Lentil Soup with Sausage & Squash

Mise En Place for ingredients.
Herb and spices: sage, herbs de provence, kosher salt, garlic pepper and garlic.
Add ghee/oil; celery and onions to large pot on medium heat.
Saute until onions are transparent.
Add garlic and cook another minute.
Add stock, water, herbs and spices.
Add lentils and simmer 10 minutes
Add mushrooms and sausage and simmer for 10 minutes.
Add carrots and squash. Simmer until vegetables and lentils are al dente. About 10 more minutes
Taste and adjust seasonings if necessary.
Serve with a salad and a hearty red wine to complete the meal.
