%20they%E2%80%99re%20a%20lot%20more%20work%20than%20jam.%20You%20need%20to%20collect%20the%20juices%20of%20whatever%20fruit%20(or%20in%20this%20case%20flower)%20you%E2%80%99re%20using,%20then%20cook%20the%20liquid%20then%20add%20the%20pectin,%20then%20reduce%20it%E2%80%A6%20It%E2%80%99s%20just%20a%20lot%20of%20steps.%20Where%20as%20with%20jams,%20you%20mash%20the%20fruit,%20cook%20it%20for%20a%20bit,%20and%20there%20you%20go.%20(B)%20I%E2%80%99ve%20had%20a%20lot%20of%20failures%20with%20jelly.%20It%20took%20me%20some%20time%20to%20get%20the%20hang%20of%20using%20pectin.%20The%20jelly%20isn%E2%80%99t%20supposed%20to%20be%20totally%20thick%20when%20you%E2%80%99re%20canning%20it,%20it%20thickens%20as%20it%20cools.%20I%E2%80%99ve%20ever%20ended%20up%20with%20over%20jellied%20jelly,%20so%20thick,%20it%E2%80%99s%20practically%20a%20soft%20candy,%20or%20under%20jellied%20where%20after%20canning,%20I%20can%20turn%20the%20jar%20over%20and%20it%E2%80%99s%20like%20having%20canned%20a%20syrup.%20Somehow%20with%20this%20recipe%20I%20got%20it%20right,%20a%20well%20jellied%20consistency%20that%20moves%20a%20bit%20in%20the%20jar%20but%20still%20holds%20firm.%3C/p%3E%3Cp%3EWhen%20I%20challenged%20you%20to%20violet%20foraging%20this%20weekend,%20what%20I%20really%20meant%20was%20a%20few%20hours%20outside,%20collecting%20flowers,%20getting%20a%20bit%20a%20of%20a%20tan,%20then%20the%20rest%20of%20your%20time%20slaving%20over%20your%20kitchen.%20Just%20kidding.%20In%20reality,%20all%20three%20(syrup,%20jelly%20and%20soon%20to%20come%20candied%20violets)%20are%20relatively%20simple,%20but%20take%20patience.%20Like%20the%20syrup,%20you%20need%20to%20let%20you%20flowers%20infuse%20for%20a%20full%20day.%20Unlike%20the%20syrup,%20however,%20you%20can%20use%20the%20full%20bud,%20no%20need%20to%20pick%20off%20the%20individual%20flowers,%20unless%20you%20really%20have%20that%20much%20time%20on%20your%20hands.%20If%20so,%20I%20still%20have%20a%20few%20windows%20here%20that%20need%20cleaning,%20caked%20with%20what%20I%E2%80%99m%20convinced%20is%20still%20layers%20of%201920s%20grime.%3C/p%3E%3Cp%3EViolets%20being%20deprived%20of%20color%20in%20order%20to%20create%20jelly.%20So%20pretty!%3C/p%3E%3Cp%3EThe%20jelly,%20like%20the%20syrup,%20is%20sweet%20with%20hints%20of%20floral.%20I%20was%20a%20bit%20disappointed%20that%20it%20didn%E2%80%99t%20smell%20nearly%20as%20intoxicating%20as%20sticking%20my%20noise%20in%20a%20quart%20of%20them,%20but%20oh%20well.%20The%20most%20%E2%80%9Cviolet%20tasting%E2%80%9D%20recipe%20I%20came%20across%20was%20to%20simply%20candy%20them.%20Check%20back%20tomorrow%20for%20that%20recipe.%20As%20for%20how%20to%20use%20the%20jelly?%20Well,%20you%20have%20your%20typical%20jam%20and%20toast,%20but%20also%20consider%20using%20it%20in%20other%20forms%20of%20baking%20or%20cooking.%20Stuff%20a%20cupcake,%20glaze%20some%20pork%20chops%20or%20chicken.%20Serve%20it%20with%20some%20cheese%20(what%20kind,%20test%20them%20all%E2%80%93mild%20to%20stinky%20and%20let%20me%20know%20what%20works%20best).%20My%20plan%20for%20today%20is%20to%20use%20it%20as%20the%20filling%20of%20a%20birthday%20cake.%20Lemon%20layer%20cake,%20violet%20jelly%20filling,%20vanilla%20bean%20butter%20cream%20and%20candied%20violets%20for%20decoration.%20I%E2%80%99ll%20let%20you%20know%20how%20it%20turns%20out.%3C/p%3E%3Cp%3ERinse%20and%20drain%20flowers%20and%20place%20in%20a%20small%20stainless%20steel%20saucepan%20or%20heat-proof%20glass%20bowl.%20Pour%20over%20boiling%20water,%20cover%20and%20let%20steep%20for%2024%20hours.%20Strain%20the%20liquid%20through%20a%20fine%20mesh%20sieve%20into%20a%20medium%20saucepan,%20using%20a%20wooden%20spoon%20(or%20very%20clean%20hands)%20to%20squeeze%20out%20as%20much%20liquid%20as%20possible.%20Add%20lemon%20juice%20and%20gently%20heat%20over%20medium%20low%20heat%20until%20warm.%3C/p%3E%3Cp%3EI%20know%20I%20said%20strain%20into%20a%20pot,%20but%20I%20created%20another%20dish%20to%20wash%20just%20to%20show%20you%20the%20color%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20sugar%20and%20pectin%20until%20well%20incorporated.%20Add%20sugar-pectin%20blend%20to%20violet%20water%20and%20whisk%20until%20completely%20dissolved.%20Turn%20heat%20up%20to%20medium%20high%20and%20bring%20mixture%20to%20a%20boil,%20stirring%20occasionally.%20You%20want%20to%20stay%20close%20to%20the%20pot%20because%20it%20does%20have%20a%20tendency%20to%20bubble%20over%20if%20left%20unattended.%20Continue%20cooking%20until%20mixture%20has%20thickened%20slightly,%20about%205-10%20minutes,%20skimming%20off%20any%20foam%20as%20you%20go%20(there%20will%20be%20a%20lot).%20Jelly%20is%20ready%20when%20it%20passes%20the%20chilled%20plate%20test.%3C/p%3E%3Cp%3EThis%20is%20after%20skimming%20and%20skimming%E2%80%93I%E2%80%99m%20not%20kidding%20when%20I%20say%20it%20creates%20a%20lot%20of%20foam!%3C/p%3E%3Cp%3EMake%20sure%20all%20foam%20has%20been%20removed%20and%20ladle%20jelly%20into%20clean,%20hot,%20sterile%20jars,%20leaving%201/4%20inch%20headspace.%20Wipe%20rims%20clean,%20center%20lids%20and%20screw%20on%20jar%20rings.%20Process%20in%20boiling%20water%20bath%20for%2012%20minutes.%3C/p%3E%3Cp%3ERemove%20jars%20and%20allow%20to%20cool%20for%2024%20hours.%20Press%20on%20center%20of%20lids%20after%20about%201%20hour%20to%20make%20sure%20they%E2%80%99ve%20sealed.%20If%20the%20lid%20springs%20back,%20it%20did%20not%20seal%20properly%20and%20needs%20to%20be%20stored%20in%20the%20refrigerator.%20After%2024%20hours,%20label%20jars%20and%20store%20in%20pantry.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
