,%20the%20meal%20is%20worth%20it%20simply%20for%20the%20view%20and%20surrounding%20ambiance.%20%20Our%20hosts%20frequent%20the%20dining%20room%20often%20and%20have%20had%20what%20they%20described%20as%20incredible%20meals%20(especially%20breakfast)%20in%20addition%20to%20the%20so-so%20meals%20that%20we%20experienced%20on%20our%20visit.%20%20Service%20was%20impeccable,%20the%20views%20were%20beyond%20belief%20and%20the%20room%20itself%20was%20breathtaking.%3C/p%3E%3Cp%3ESnowy%20view%20from%20Tunnel%20ViewHeading%20back%20out%20for%20our%20Valley%20Tour%20we%20entered%20lightly%20falling%20snow%20which%20lent%20a%20somewhat%20magical%20feel%20to%20our%20surroundings.%20%20The%20trees%20were%20covered%20and%20glistening,%20the%20falls%20were%20gushing,%20and%20the%20fog%20meandered%20about%20the%20tops%20of%20the%20giant%20granite%20monoliths,%20hiding%20Half%20Dome%20from%20our%20view.%20%20While%20our%20trip%20to%20Tunnel%20View%20provided%20an%20exquisite%20elevated%20view%20of%20the%20entire%20Valley,%20the%20cerulean%20blue,%20crystal%20clear%20skies%20once%20again%20eluded%20me,%20providing%20instead%20a%20different%20but%20no%20less%20incredible%20frozen%20wonderland.%3C/p%3E%3Cp%3EBack%20home,%20dinner%20was%20filled%20with%20the%20laughter%20of%20good%20friends%20reminiscing%20about%20our%20day%20in%20wintery%20Yosemite%20with%20jabs%20between%20my%20kids%20of%20who%20threw%20the%20best%20snowball.%20%20We%20set%20our%20faux%20Ugg%20boots%20by%20the%20fire%20to%20hopefully%20dry%20by%20morning%20(note:%20%20Ugg%20boots%20are%20NOT%20waterproof!)%20and%20as%20we%20thawed%20out%20our%20frozen%20and%20very%20wet%20toes%20we%20enjoyed%20a%20ray%20of%20sunshine%20in%20the%20Limoncello%20Lemon%20Cheesecake%20for%20dessert.%3C/p%3E%3Cp%3EGiada%20has%20once%20again%20provided%20a%20luscious%20finish%20to%20our%20meal,%20this%20one%20bursting%20with%20lemon%20flavors%20and%20with%20an%20excuse%20to%20use%20our%20freshly%20made%20Limoncello.%20%20The%20addition%20of%20ricotta%20added%20a%20slightly%20different%20and%20lighter%20texture%20from%20the%20traditional%20all%20cream%20cheese%20cheesecakes%20and%20the%20lemon%20biscotti%20crust%20urged%20the%20lemon%20flavors%20even%20higher.%20%20Bringing%20smiles%20all%20around%20the%20table,%20Limoncello%20Lemon%20Cheesecake%20was%20the%20ideal%20finish%20to%20our%20awe-inspiring%20day.%3C/p%3E%3Cp%3ELimoncello%20Lemon%20Cheesecake%20Squares%3C/p%3E%3Cp%3Eadapted%20from%20Giada%20De%20Laurentiis%3C/p%3E%3Cp%3ENonstick%20cooking%20spray%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%BA%20F.%20%20Line%20a%209%20by%209%20by%202-inch%20baking%20pan%20with%20foil%20allowing%20the%20foil%20to%20lay%20over%20the%20edges%20for%20easy%20removal%20and%20spray%20with%20cooking%20spray.%3C/p%3E%3Cp%3EFinely%20grind%20the%20biscotti%20in%20a%20food%20processor.%20Add%20the%20melted%20butter%20and%201%20tablespoon%20of%20lemon%20zest,%20and%20process%20until%20the%20crumbs%20are%20moistened.%20Press%20the%20crumb%20mixture%20over%20the%20bottom%20(not%20the%20sides)%20of%20the%20prepared%20pan.%20Bake%20until%20the%20crust%20is%20golden,%20about%2015%20minutes.%20Cool%20the%20crust%20completely%20on%20a%20cooling%20rack.%3C/p%3E%3Cp%3EBlend%20the%20ricotta%20in%20a%20clean%20food%20processor%20until%20smooth.%20Add%20the%20cream%20cheese%20and%20sugar%20and%20blend%20well,%20stopping%20the%20machine%20occasionally%20and%20scraping%20down%20the%20sides%20of%20the%20work%20bowl.%20Blend%20in%20the%20limoncello,%20vanilla,%20and%20remaining%202%20tablespoons%20of%20lemon%20zest.%20Add%20the%20eggs%201%20at%20a%20time,%20and%20pulse%20just%20until%20blended.%20Scrape%20down%20the%20sides%20of%20the%20bowl%20as%20needed.%3C/p%3E%3Cp%3EPour%20the%20cheese%20mixture%20over%20the%20crust%20in%20the%20pan.%20Place%20the%20baking%20pan%20in%20a%20large%20roasting%20pan.%20Pour%20enough%20hot%20water%20into%20the%20roasting%20pan%20to%20come%20halfway%20up%20the%20sides%20of%20the%20baking%20pan.%20Bake%20until%20the%20cheesecake%20is%20golden%20and%20the%20center%20of%20the%20cake%20moves%20slightly%20when%20the%20pan%20is%20gently%20shaken,%20about%201%20hour%20(the%20cake%20will%20become%20firm%20when%20it%20is%20cold).%3C/p%3E%3Cp%3ETransfer%20the%20cake%20to%20a%20rack;%20cool%201%20hour.%20Refrigerate%20until%20the%20cheesecake%20is%20cold,%20at%20least%208%20hours%20and%20up%20to%202%20days.%20Cut%20the%20cake%20into%20squares%20and%20serve.%3C/p%3E%3Cp%3ENote:%20%20we%20preferred%20the%20cheesecake%20more%20on%20the%20second%20day,%20this%20is%20one%20that%20I%20would%20make%20ahead%20of%20time%20and%20allow%20the%20flavors%20and%20textures%20to%20meld%20before%20serving!%3C/p%3E%3Cp%3EFrazil%20Ice%20in%20Yosemite%20Creek%3C/p%3E){kind=link}
