%3C/p%3E%3Cp%3EPlace%20a%20rolled%20caramel%20in%20the%20center%20of%20each%20group%20of%20pecans.%3C/p%3E%3Cp%3EThen,%20melt%20for%20about%206%20minutes%20in%20a%20325%20degree%20oven.%20Just%20long%20enough%20to%20melt%20the%20caramel%20and%20bind%20the%20pecans%20together,%20but%20not%20so%20long%20that%20the%20caramel%20melts%20all%20the%20way%20to%20the%20baking%20sheet%20and%20gets%20bubbly.%3C/p%3E%3Cp%3ENow%20for%20the%20chocolate%20topping%20step:%20I%20just%20melted%20a%20bag%20of%20chocolate%20chips%20in%20the%20microwave%20and%20spooned%20chocolate%20over%20the%20caramel%20and%20smoothed%20it%20a%20bit.%20I%20will%20do%20things%20a%20bit%20differently%20next%20time.%20Read%20on%20to%20see%20why...%3C/p%3E%3Cp%3EOnce%20they%20had%20completely%20cooled,%20the%20chocolate%20on%20one%20batch%20of%20my%20turtles%20had%20lost%20it's%20sheen,%20and%20the%20other%20batched%20exhibited%20the%20dreaded%20chocolate%20bloom.%20Bummer.%3C/p%3E%3Cp%3EWhat%20is%20chocolate%20bloom,%20you%20may%20ask.%3C/p%3E%3Cp%3EWell,%20it%20is%20visible%20by%20whitish%20streaks%20or%20dots,%20fogginess,%20or%20even%20graying%20on%20the%20surface%20of%20chocolate%20and%20can%20be%20the%20result%20of%20two%20things.%20One%20cause%20of%20chocolate%20bloom%20is%20that%20chocolate%20that%20is%20allowed%20to%20get%20warm,%20allowing%20the%20cocoa%20butters%20to%20separate%20from%20the%20chocolate%20and%20rise%20to%20the%20surface%20in%20whitish%20streaks%20or%20swirls.%20This%20is%20not%20a%20sign%20that%20your%20Chocolate%20is%20inedible,%20just%20that%20it%20does%20not%20look%20as%20pretty.%3C/p%3E%3Cp%3EAnother%20type%20of%20chocolate%20bloom%20is%20%22sugar%20bloom%22.%20Sugar%20bloom%20occurs%20when%20moisture%20is%20allowed%20to%20get%20to%20the%20Chocolate%20(such%20as%20in%20a%20refrigerator)%20and%20the%20water%20draws%20the%20sugar%20to%20the%20surface%20as%20it%20evaporates,%20leaving%20white%20dots%20of%20sugar%20crystals%20on%20the%20surface%20of%20the%20Chocolate.%20Though%20sugar%20bloom%20does%20not%20affect%20the%20taste%20of%20the%20Chocolate,%20it%20does%20result%20in%20a%20somewhat%20grainy%20texture.%3C/p%3E%3Cp%3EI%20searched%20the%20web%20to%20find%20out%20where%20I%20had%20gone%20wrong.%20One%20site%20said%20that%20I%20needed%20to%20keep%20the%20temperature%20of%20the%20chocolate%20more%20stable,%20that%20it%20had%20probably%20gotten%20too%20hot.%20Another%20source%20said%20that%20the%20chocolate%20should%20have%20been%20cooled%20quicker.%20That%20I%20was%20working%20in%20a%20room%20that%20was%20too%20warm,%20that%20I%20should've%20put%20the%20turtles%20in%20the%20fridge%20to%20chill%20after%20putting%20on%20the%20chocolate.%20From%20watching%20the%20YouTube%20video,%20I%20noticed%20that%20the%20person%20making%20those%20turtles%20stirred%20in%20some%20vegetable%20shortening%20to%20help%20the%20chocolate%20maintain%20it's%20gloss%20and%20also%20that%20the%20chocolate%20was%20melted%20in%20a%20double%20boiler%20to%20keep%20the%20temperature%20stable.%20Next%20time%20I%20will%20apply%20those%20suggestions%20to%20my%20candy%20making.%3C/p%3E%3Cp%3EThat's%20great...for%20next%20time.%20But%20in%20the%20here%20and%20now%20I%20needed%20to%20fix%20my%20turtles!%20I%20certainly%20wasn't%20going%20to%20start%20over!%20For%20all%20of%20the%20information%20that%20I%20found%20about%20chocolate%20bloom%20and%20preventing%20it,%20I%20didn't%20find%20a%20single%20suggestion%20for%20how%20to%20fix%20it%20once%20your%20candies%20are%20made%20and%20cooled.%3C/p%3E%3Cp%3EI%20came%20up%20with%20a%20solution%20on%20my%20own.%20I%20melted%20more%20chocolate%20and%20then,%20using%20candy%20painting%20brushes,%20my%20daughter%20and%20I%20%22painted%22%20over%20the%20chocolate%20bloom.%20My%20mother-in-law%20was%20visiting%20and%20she%20pointed%20out%20that%20the%20spots%20were%20%22cute%22%20and%20it%20looked%20like%20we%20had%20put%20them%20there%20on%20purpose%20for%20spots%20on%20the%20turtle's%20shells.%20She%20made%20a%20good%20point....but%20I%20was%20concerned%20that%20people%20would%20see%20the%20spots%20and%20be%20afraid%20to%20eat%20them.%3C/p%3E%3Cp%3EAnd%20so%20we%20painted%20all%20of%20those%20spotted%20turtles.%20They%20turned%20out%20alright.%20Not%20candy%20store%20quality,%20but%20definitely%20delicious!%3C/p%3E%3Cp%3EI%20boxed%20them%20up%20for%20gift%20giving.%20I%20purchased%20half%20pound%20boxes%20at%20my%20local%20candy%20making%20store,%20but%20you%20can%20also%20purchase%20them%20online:%20Candy%20Boxes%201/2%20Lb.%203-Pack:%20White%3C/p%3E%3Cp%3EMy%20daughters%20and%20I%20had%20fun%20decorating%20the%20boxes.%20For%20teacher%20gifts,%20this%20is%20a%20neat%20way%20for%20your%20kids%20to%20personalize%20their%20presents.%20In%20our%20house%20it%20was%20also%20an%20excellent%20way%20ward%20off%20boredom%20on%20a%20snow%20day!%3C/p%3E%3Cp%3EOur%20Tower%20of%20Turtles!%20Now%20we%20just%20need%20to%20put%20the%20finishing%20touches%20on%20our%20gingerbread%20cookies%20and%20hopefully%20we%20can%20start%20delivering%20treats%20tomorrow.%3C/p%3E%3Cp%3EMelt%20the%20chocolate%20chips%20in%20either%20a%20double%20boiler%20or%20a%20microwave.%20Place%20the%20pecan%20halves%20on%20a%20cookie%20sheet%20(lined%20with%20parchment%20paper!).%20Cluster%20together%20to%20form%20the%20turtle%20head,%20arms,%20and%20feet.%20Unwrap%20the%20caramels%20and%20flatten%20each%20one%20with%20a%20rolling%20pin.%20Place%20a%20flattened%20caramel%20on%20top%20of%20each%20cluster%20of%20pecans.%20Bake%20in%20a%20preheated%20325%20degree%20oven%20for%20about%206%20minutes%20or%20until%20the%20caramels%20are%20just%20melted,%20but%20not%20bubbling.%20Remove%20from%20oven%20and%20spoon%20a%20dollop%20of%20chocolate%20on%20each%20turtle.%3C/p%3E){kind=link}
