%20and%20paneer-veggie%20tandoori%20kebabs%20(made%20by%20me).%20I%20can%20never%20let%20a%20dinner%20pass%20without%20dessert%20so%20I%20decided%20to%20make%20Mango%20Falooda%20that%20was%20flavored%20with%20cardamom%20and%20had%20some%20vibrant%20layers%20to%20it...%3C/p%3E%3Cp%3EIt%20had%20been%20a%20long%20time%20since%20I%20ate%20or%20made%20falooda%20and%20I%20just%20wanted%20to%20have%20something%20cool%20and%20refreshing%20and%20this%20was%20the%20perfect%20dessert.%20Trust%20me%20when%20I%20say%20it%20was%20enjoyed%20by%20all,%20b'coz%20from%20the%20kids%20to%20all%20the%20calorie%20conscious%20adults%20(my%20friends%20:-P%20)%20ate%20up%20their%20whole%20glass%20full%20;-)%3C/p%3E%3Cp%3E(Pls%20pardon%20my%20out-of-focus%20pics,%20all%20my%20concentration%20was%20on%20how%20soon%20could%20I%20lick%20that%20glass%20clean%20;-)%20)%3C/p%3E%3Cp%3EA%20Falooda%20is%20a%20layered%20sweet%20drink%20or%20beverage.%20It%20uses%20ingredients%20like%20vermicelli,%20sago,%20jelly,%20basil%20seeds%20(sabja),%20fruits,%20nuts%20etc%20%20that%20are%20layered%20together%20and%20finally%20served%20with%20chilled%20and%20flavored%20milk%20or%20icecream.%20I've%20seen%20it%20usually%20served%20with%20both%20a%20spoon%20and%20a%20straw%20where%20you%20eat%20the%20various%20layers%20with%20a%20spoon%20and%20drink%20up%20the%20sweet%20milk%20or%20melted%20icecream%20with%20the%20straw%20:-)%20I%20just%20love%20this%20almost%20'trifle%20like'%20dessert%20and%20to%20give%20it%20a%20twist%20I%20made%20a%20smooth%20custard%20instead%20of%20flavored%20milk%20to%20blend%20with%20the%20layers.%3C/p%3E%3Cp%3EHere%20are%20the%20simple%20set%20of%20ingredients%20that%20make%20up%20this%20pretty%20dessert.%20I%20layered%20each%20of%20these%20ingredients%20and%20then%20finally%20poured%20the%20mango%20custard%20on%20top%20with%20a%20scoop%20of%20vanilla%20icecream.%20It%20was%20the%20perfect%20combination%20of%20flavors.%3C/p%3E%3Cp%3EI%20did%20not%20have%20nor%20could%20I%20find%20Basil%20(sabja)%20seeds%20at%20the%20store%20so%20I%20used%20Chia%20seeds%20instead.%20I'm%20not%20sure%20exactly%20how%20basil%20seeds%20would%20have%20tasted%20but%20chia%20seeds%20work%20just%20well%20and%20besides%20I've%20read%20of%20so%20many%20health%20benefits%20of%20chia%20seeds.%20I%20just%20added%20a%20tablespoon%20of%20the%20seeds%20and%20added%20enough%20water%20to%20immerse%20them.%20They%20bloomed%20beautifully%20and%20becomes%20almost%20jelly%20like%20and%20I%20must%20say%20was%20quite%20flavorless%20;-)%3C/p%3E%3Cp%3EYou%20can%20make%20jelly%20from%20mango%20pulp%20as%20well%20for%20an%20all-mango%20dessert%20but%20i%20wanted%20some%20pop-of%20color%20and%20decided%20to%20use%20a%20strawberry%20instant%20jello%20mix.%20It%20worked%20well%20and%20the%20extra%20jelly%20we%20just%20ate%20it%20up%20later%20on.%3C/p%3E%3Cp%3EI%20made%20two%20more%20glasses%20of%20Mango%20Falooda%20after%20dinner%20and%20refrigerated%20it%20for%20the%20next%20day%20(this%20was%20just%20for%20Manish%20&%20me%20:-P%20)%20Oh!%20by%20the%20way,%20I%20ate%20up%20half%20that%20glass%20in%20between%20taking%20pics,%20the%20icecream%20had%20melted,%20the%20layers%20blended%20with%20each%20other%20and%20it%20was%20icy%20cold%20and%20totally%20yumm...I%20couldn't%20resist!