%20we%20rarely%20eat%20out.%20%20But%20every%20once%20in%20a%20while,%20I%20relax%20and%20it%20is%20very%20nice%20to%20eat%20out--to%20not%20cook%20or%20wash%20dishes.%3C/p%3E%3Cp%3EThere%20is%20a%20Mexican%20restaurant,%20right%20down%20the%20street,%20(with%20an%20excellent%20sanitation%20rating)%20we%20always%20enjoy.%20It%20is%20not%20the%20usual%20style%20of%20Tex-Mex%20featured%20in%20most%20of%20the%20Mexican%20eateries%20in%20our%20area.%20I%20don't%20really%20know%20how%20to%20describe%20it,%20but%20it%20seems%20fresher%20and%20their%20menu%20features%20a%20lot%20of%20fish%20and%20seafood.%3C/p%3E%3Cp%3EPritchard%20Parker%20loves%20their%20fish%20tacos%20and%20almost%20always%20orders%20them.%20They%20dress%20the%20tacos%20with%20a%20green%20sauce%20he%20just%20adores.%20He%20always%20wants%20me%20to%20taste%20it,%20and%20I%20think%20it%20is%20a%20chimichurri%20sauce.%20Because%20I%20had%20both%20fresh%20pineapple%20and%20mango%20on%20hand,%20I%20made%20a%20salsa%20with%20them.%20But%20I%20do%20have%20more%20talapia%20in%20the%20freezer,%20so%20will%20be%20experimenting%20with%20the%20green%20sauce%20next%20time.%3C/p%3E%3Cp%3EFish%20Tacos%3C/p%3E%3Cp%3ECut%20fish%20filets%20into%20approximately%202%20ounce%20pieces%20and%20dry%20with%20paper%20towels.%3C/p%3E%3Cp%3EMake%20the%20batter%20by%20whisking%20together%20the%20flour,%20cornstarch,%20baking%20powder,%20and%20salt.%20Mix%20together%20the%20egg%20and%20ginger%20ale,%20then%20stir%20into%20the%20dry%20mixture.%3C/p%3E%3Cp%3EHeat%20about%201/2%20inch%20oil%20in%20a%20large%20skillet%20over%20medium%20high%20heat.%20Preheat%20the%20over%20to%20200%20degrees.%20When%20the%20oil%20is%20hot,%20briefly%20fry%20the%20tortillas,%20but%20don't%20get%20them%20too%20brown.%20Drain%20on%20paper%20towels%20and%20keep%20warm%20in%20the%20oven.%3C/p%3E%3Cp%3EDip%20the%20fish%20pieces%20into%20flour%20then%20into%20the%20batter.%20Fry%20in%20the%20hot%20oil%20until%20golden%20brown%20on%20each%20side.%3C/p%3E%3Cp%3EPineapple%20Mango%20Salsa%3C/p%3E%3Cp%3E1/2%20of%20a%20fresh%20pineapple,%20peeled,%20cored,%20and%20diced%3C/p%3E%3Cp%3E1%20mango,%20peeled%20and%20diced%3C/p%3E%3Cp%3E1%20small%20red%20onion,%20diced%3C/p%3E%3Cp%3E1/2%20red%20bell%20pepper,%20diced%3C/p%3E%3Cp%3E1%20-2%20fresh%20jalapenos,%20minced%3C/p%3E%3Cp%3EJuice%20of%202%20limes%3C/p%3E%3Cp%3E1%20Tbsp.%20olive%20oil%3C/p%3E%3Cp%3E1%20tsp.%20chili%20powder%3C/p%3E%3Cp%3ESalt%20to%20taste%3C/p%3E%3Cp%3EHoney,%20optional,%20if%20your%20fruit%20is%20too%20tart%3C/p%3E%3Cp%3ECombine%20the%20pineapple,%20mango,%20onion,%20bell%20pepper,%20and%20jalapenos.%20Add%20the%20lime%20juice,%20olive%20oil,%20and%20chili%20powder.%20Stir%20well%20to%20mix%20together.%20Taste%20and%20add%20salt%20and/or%20honey,%20to%20taste.%3C/p%3E){kind=link}
