%20%20The%20world%20slows%20down%20around%20me%20and%20I%20simply%20enjoy%20the%20risotto.%20%20But%20ya%20know,%20cooking%20risotto%20does%20the%20same%20thing%20for%20me.%20%20It's%20like%20making%20a%20roux%20(and%20ya'll%20know%20I%20love%20that).%20%20Slow%20and%20steady%20and%20mesmerizing.%20%20As%20I%20stir%20(and%20stir%20and%20stir%20and%20stir),%20everything%20else%20shrinks%20away%20until...poof!%3C/p%3E%3Cp%3EBut%20here's%20the%20thing.%20%20I%20have%20no%20imagination%20when%20it%20comes%20to%20risotto.%20%20When%20I%20make%20it,%20it's%20either%20mushroom%20or%20lemon.%20%20Since%20my%20risotto%20repertoire%20is%20stunningly%20lacking,%20you'd%20think%20I%20would%20have%20tried%20something%20different.%3C/p%3E%3Cp%3EWell%20why%20on%20Earth%20would%20you%20think%20that?%20%20Bless%20your%20little%20heart...are%20you%20new%20here?%3C/p%3E%3Cp%3EEven%20though%20I'm%20satisfied%20with%20the%20lemon%20risotto%20I've%20been%20making%20(from%20Food%20&%20Wine,%20with%20garlic%20seared%20shrimp),%20I%20tried%20Giada's.%20%20And%20her's%20wins.%20%20Except%20for%20one%20teensy%20little%20thing.%3C/p%3E%3Cp%3EWe%20liked%20Giada's%20lemon%20risotto%20more%20without%20the%20mascarpone.%3C/p%3E%3Cp%3EWhat?!%20%20Crazy%20talk%20you%20say?%3C/p%3E%3Cp%3EThe%20Husband%20made%20the%20risotto%20(b/c%20I%20was%20having%20some%20kind%20of%20hissy%20over%20something%20or%20other...but%20that's%20neither%20here%20nor%20there).%20%20We%20both%20tasted%20it%20before%20he%20added%20the%20mascarpone%20and%20we%20loved%20it.%20%20It%20was%20perfection.%20%20Creamy,%20lemony%20heaven.%20%20After%20the%20addition,%20the%20texture%20was...I%20don't%20know...off.%20%20The%20Husband%20thought%20Giada%20maybe%20lacked%20some%20confidence%20here%20and%20added%20mascarpone%20to%20ensure%20a%20creamy%20risotto.%3C/p%3E%3Cp%3EWhatever%20the%20reason,%20it's%20easy%20enough%20to%20leave%20out.%20%20And%20I%20can%20eat%20a%20second%20bowl%20since%20it'll%20have%20fewer%20calories.%3C/p%3E%3Cp%3EThis%20picture%20is%20not%20so%20good.%3C/p%3E%3Cp%3EIn%20a%20medium%20saucepan%20bring%20the%20broth%20and%201/2%20cup%20water%20to%20a%20simmer.%20Cover%20the%20broth%20and%20keep%20hot%20over%20low%20heat.%3C/p%3E%3Cp%3EIn%20a%20medium,%20heavy%20saucepan,%20melt%202%20tablespoons%20of%20the%20butter%20over%20medium%20heat.%20Add%20the%20shallot%20and%20saute%20until%20tender%20but%20not%20brown,%20about%203%20minutes.%20Add%20the%20rice%20and%20stir%20to%20coat%20with%20the%20butter.%20Add%20the%20wine%20and%20simmer%20until%20the%20wine%20has%20almost%20completely%20evaporated,%20about%203%20minutes.%20Add%201/2%20cup%20of%20the%20simmering%20broth%20and%20stir%20until%20almost%20completely%20absorbed,%20about%202%20minutes.%20Continue%20cooking%20the%20rice,%20adding%20the%20broth%201/2%20cup%20at%20a%20time,%20stirring%20constantly%20and%20allowing%20each%20addition%20of%20the%20broth%20to%20absorb%20before%20adding%20the%20next,%20until%20the%20rice%20is%20tender%20but%20still%20firm%20to%20the%20bite%20and%20the%20mixture%20is%20creamy,%20about%2020%20minutes.%20Remove%20from%20the%20heat.%20Stir%20in%20the%20remaining%20tablespoon%20of%20butter,%202%20tablespoons%20of%20Parmesan,%20mascarpone%20cheese,%20the%20lemon%20zest%20and%20juice,%20and%20the%20salt%20and%20pepper.%3C/p%3E){kind=link}