%20:-P%3C/p%3E%3Cp%3EMango%20Falooda%3C/p%3E%3Cp%3E(makes%206-8%20servings)%3C/p%3E%3Cp%3EYou'll%20Need%3C/p%3E%3Cp%3EVanilla%20Icecream%20-%20one%20scoop%20each%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Soak%20the%20Chia%20seeds%20in%20water%20enough%20to%20immerse%20it%20and%20as%20it%20thickens%20slightly%20add%20more%20water%20to%20loosen%20it.%20Refrigerate%20until%20needed.%3C/p%3E%3Cp%3E2.%20If%20making%20instant%20Strawberry%20jelly,%20follow%20the%20instructions%20from%20the%20pack%20and%20refrigerate%20to%20set%20for%20few%20hours.%20(I%20reduced%20the%20water%20by%20%C2%BD%20cup%20to%20get%20a%20thicker%20jelly)%3C/p%3E%3Cp%3E3.%20Make%20Falooda%20Sev/Vermicelli%20payasam%3C/p%3E%3Cp%3EHeat%20a%20pan%20and%20add%20falooda%20sev/roasted%20vermicelli%20with%202%20cups%20milk.%20When%20it%20starts%20to%20boil,%20add%20the%20cardamom%20powder%20and%20sugar%20and%20stir%20and%20continue%20to%20cook%20until%20the%20sev%20is%20soft%20and%20the%20payasam/kheer%20becomes%20thick.%20Add%20more%20sugar%20as%20desired.%20Refrigerate%20until%20chilled.%3C/p%3E%3Cp%3E4.%20Make%20Mango%20Custard%3C/p%3E%3Cp%3EMix%20the%20custard%20powder%20with%20some%20milk%20without%20any%20lumps%20and%20keep%20aside.%20Start%20to%20boil%202%20cups%20milk%20in%20a%20pan.%20When%20milk%20starts%20bubbling%20add%20the%20custard%20powder%20and%20sugar%20and%20mix%20well%20making%20sure%20no%20lumps%20form.%20Stir%20until%20it%20slightly%20thickens,%20turn%20off%20flame,%20add%20powdered%20cardamom%20powder.%20Once%20the%20custard%20cools,%20add%20the%20mango%20pulp%20and%20mix%20well.%20Refrigerate%20until%20needed.%3C/p%3E%3Cp%3EMake%20sure%20the%20custard%20is%20of%20pourable%20consistency%20and%20not%20thick%20like%20pudding.%20Add%20more%20sugar%20as%20desired.%3C/p%3E%3Cp%3EAssemble%3C/p%3E%3Cp%3EIn%20a%20tall%20glass%20add%201%20tsp%20each%20of%20vermicelli%20payasam,%20strawberry%20jelly,%20chia%20seeds%20and%20mango%20cubes.%20Add%20enough%20mango%20pulp%20to%20cover%20the%20fruit%20and%20then%20add%20a%20teaspoon%20of%20crushed%20almonds%20and%20%20pour%20enough%20Mango%20custard%20to%20fill.%20Top%20with%20a%20scoop%20of%20vanilla%20icecream%20and%20serve%20immediately!%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3E1.%20I%20used%20canned%20mango%20pulp,%20you%20can%20make%20it%20fresh%20mangoes%20as%20well.%3C/p%3E%3Cp%3E2.%20I%20flavored%20the%20vermicelli%20payasam%20and%20mango%20custard%20with%20cardamom,%20you%20can%20skip%20it%20if%20you%20do%20not%20like%20the%20flavor,%20though%20I%20don't%20see%20any%20reason%20why%20you%20won't%20:-)%3C/p%3E%3Cp%3EI%20tried%20a%20gif%20image%20just%20for%20fun%20to%20see%20the%20glass%20getting%20layered...next%20time%20i%20should%20remember%20to%20keep%20my%20camera%20still%20to%20get%20a%20better%20effect.%20What%20do%20you%20think?%20:-)%3C/p%3E%3Cp%3EDo%20try%20it%20out,%20you'll%20love%20it.%20My%20calorie%20conscious%20friends%20will%20agree%20too%20:-P%20hehe...%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
