%20That%20process%20is%20what%20is%20happening%20in%20the%20picture%20above.%20Think%20about%20it...%2039%20gallons%20of%20water%20needs%20to%20evaporate%20out%20of%20the%20sap%20to%20make%20just%20one%20gallon%20of%20the%20sweet%20stuff.%20(that's%20a%20lot%20of%20steam!%20and%20it%20smelled%20amazing%20if%20you%20were%20wondering)%3C/p%3E%3Cp%3E(from%20left%20to%20right:%20Grade%20A%20light%20amber,%20Grade%20A%20medium%20amber,%20Grade%20A%20dark%20amber)%3C/p%3E%3Cp%3EMy%20favorite%20was%20grade%20A%20medium%20amber.%20Do%20you%20know%20what%20yours%20is?%20Did%20you%20know%20the%20maple%20flavor%20gets%20more%20intense%20the%20darker%20the%20syrup%20is?%3C/p%3E%3Cp%3EThe%20grades%20are%20based%20on%20the%20color%20which%20is%20dependent%20on%20the%20time%20of%20season%20the%20sap%20is%20harvested%20and%20the%20temperature%20outside.%20The%20later%20in%20the%20season%20(and%20warmer%20the%20outside%20temps%20are)%20the%20darker%20the%20syrup,%20until%20eventually%20it%20is%20so%20dark%20it%20is%20considered%20Grade%20B%20(super%20intense%20maple%20flavor),%20this%20is%20classified%20as%20a%20cooking%20grade%20and%20goes%20well%20in%20marinades,%20baking,%20and%20even%20in%20beer%20making!%3C/p%3E%3Cp%3ECare%20for%20a%20little%20sugar%20on%20snow?%20(traditionally%20maple%20syrup%20on%20fresh%20snow...%20but%20today%20we%20had%20it%20on%20vanilla%20ice%20cream,%20YUM!)%3C/p%3E%3Cp%3ENext%20was%20a%20ride%20down%20to%20Canandaigua%20Lake%20to%20the%20NY%20Wine%20and%20Culinary%20Center%20to%20take%20a%20class%20on%20baking%20with%20maple%20syrup.%20The%20class%20was%20taught%20by%20Chef%20Andrew%20Chambers%20and%20was%20a%20sweet%20treat,%20literally.%3C/p%3E%3Cp%3EJeanne%20and%20I%20were%20assigned%20to%20make%20Maple%20Walnut%20Baklava.%20Here's%20the%20recipe...%20and%20a%20picture%20of%20what%20you%20get%20when%20you%20follow%20the%20recipe.%3C/p%3E%3Cp%3EMaple%20Walnut%20Baklava%20(made%20by%20another%20set%20of%20our%20awesome%20classmates!)%3C/p%3E%3Cp%3ESomehow%20I%20didn't%20get%20a%20picture%20of%20what%20we%20made...%20(ours%20also%20had%20nuts%20on%20top...%20whoops%20guess%20you%20aren't%20suppose%20to%20do%20that)%20You%20see%20Jeanne%20is%20also%20a%20recipe%20tweaker%20like%20me.%20So%20instead%20of%20using%201%20cup%20of%20butter%20(seriously...)%20we%20used%201/4%20cup.%20And%20instead%20of%20slathering%20butter%20in%20between%20ever%20sheet%20of%20phyllo%20we%20did%20butter%20every%202,%20and%20alternated%20that%20with%20maple%20syrup%20every%202!%20We%20just%20stole%20some%20of%20they%20syrup%20from%20the%20sauce%20you%20make%20later...%20shhh%20don't%20tell.%3C/p%3E%3Cp%3E4%20out%20of%205%20people%20we%20asked%20liked%20our%20slimmed%20down%20version%20better%20than%20the%20full%20on%20butter%20version!%20Go%20us!%20And%20we%20didn't%20hate%20on%20the%20one%20who%20liked%20the%20butter%20version%20better,%20to%20each%20their%20own%20:)%3C/p%3E%3Cp%3EOther%20things%20the%20other%20groups%20made:%3C/p%3E%3Cp%3ESomehow%20I%20also%20missed%20out%20on%20a%20picture%20of%20the%20chocolate%20covered%20maple%20bavarian...%20it%20was%20DELICIOUS!!!%20And%20really%20beautiful...%20and%20we%20just%20dug%20right%20in%20and%20didn't%20take%20a%20picture...%20sorry%20:D%3C/p%3E%3Cp%3EThis%20post%20is%20brought%20to%20you%20by%2024x24%20sponsored%20by%20Foodbuzz!%20Thanks%20so%20much%20Foodbuzz%20for%20sending%20us%20on%20this%20maple%20adventure!%3C/p%3E){kind=link}
