%20and%20I%E2%80%99d%20been%20to%20Ireland%20several%20times%20at%20that%20point.%20%20What%20naturally%20followed%20was%20a%20succession%20of%20parties%20where%20we%E2%80%99d%20bring%20in%20a%20keg%20of%20Guinness,%20bottles%20of%20whiskey%20and%20Irish%20cream,%20and%20I%E2%80%99d%20make%20a%20full%20boiled%20dinner.%20%20The%20second%20year%20I%20made%20lamb%20stew%20and%20corned%20beef%20and%20cabbage.%20%20Subsequent%20years%20brought%20us%20to%20the%20point%20where%20we%20were%20making%209%20corned%20beefs%20and%20I%20was%20whipping%20up%20car-bomb%20cupcakes%20by%20the%20several%20dozen.%20%20We%20needed%20nothing%20more%20than%20good%20food,%20good%20booze%20and%20the%20company%20of%20our%20lovely%20friends.%3C/p%3E%3Cp%3EThis%20year%20I%E2%80%99m%20doing%20a%20bit%20of%20experimenting%20with%20gluten-and-dairy-free%20recipes%20to%20include%20with%20the%20traditional%20ones%20I%E2%80%99ll%20be%20presenting.%20%20For%20this%20%20I%20found%20the%20most%20traditional%20Irish%20Soda%20Bread%20recipe%20I%20could%20find,%20having%20discarded%20anything%20fancy%20and%20landing%20on%20one%20with%20thorough%20directions%20and%20a%20bit%20of%20history.%3C/p%3E%3Cp%3ESo,%20the%20Irish%20are%20famous%20for%20soda%20bread%20for%20two%20reasons:%20the%20abundance%20of%20soft%20wheat%20with%20a%20lower%20gluten%20content%20and%20the%20availability%20of%20fuel%20for%20home%20fires%20and%20therefore%20the%20ability%20to%20bake%20bread%20at%20whim.%20%20Simple%20ingredients%20(flour,%20milk,%20salt%20and%20baking%20soda)%20create%20a%20quick%20bread%20that%E2%80%99s%20delicious%20with%20a%20bowl%20of%20thick%20stew%20or%20layered%20around%20cold%20meat.%20%20Since%20you%20don%E2%80%99t%20want%20the%20gluten%20to%20develop%20(as%20you%20would%20with%20a%20harder%20wheat%20and%20yeast%20combo),%20this%20makes%20this%20bread%20perfect%20for%20a%20gluten-free%20version.%20%20I%20tried%20to%20approximate%20the%20taste%20of%20flour%20I%20remember%20from%20my%20glutenous%20soda-bread%20days,%20so%20threw%20in%20some%20oat%20and%20quinoa%20flour%20with%20the%20bulky%20rice%20flour%20and%20starches.%20%20And%20I%20soured%20unsweetened%20almond%20milk,%20hoping%20that%20the%20vinegar%20would%20produce%20the%20proper%20chemical%20reaction%20with%20the%20baking%20soda.%3C/p%3E%3Cp%3EThe%20result?%20%20This%20bread%20is%20delicious!%20%20Deceptively%20sweet,%20especially%20as%20it%20contains%20NO%20SUGAR.%20%20And%20popping%20warm,%20it%E2%80%99s%20perfect%20with%20a%20touch%20of%20Irish%20butter.%20%20I%20gave%20some%20to%20my%20friend%20Lynn%20and%20her%20boyfriend%20Griff,%20who%E2%80%99s%20from%20Ireland.%20%20His%20response:%20%E2%80%9Cthis%20is%20a%20very%20close%20approximation%20of%20the%20bread%20of%20my%20people%E2%80%9D.%20%20They%20gobbled%20them%20up.%3C/p%3E%3Cp%3EFor%20this%20go%20around%20I%20made%208%20mini%20loafs%20from%20the%20recipe%20to%20cut%20down%20the%20baking%20time%20dramatically.%20%20For%20St.%20Pat%E2%80%99s%20I%E2%80%99ll%20be%20making%20two%20full%20loaves%20along%20with%20a%20wheat-flour%20version.%20%20I%20have%20a%20feeling%20the%20recipe%20is%20equally%20successful%20either%20way.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPreheat%20oven%20to%2045o%20degrees.%20%20It%20should%20be%20fully%20preheated%20and%20nice%20and%20hot%20before%20you%20put%20the%20bread%20in.%3C/p%3E%3Cp%3ELightly%20flour%20a%20heavy%20baking%20sheet%20with%20gluten-free%20flour.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20sift%20together%20the%20flours,%20salt,%20sugar%20and%20baking%20soda.%20%20Gather%20and%20sift%20again,%20so%20that%20the%20baking%20soda%20is%20fully%20dispersed.%20%20Make%20a%20well%20in%20the%20center.%3C/p%3E%3Cp%3EIf%20using%20regular%20milk%20or%20milk%20alternative:%20measure%20one%20Tbsp%20white%20or%20red%20wine%20vinegar%20in%20a%202-cup%20measuring%20cup.%20%20Add%20enough%20milk%20to%20make%2010%20oz.%20%20Use%20a%20fork%20to%20mix%20thoroughly.%3C/p%3E%3Cp%3ESlowly%20pour%20about%208%20oz%20of%20the%20milk%20into%20the%20well%20of%20flour,%20and%20quickly%20start%20blending%20with%20fork%20until%20it%20starts%20to%20pull%20together.%20%20The%20mixture%20should%20be%20rather%20lumpy%20and%20on%20the%20drier%20side,%20but%20pulled%20together.%20%20Add%20currants%20and%20fold%20in%20gently.%20%20If%20too%20dry,%20add%20remaining%20milk%20until%20mixture%20pulls%20together.%3C/p%3E%3Cp%3ETurn%20onto%20a%20slightly%20floured%20board%20and%20knead%20just%20until%20the%20dough%20is%20one,%20about%2015%20seconds%20/%206%20kneads.%20%20Don%E2%80%99t%20over%20knead.%3C/p%3E%3Cp%3EBreak%20dough%20into%208%20balls,%20and%20press%20into%20slightly%20flat%20disks.%20%20Using%20a%20sharp%20knife,%20cut%20a%20cross%20in%20each%20loaf%20about%201/3%20into%20the%20dough.%3C/p%3E%3Cp%3EPlace%20in%20hot%20oven%20and%20bake%2013%20minutes,%20or%20until%20the%20tops%20are%20slightly%20brown.%20%20If%20you%20tap%20on%20the%20bottom%20of%20%20a%20loaf,%20it%20should%20sound%20hollow.%20%20The%2
