.%20I%20still%20don't%20like%20cantaloupe%20but%20technically%20I%20think%20this%20salad%20is%20supposed%20to%20be%20a%20mix%20of%20both%20cantaloupe%20and%20honeydew%20melons.%20I%20made%20this%20last%20Labor%20Day%20but%20we%20had%20a%20really%20difficult%20time%20because%20we%20didn't%20have%20proper%20equipment.%20This%20really%20is%20best%20made%20using%20a%20wok.%20Last%20time%20I%20had%20a%20nonstick%20skillet%20and%20I%20used%20a%20combination%20of%20honeydew,%20cantaloupe%20and%20watermelon%20and%20it%20heated%20up%20too%20slowly%20and%20ended%20up%20being%20very%20mushy.%3C/p%3E%3Cp%3EHaving%20done%20some%20research,%20ie:%20trying%20each%20type%20of%20melon%20when%20it%20was%20on%20a%20fruit%20try%20at%20work,%20I%20have%20decided%20honeydew%20melon%20is%20the%20only%20one%20of%20the%20three%20main%20melons%20that%20I%20actually%20like.%20So%20here%20is%20the%20very%20monochromatic,%20yet%20oh%20so%20tasty%20hot%20melon%20salad.%3C/p%3E%3Cp%3EHeat%20a%20wok%20over%20high%20heat.%3C/p%3E%3Cp%3EOnce%20the%20pan%20is%20hot,%20add%20the%20olive%20oil,%20followed%20by%20the%20onion,%20and%20saute%20for%203%20to5%20minutes,%20moving%20the%20pan%20continually.%3C/p%3E%3Cp%3EAdd%20the%20melon%20and%20saute%20for%20another%202%20to%203%20minutes%20or%20until%20the%20melon%20starts%20to%20take%20on%20color.%3C/p%3E%3Cp%3EAdd%20the%20basil,%20salt,%20and%20pepper%20and%20continue%20to%20cook%20for%20another%20minute.%3C/p%3E%3Cp%3EPour%20mixture%20onto%20a%20serving%20platter,%20sprinkle%20with%20the%20cheese,%20vinegar%20and%20pine%20nuts,%20and%20serve%20immediately.%3C/p%3E%3Cp%3EI%20served%20this%20with%20seared%20chicken,%20roasted%20green%20beans,%20and%20a%20white%20bean%20and%20rosemary%20mash.%20The%20green%20beans%20and%20chicken%20were%20good%20but%20the%20white%20beans%20left%20something%20to%20be%20desired.%3C/p%3E){kind=link}
