%20I've%20had%20breakfast.%20No%20matter%20what%20time%20of%20day%20it%20was.%20They%20make%20the%20absolute%20best%20omelets%20in%20this%20city,%20hands%20down.%20Plus,%20since%20I%20always%20think%20of%20it%20as%20a%20place%20for%20great%20eggs,%20pancakes%20and%20all%20things%20breakfast,%20I%20sometimes%20forget%20it's%20actually%20a%20Greek%20restaurant!%3C/p%3E%3Cp%3EThe%20family%20who%20owns%20it%20is%20Greek%20and%20they%20feature%20traditional%20Greek%20dishes%20on%20their%20menu.%20But%20when%20I%20tasted%20this%20soup%20for%20the%20first%20time,%20I%20wasn't%20even%20thinking%20about%20that.%20All%20I%20knew%20was%20it%20was%20delicious,%20with%20a%20capital%20D,%20and%20I%20needed%20to%20recreate%20its%20lemony%20goodness%20at%20home.%3C/p%3E%3Cp%3EWell,%20after%20I%20researched%20it%20a%20bit,%20I%20quickly%20discovered,%20it%20is%20indeed%20a%20Greek%20specialty%20that%20most%20traditional%20Greek%20restaurants%20serve%20their%20version%20of.%20(Okay,%20I%20have%20to%20be%20honest%20here.%20In%20my%20head%20I%20was%20saying%20%22It's%20Greek!!%22%20like%20the%20dad%20in%20My%20Big%20Fat%20Greek%20Wedding,%20who%20is%20convinced%20everything%20either%20comes%20from%20Greece,%20or%20was%20derived%20from%20something%20that%20came%20from%20Greece.)%3C/p%3E%3Cp%3EIf%20you%20have%20a%20springtime%20cold,%20or%20allergies%20that%20are%20in%20over%20drive,%20this%20will%20heal%20what%20ails%20you!%20In%20fact,%20the%20night%20I%20made%20it%20Monkey%20was%20down%20with%20strep%20throat%20and%20tonsillitis%20and%20it%20was%20the%20only%20thing%20all%20day%20he%20said%20tasted%20good%20and%20sucked%20down%20two%20bowls!%3C/p%3E%3Cp%3EIt's%20bursting%20with%20verdant%20lemon%20flavor,%20but%20has%20a%20silky%20texture%20from%20the%20egg.%20Plus,%20between%20the%20egg%20and%20the%20rice,%20it's%20thick%20and%20hearty%20without%20being%20heavy.%3C/p%3E%3Cp%3EIf%20you%20have%20a%20great%20Greek%20restaurant%20in%20your%20hometown,%20I%20bet%20you%20they%20serve%20a%20version%20of%20this.%20If%20%20you%20have%20ever%20had%20it%20and%20didn't%20know%20how%20to%20recreate%20it%20at%20home,%20now%20you%20do!%20Either%20way,%20it's%20a%20delicious%20soup,%20perfect%20for%20spring%20time!%3C/p%3E%3Cp%3EIn%20a%20large%20stock%20pot,%20bring%20broth%20to%20a%20boil.%20Add%20rice%20and%20garlic.%20Bring%20back%20up%20to%20temp.%20Reduce%20heat%20to%20medium.%20Cover%20and%20cook%20for%2020%20minutes%20until%20rice%20is%20tender.%20While%20cooking,%20in%20a%20medium%20bowl%20whisk%20together%20lemon%20juice%20and%20eggs%20until%20frothy.%20When%20rice%20is%20cooked,%20ladle%20out%20some%20hot%20broth%20into%20egg%20mixture%20and%20mix%20well.%20Slowly%20pour%20back%20into%20soup,%20stirring%20constantly.%20Reduce%20heat%20to%20low%20and%20cook%20for%2010%20minutes.%20Stir%20in%20parsley%20and%20salt%20to%20taste.%20*NOTE*%20Be%20sure%20to%20add%20enough%20hot%20liquid%20to%20egg%20mixture%20to%20temper-%20this%20will%20prevent%20the%20eggs%20from%20scrambling%20when%20you%20add%20it%20back%20in.%3C/p%3E){kind=link}
