%20Cooking%20canned%20beenie%20weenies%20on%20a%20grill%20because%20the%20electricity's%20gone%20out%20doesn't%20seem%20like%20good%20food%20blog%20material.%3C/p%3E%3Cp%3EBut%20leave%20it%20to%20%22The%20Boy.%22%20A%20couple%20of%20days%20ago,%20I%20asked%20The%20Boy%20what%20he%20had%20for%20lunch%20at%20school.%20He%20told%20me,%20%22Sausage,%20rice,%20and%20beans...and%20it%20was%20goooood.%22%20Then%20I%20grinned,%20remembering%20that%20it%20was%20Monday,%20so%20of%20course%20that's%20what%20he%20had.%20Those%20old%20Cajun%20cafeteria%20cooks%20don't%20mess%20with%20tradition.%20Sausage,%20rice,%20and%20beans:%20his%20way%20of%20saying%20red%20beans%20and%20rice,%20only%20he%20lists%20the%20ingredients%20in%20order%20of%20what%20matters%20most%20to%20him.%3C/p%3E%3Cp%3EI've%20already%20covered%20red%20beans%20and%20rice.%20But%20this%20conversation%20made%20me%20think%20that%20maybe%20I%20should%20share%20a%20dirty%20little%20secret%20of%20mine.%20If%20I%20were%20to%20make%20beans%20I%20confess%20that%20red%20beans%20and%20rice%20would%20not%20be%20my%20first%20choice.%20So...I%20said%20it%20and%20now%20it's%20out%20there%20for%20tens%20of%20people%20to%20read.%20I'll%20probably%20never%20be%20allowed%20back%20into%20New%20Orleans%20again.%20The%20ghost%20of%20Louis%20Armstrong%20will%20haunt%20me.%20(Armstrong,%20or%20Satchmo,%20loved%20red%20beans%20and%20rice%20so%20much%20that%20he%20signed%20his%20letters%20%22red%20beans%20and%20ricely%20yours.%22)%20I%20may%20even%20be%20kicked%20out%20of%20Louisiana.%20Hope%20you're%20happy%20now.%3C/p%3E%3Cp%3EWhile%20living%20in%20Texas%20for%20several%20years,%20I%20developed%20an%20obsession/passion%20for%20Mexican%20and%20Tex-Mex%20food.%20I%20found%20a%20great%20cookbook%20on%20the%20subject:%20The%20Border%20Cookbook%20by%20Cheryl%20and%20Bill%20Jamison.%20I%20haven't%20made%20every%20recipe%20in%20the%20book%20(it's%20huge),%20but%20I've%20made%20several.%20Not%20one%20has%20been%20a%20miss.%20One%20of%20our%20favorite%20recipes%20from%20The%20Border%20Cookbook%20is%20Frijoles%20de%20Olla,%20or%20Pot%20Beans.%3C/p%3E%3Cp%3EGaw!%20Don't%20get%20excited.%20The%20beans%20are%20in%20the%20pot,%20not%20the%20other%20way%20around.%3C/p%3E%3Cp%3EThese%20beans%20are%20actually%20better%20a%20day%20or%20two%20after%20making%20them.%20And%20they%20freeze%20well,%20so%20I%20make%20a%20big%20batch%20of%20them%20all%20at%20once.%20They%20can%20be%20eaten%20as%20is,%20with%20rice%20in%20burritos,%20or%20mashed%20and%20turned%20into%20refried%20beans.%20I've%20made%20this%20recipe%20for%20many%20years,%20so%20it's%20morphed%20over%20time%20as%20a%20result%20of%20experimentation,%20personal%20tastes,%20and%20ingredient%20availability.%20What%20I'm%20trying%20to%20say%20in%20all%20that%20official%20sounding%20language%20is:%20this%20ain't%20quite%20the%20book%20version.%3C/p%3E%3Cp%3EFrijoles%20de%20Olla%20(Pot%20Beans)%3C/p%3E%3Cp%3Eadapted%20from%20The%20Border%20Cookbook%20by%20Jamison%20&%20Jamison%3C/p%3E%3Cp%3EPick%20through%20the%20beans%20and%20rinse%20them%20carefully,%20looking%20for%20any%20gravel%20or%20grit.%20Rinse%20a%20second%20time.%3C/p%3E%3Cp%3EPlace%20beans%20in%20a%20stock%20pot%20or%20Dutch%20oven.