,%20someone%20had%20made%20some%20Caponata%20for%20us%20to%20try.%20It%20was%20delicious!%20%20Whoever%20you%20are,%20thank%20you%20for%20the%20recipe.%20%20I%20made%20it:%3C/p%3E%3Cp%3EI%20served%20it%20atop%20some%20sprouted%20grain%20bread%20with%20my%20swiss%20chard%20on%20it:%3C/p%3E%3Cp%3EHere%20is%20the%20recipe%20(&%20my%20changes):%3C/p%3E%3Cp%3EOpen-face%20Sandwiches%20with%20Caponata%20&%20Herb%20Goat%20Cheese%3C/p%3E%3Cp%3EChop%20up%203%20small%20eggplant%20(I%20used%202%20medium),%204%20stalks%20celery,%201%20red%20onion%20(I%20used%20yellow),%205%20baby%20bell%20peppers%20(I%20used%201-2%20regular),%205%20cloves%20garlic,%20and%20saute%20in%20olive%20oil%20(I%20used%20water)%20in%20a%20large%20saucepan.%20%20When%20almost%20cooked%20through,%20add%202%20diced%20creole%20tomatoes%20&%20simmer,%20covered%20til%20all%20is%20cooked%20through%20(but%20not%20mushy).%20Add%201/2%20cup%20sliced%20black%20olives%20(I%20omitted...I%20hate%20olives),%20season%20with%20salt%20&%20pepper,%20cayenne%20(I%20used%20Creole%20seasoning),%20marjoram%20(left%20out,%20didn't%20have%20it),%20oregano,%20red%20wine%20vinegar%20&%20basil%20to%20taste.%20Add%20chopped%20herbs%20like%20parsley,%20basil%20&%20chives%20to%20the%20goat%20cheese%20(I%20didn't%20use%20cheese,%20obviously)%20&%20mix%20well.%20Slice%20up%20your%20favorite%20bread,%20top%20with%20caponata%20&%20add%20the%20goat%20cheese%20and%20some%20greens,%20like%20arugula%20&%20spinach.%3C/p%3E%3Cp%3EIt%20was%20really%20good%20and%20quite%20simple%20to%20make!%3C/p%3E%3Cp%3EThen%20I%20tried%20to%20make%20Mama%20Pea's%20Peanut%20Butter%20Cup%20Shake%20(like%20a%20Dairy%20Queen%20Blizzard).%20%20Mine%20didn't%20come%20out%20quite%20like%20hers.%20%20I%20did%20replace%20the%20coconut%20milk%20with%20vanilla%20almond%20milk.%20%20It%20was%20way%20too%20icy,%20but%20still%20good.%20%20The%20peanut%20butter%20cups%20were%20awesome!%20(%20I%20used%20Sunbutter%20in%20mine).%20%20Maybe%20next%20time%20I'll%20try%20coconut%20milk...%3C/p%3E%3Cp%3EI%20made%20my%20stuffed%20mushrooms%20again,%20but%20slightly%20different%20(always%20depends%20what's%20in%20the%20fridge).%20These%20were%20local%20baby%20portobellas,%20stuffed%20with%20some%20cooked%20brown%20rice,%20mixed%20with%20tomatoes,%20creole%20seasoning,%20some%20chopped%20walnuts,%20chopped%20celery,%20&%20various%20herbs%20(basil,%20parsley).%3C/p%3E%3Cp%3EMade%20some%20Red%20Wine%20Lentil%20Soup%20from%20an%20old%20Parade%20magazine%20(sept%2010,%202006).%20It's%20so%20good!%20And%20I%20added%20more%20veggies,%20of%20course%20and%20left%20out%20the%20butter.%20And%20used%20veggie%20broth%20instead%20of%20chicken.%3C/p%3E%3Cp%3EAlso%20toasted%20up%20a%20sprouted%20grain%20tortilla%20in%20my%20little%20toaster%20oven.%20Put%20it%20in%20there%20on%20about%20300%20degrees%20for%2020%20minutes%20or%20so,%20flipping%20it%20once%20in%20the%20middle.%20%20Then%20I%20tore%20it%20up%20so%20I%20could%20dip%20them!%3C/p%3E%3Cp%3EStir%20all%20together.%20%20You%20can%20double%20the%20recipe%20to%20make%20more.%3C/p%3E%3Cp%3EMade%20that%20Raw%20Sunflower%20Seed%20Falafel%20again,%20but%20served%20it%20as%20mock%20%22tuna%22%20on%20top%20of%20slices%20of%20tomato%20and%20swiss%20chard:%3C/p%3E%3Cp%3EThen%20we%20had%20guests%20over%20the%20next%20day%20and%20I%20served%20it%20in%20cucumber%20tubs:%3C/p%3E%3Cp%3EAfter%20the%20cucumber%20tubs,%20I%20served%20my%20Teriyaki%20Udon%20noodles%20but%20with%20more%20vegetables.%3C/p%3E%3Cp%3EThen%20a%20version%20today%20with%20no%20noodles!%20Just%20vegetable%20Teriyaki:%3C/p%3E%3Cp%3EI%20think%20I've%20finally%20come%20to%20the%20end%20of%20this%20post.%20%20Phew!%20That%20was%20a%20lot%20of%20pictures.%3C/p%3E%3Cp%3EStay%20tuned%20for%20the%20upcoming%20GIVEAWAY%20post....TODAY!!!%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
