%3E%3Cp%3ETake%20out%20a%20skillet%20or%20maybe%20a%20wok%20if%20you%20have%20one%20(I%20don't).%20%20Get%20the%20skillet%20super%20hot%20so%20it's%20smoking%20a%20little.%20%20Swirl%20the%201st%20TBLSP%20of%20oil%20in%20the%20pan%20and%20dump%20all%20the%20chicken%20and%20the%20marinade%20into%20the%20hot%20pan.%20%20Make%20sure%20the%20chicken%20is%20all%20spread%20out%20so%20that%20every%20piece%20gets%20a%20nice%20sear.%20%20If%20you%20have%20a%20lot%20of%20chicken%20you%20should%20do%20this%20in%20batches.%20%20Let%20it%20sit%2030%20seconds%20or%20so.%20%20Stir%20and%20let%20it%20sit%20again.%20%20It%20should%20be%20cooked%20through%20after%202-3%20min.%20%20Take%20it%20out%20of%20the%20pan%20and%20put%20it%20in%20a%20clean%20bowl%20to%20sit.%20%20Pour%20in%20another%20TBLSP%20of%20oil,%20let%20it%20get%20hot,%20tip%20your%20onions%20and%20carrots%20in,%20stir%20them%20for%20a%20while,%20until%20the%20onions%20are%20almost%20translucent.%20%20Tip%20in%20all%20your%20veggies,%20stir%20them%20for%20a%20minute%20or%20so,%20then%20add%20your%20garlic.%20%20Let%20this%20cook%20about%2030%20seconds,%20then%20return%20the%20chicken%20to%20the%20pan,%20and%20stir%20the%20sauce%20over%20all%20of%20it.%20%20Cook%20about%2030%20seconds%20more,%20and%20serve%20ASAP%20%20-%20it's%20not%20good%20if%20you%20let%20it%20get%20cool.%20%20Serve%20with%20rice%20or%20rice%20noodles.%3C/p%3E%3Cp%3ESo%20sorry%20I%20don't%20have%20a%20picture.%20%20It%20all%20got%20eaten%20pretty%20quickly.%3C/p%3E%3Cp%3E*Note:%20so,%20these%20days,%20because%20I'm%20feeling%20cheap,%20I%20try%20to%20make%20one%20pack%20of%204%20boneless%20chicken%20breasts%20last%20over%20several%20meals.%20One%20pack%20is%20about%202%20whole%20breasts%20divided%20-%20and%20comes%20to%20about%20a%20pound%20or%20pound%20&%201/2%20or%20so.%20%20For%20this%20you%20can%20use%20as%20much%20or%20as%20little%20(or%20none)%20chicken%20as%20you%20like.%20%20For%20this%20recipe,%20plumped%20the%20whole%20thing%20up%20with%20vegetables.%20%20OF%20COURSE%20you%20can%20leave%20the%20chicken%20out%20all%20together%20and%20just%20go%20with%20veggies%20-%20And%20OF%20COURSE%20you%20can%20substitute%20Shrimp%20for%20the%20chicken.%20%20In%20fact%20I%20think%20shrimp%20would%20be%20OUTSTANDING%20in%20this%20and%20I%20wish%20I'd%20thought%20of%20it%20last%20night%20because%20I%20have%20tons%20of%20frozen%20shrimp%20in%20my%20fridge%20and%20shrimp%20is%20one%20of%20my%20favorite%20foods%20ever.%3C/p%3E){kind=link}