%20Add%20chicken%20stock%20and%20then%20enough%20water%20to%20cover%20the%20beans.%20Add%20the%20remaining%20ingredients%20except%20for%20the%20salt.%20Bring%20the%20beans%20just%20to%20a%20boil%20over%20high%20heat.%20Reduce%20the%20heat%20to%20low%20and%20simmer%20the%20beans,%20uncovered.%20Plan%20on%20a%20total%20cooking%20time%20of%20about%202%20%C2%BD-3%20hours.%3C/p%3E%3Cp%3EAfter%201%20hour,%20stir%20the%20beans%20and%20check%20the%20water%20level.%20If%20there%20is%20not%20at%20least%201%20inch%20of%20water%20above%20the%20beans,%20add%20enough%20HOT%20water%20to%20bring%20it%20up%20to%20that%20level.%20Check%20the%20beans%20after%20another%2030%20minutes,%20repeating%20the%20process.%20Add%20the%20salt%20after%20the%20beans%20are%20well-softened%20and%20continue%20simmering.%20Check%20every%2020-30%20minutes,%20keeping%20the%20level%20of%20the%20water%20just%20above%20the%20beans.%20There%20should%20be%20extra%20liquid%20at%20the%20end%20of%20cooking,%20but%20the%20beans%20should%20not%20be%20watery.%3C/p%3E%3Cp%3EIf%20you%20wish,%20remove%20%C2%BD%20to%201%20cup%20of%20beans,%20mash%20them,%20and%20return%20to%20the%20pot%20for%20a%20thicker%20liquid.%20Serve%20warm.%20The%20beans%20keep%20for%20several%20days%20and%20are%20even%20better%20reheated.%20They%20also%20freeze%20well.%3C/p%3E%3Cp%3EThe%20mise%20en%20place.%20Looks%20like%20a%20lot%20going%20on,%20but%20this%20is%20one%20of%20those%20dump%20it%20all%20in%20type%20of%20things.%20I%20like%20to%20use%20homemade%20chicken%20stock%20(click%20link%20for%20how%20to%20make%20this),%20but%20canned%20can%20definitely%20be%20used.%20If%20you%20need%20these%20to%20be%20vegetarian,%20use%20vegetable%20broth%20or%20water.%3C/p%3E%3Cp%3ERinse%20beans%20and%20remove%20any%20foreign%20objects.%20There%20will%20most%20likely%20be%20foreign%20objects.%3C/p%3E%3Cp%3ESee?%20Throw%20everything%20in.%20Except%20the%20salt.%20Supposedly%20adding%20salt%20to%20uncooked%20beans%20makes%20the%20skins%20tough%20and%20takes%20them%20take%20longer%20to%20cook.%3C/p%3E%3Cp%3EBring%20everything%20just%20to%20a%20boil,%20then%20lower%20to%20a%20simmer.%20I%20like%20to%20skim%20all%20that%20foam%20off%20because%20it%20looks%20nasty.%3C/p%3E%3Cp%3ESimmer%20for%201%20hour%20then%20check%20water%20level.%20You'll%20want%20there%20to%20be%201%22%20of%20water%20over%20the%20beans.%20Add%20hot%20water%20to%20get%20that%20level.%20Adding%20cold%20water%20slows%20the%20cooking%20process.%20Continue%20cooking%20and%20check%20the%20water%20level%20every%20half%20hour.%20When%20the%20beans%20are%20softened,%20season%20with%20salt.%20Total%20cooking%20time%20should%20be%202%201/2-3%20hours.%20Rainy%20day%20project.%3C/p%3E%3Cp%3EHere%20they%20are,%20nice%20and%20tender%20and%20tasty.%20If%20you%20want%20them%20creamy,%20mash%20some%20against%20the%20side%20of%20the%20pot%20with%20the%20back%20of%20a%20spoon%20or%20remove%20to%20a%20bowl%20and%20mash%20with%20a%20potato%20masher.%20Serve%20as%20is%20with%20your%20favorite%20Mexican%20or%20Tex%20Mex%20dish%20(like%20my%20favorite,%20Chiles%20Rellenos),%20or%20add%20to%20burritos,%20or%20make%20refried%20beans.%20I'll%20save%20that%20for%20another%20day.%3C/p%3E){kind=link}
