%20to%20take%20along%20to%20my%20friend%E2%80%99s%20company%20where%20I%20was%20interviewing%20some%20filmmakers%20for%20a%20project%20I%E2%80%99m%20working%20on.%20%20It%E2%80%99s%20exciting%20and%20exhausting;%20assessing%20working%20potential,%20trying%20to%20find%20the%20chemistry%20needed%20for%20a%20creative%20partnership%20of%20this%20kind.%20%20Makes%20me%20both%20grateful%20to%20not%20be%20on%20the%20other%20side%20of%20the%20casting%20table%20(though%20auditions%20are%20a%20totally%20different%20beast)%20while%20finally%20understanding%20the%20%E2%80%9Cplease%20let%20the%20next%20person%20who%20walks%20in%20the%20door%20be%20the%20ONE%E2%80%9D%20thing.%3C/p%3E%3Cp%3EI%20also%20had%20a%20delightful%20phone%20appointment%20with%20my%20doctor%20(hi,%20Dominiques!)%20who%20once%20again%20reminded%20me%20how%20rad%20he%20is%20(see,%20the%20more%20I%20use%20it%20the%20greater%20the%20chances%20are%20you%E2%80%99ll%20accidentally%20start%20using%20it%20yourself%20and%20it%20will%20take%20over%20your%20social%20jargon).%20%20I%20had%20been%20nervous%20to%20catch%20up%20with%20him%20since%20I%20haven%E2%80%99t%20been%20quite%20as%20good%20with%20my%20body%20lately%20as%20I%20should%20be.%20%20We%20had%20started%20working%20together%20during%20my%20last%20serious%20bout%20of%20illness,%20and%20it%20took%20a%20long%20time%20for%20me%20to%20get%20on%20my%20feet%20again.%20%20So%20it%20was%20incredibly%20reassuring%20to%20hear%20him%20say%20that,%20despite%20said%20slipping%20habits,%20my%20current%20health%20is%20a%20testament%20to%20all%20the%20time%20and%20energy%20we%20put%20in%20for%20those%20many%20months%20and%20years,%20and%20I%20deserved%20a%20little%20break%20from%20the%20hardcore%20discipline%20to%20deal%20with%20some%20stuff.%20%20Rad.%3C/p%3E%3Cp%3EI%20topped%20off%20the%20evening%20by%20listening%20to%20some%20delightful%20bluegrass%20down%20in%20the%20village%20(The%20Six%20Deadly%20Venoms,%20check%20them%20out)%20with%20the%20company%20of%20someone%20who%E2%80%A6%20well%20let%E2%80%99s%20just%20say%20I%20really%20enjoyed%20myself.%20%20And%20though%20my%20late%20night%20led%20to%20starting%20late%20this%20morning,%20I%E2%80%99m%20pretty%20cool%20with%20life%20right%20now.%3C/p%3E%3Cp%3EWhich,%20for%20some%20horrific%20reason,%20inspired%20Billy%20Joel%20to%20start%20singing%20in%20my%20head.%20%20I%20must%20go%20turn%20on%20some%20Frenchie%20jazz%20music%20asap%20and%20get%20to%20work%20a%20nap.%20%20So%20before%20I%20go,%20here%E2%80%99s%20my%20new%20favorite%20cookie%20recipe.%3C/p%3E%3Cp%3ESoft%20and%20crumbly,%20perfect%20with%20milk!%3C/p%3E%3Cp%3EA%20few%20days%20ago%20I%20bought%20a%20big,%20beautiful%20bag%20of%20cornmeal%20to%20make%20a%20pie%20crust%20for%20an%20event%20this%20weekend,%20only%20to%20open%20my%20pantry%20and%20see%20a%20big,%20beautiful%20bag%20of%20cornmeal%20making%20eyes%20at%20me%20forlornly.%20%20As%20as%20I%20seldom%20use%20this%20kind%20of%20flour,%20I%20figured%20there%20was%20no%20time%20like%20the%20present%20to%20get%20started.%3C/p%3E%3Cp%3EAfter%20yesterday%E2%80%99s%20success%20with%20the%20peanut%20butter%20I%20figured%20I%E2%80%99d%20move%20it%20a%20step%20to%20the%20left%20and%20use%20some%20of%20my%20favorite%20Trader%20Joe%E2%80%99s%20almond%20butter%20along%20with%20the%20cornmeal%20and%20other%20gluten-free%20flours%20I%E2%80%99d%20be%20blending.%20%20The%20combo%20produced%20a%20soft,%20perfectly%20sweet%20(mildly),%20simple%20cookie%20with%20a%20delicious%20crumble.%20%20They%E2%80%99re%20gluten-free,%20contain%20no%20refined%20sugar,%20and%20have%20some%20extra%20protein%20and%20fiber%20thanks%20to%20the%20almonds%20and%20the%20flours.%3C/p%3E%3Cp%3EStart%20to%20finish%20it%20took%20me%20about%2035%20minutes%20to%20make%2036%20of%20these%20little%20babies.%20%20Though%20making%20one%20HUGE%20cookie%20sounds%20really%20fun%20right%20now%20too.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0.%20%20Line%20baking%20sheets%20with%20parchment%20paper%20or%20Silpats.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20flours%20cornmeal,%20baking%20powder,%20salt%20and%20xanthan%20gum.%20%20Whisk%20thoroughly%20to%20combine.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20standing%20mixer,%20beat%20the%20butter%20and%20almond%20butter%20on%20high%20until%20smooth%20and%20incredibly%20fluffy,%20scraping%20down%20the%20sides%20of%20the%20bowl%20as%20needed.%20%20It%20should%20look%20incredibly%20light%20%E2%80%93%20like%20a%20dark%20whipped%20cream.%3C/p%3E%3Cp%3EAdd%20the%20maple%20syrup%20and%20continue%20to%20beat%20until%20the%20mixture%20expands%20a%20bit%20and,%20again,%20looks%20incredibly%20light%20and%20fluffy%20(there%E2%80%99s%20really%20no%20better%20way%20to%20describe%20than%20light%20and%20fluffy,%20evidently,%20this%20morning).%3C/p%3E%3Cp%3EStop%20the%20mixer,%20scrape%20down,%20and%20pour%20in%20the%20flour%20mixture.%20%20Beat%20on%20low%20until%20it%20start%20to%20incorporate,%20then%20at%20medium%20speed%20until%20completely%20combined.%3C/p%3E%3Cp%3EFold%20in%20slivered%20almonds.%3C/p%3E%3Cp%3EDrop%20by%20rounded%20tablespoons%20onto%20prepared%20sheets.%3C/p%3E%3Cp%3EBaking%20two%20at%20at%20time,%20bake%20for%208%20minutes.%20%20Then%20use%20spatula%20to%20press%20down%20on%20cookies%20(if%20desired,%20this%20will%20make%20them%20a%20bit%20crispier)%20and%20rotate%20the%20sheets%20(flip%20them%20top%20and%20bottom%20on%20racks%20and%20then%20turn%20them%20around%20so%20the%20cookies%20bake%20evenly).%3C/p%3E%3Cp%3EBake%20for%208%20more%20minutes,%20or%20until%20slightly%20browned.%3C/p%3E%3Cp%3ECool%20on%20sheets%20for%20a%20few%20minutes,%20then%20remove%20to%20cool%20completely.%3C/p%3E%3Cp%3EPressed%20version%20of%20the%20cookies%3C/p%3E){kind=link}
