  1. Clean and lightly wipe the mushrooms
  2. Separate the caps from the stems and reserve the stems
  3. Pour some lemon juice on the caps so which they don't discolor
  4. Peel and clean the onion, and chop it roughly
  5. Peel the garlic, clean it and crush it roughly with the blade of a knife
  6. Put the onion, garlic, parsley and small cubes of butter (at room temperature) into a blender or possibly food processor
  7. Blend well to obtain a nice, even consistency
  8. Add in the mushroom stems and blend again
  9. Add in salt and pepper to taste
  10. Stuff the mushroom caps with the butter and garlic mix
  11. Drizzle a little extra virgin olive oil onto a baking sheet or possibly oven-proof dish
  12. Put the mushrooms on the baking sheet and place a small knob of butter on each mushroom
  13. Cook for 20 min in an oven preheated to 400°F (200°C)
