.%20I%20also%20wanted%20to%20thank%20my%20awesome%20friends%20in%20this%20blogosphere%20who%20have%20been%20a%20good%20support%20on%20what%20I've%20done%20-blog,%20articles%20on%20IE,%20Facebook%20page,%20and%20personal%20life.%20The%20friendship%20is%20growing%20and%20I%20very%20much%20appreciate%20to%20get%20to%20know%20you%20all.%20I'm%20blessed!%20You%20know%20who%20you%20are!%3C/p%3E%3Cp%3ECooking%20with%20the%20ingredients%20you%20have%20on-hand%20is%20more%20challenging%20than%20following%20a%20recipe%20and%20getting%20ingredients%20that%20you%20need.%20Have%20you%20watched%20the%20show%20%22Chopped%22on%20Food%20Network?%20With%20limited%20ingredients%20and%20time,%20they%20have%20to%20create%20their%203%20course%20dishes%20and%20compete%20against%20one%20another.%20It's%20very%20interesting%20to%20see%20what%20they%20come%20up%20with.%20Thank%20God%20I%20had%20a%20lot%20of%20time%20to%20think%20of%20how%20to%20get%20rid%20of%20my%20cucumbers!%3C/p%3E%3Cp%3EToday's%20dish%20is%20the%20second%20dish%20I%20made.%20It's%20ground%20pork%20mixed%20with%20roasted%20sesame%20seeds,%20chinese%20mushroom,%20glass%20noodle,%20cilantro,%20fish%20sauce,%20sugar,%20black%20pepper,%20and%20shichimi%20(Japanese%207%20spice%20powder),%20and%20stuffed%20in%20cucumbers%20floating%20around%20in%20savory%20soup.%20It's%20a%20little%20of%20Chinese,%20Thai,%20and%20Japanese.%20For%20short,%20let's%20just%20say%20it's%20Asian%20-%20hahaha.%20The%20flavor%20is%20full%20from%20the%20pork%20mix%20and%20also%20from%20the%20soup.%20Cucumber%20adds%20a%20great%20flavor%20to%20it.%20Even%20though%20it's%20cooked,%20I%20still%20think%20it%20freshens%20the%20dish.%3C/p%3E%3Cp%3EWith%20the%20leftover%20pork%20mixture,%20I%20formed%20it%20in%20mini%20burger%20patties%20and%20deep%20fried%20them.%20They%20were%20so%20good%20by%20themselves!%20Too%20bad,%20I%20forgot%20to%20take%20a%20picture%20of%20them%20as%20I%20was%20too%20excited%20to%20try.%20What%20a%20bummer.%20You%20could%20serve%20those%20as%20a%20side%20dish%20or%20keep%20it%20in%20the%20fridge%20for%20the%20next%20meals.%3C/p%3E%3Cp%3EI%20hope%20you%20enjoy%20piggy%20in%20a%20cucumber%20blanket!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESteep%20Chinese%20mushroom%20and%20glass%20noodle%20in%20warm%20water%20in%20a%20seperate%20bowl%20for%20at%20least%20half%20hour%20to%20an%20hour.%20Make%20sure%20murshroom%20is%20rehydrated%20and%20glass%20noodle%20is%20soft.%3C/p%3E%3Cp%3EMix%20ground%20pork%20with%20sesame%20seeds,%20mushroom,%20noodle,%20cilantro,%20fish%20sauce,%20sugar,%20pepper,%20shichimi.%20Use%20hands%20to%20mix%20the%20ingredients.%3C/p%3E%3Cp%3ECut%20cucumber%20into%202%22%20long,%20peel,%20and%20use%20small%20spoon%20and%20knife%20to%20remove%20seeds%20and%20meat.%20The%20ideal%20is%20to%20create%20a%20big%20hole%20and%20make%20cucumber%20not%20too%20thick%20(please%20see%20photo).%3C/p%3E%3Cp%3EStuff%20pork%20mixture%20into%20prepared%20cucumbers%20as%20much%20as%20you%20can.%20Make%20sure%20it's%20stuffed%20tight%20and%20let%20it%20hang%20out%20top%20and%20end%20tips%20a%20bit.%3C/p%3E%3Cp%3EHeat%20up%20a%20medium%20sauce%20pan%20with%20vegetable%20stock%20or%20any%20stock%20you%20have%20on%20hands.%20When%20it%20boils,%20add%20mirin,%20sake,%20and%20black%20pepper.%20Bring%20it%20to%20boil.%3C/p%3E%3Cp%3EAdd%20stuffed%20cucumber,%20and%20let%20it%20cook%20for%2010-15%20mins%20until%20the%20pork%20is%20cooked%3C/p%3E%3Cp%3EDivide%20into%202%20bowls,%20and%20pour%20stock%20into%20just%20a%20quarter%20of%20the%20bowl.%20It's%20not%20a%20soup,%20so%20you%20don't%20need%20to%20add%20a%20lot%20to%20it.%3C/p%3E%3Cp%3EGarnish%20with%20cilantro.%20Enjoy!%3C/p%3E%3Cp%3EShredded%20Chinese%20mushroom%20after%20rehydratedPork%20mixtureGetting%20ready%20for%20a%20hot%20tubAhh...Yum!%3C/p%3E){kind=link}
