%20sliced%20thin%20and%20tossed%20with%20a%20couple%20of%20teaspoons%20of%20ground%20cinnamon,%20a%20teaspoon%20of%20fresh%20nutmeg,%20a%20quarter%20cup%20of%20sugar,%20a%20tablespoon%20of%20flour%20to%20help%20absorb%20any%20excess%20fruit%20juices,%20and%20I%20saw%20this%20on%20a%20food%20show%20--%20a%20dash%20of%20Angosturra%20bitters.%20A%20pie%20shop%20in%20NYC%20was%20being%20profiled%20(sorry,%20I%20can't%20remember%20their%20name!!)%20and%20they%20mentioned%20their%20use%20of%20bitters%20in%20their%20pie%20filling,%20to%20balance%20out%20the%20sweetness%20and%20give%20it%20a%20nice%20balance.%20Brilliant!%20I%20had%20to%20try%20it.%20For%20this%20pie%20filling,%20I%20also%20folded%20a%20bourbon%20caramel%20sauce%20with%20the%20seasoned%20fruit%20--%20it%20added%20more%20volume%20and%20liquid%20to%20the%20mix,%20which%20I%20wasn't%20in%20love%20with,%20so%20I'd%20skip%20the%20caramel%20sauce%20in%20the%20filling%20or%20maybe%20drizzle%20the%20top%20with%20it.%20That%20part%20needs%20re-working,%20so%20I'm%20not%20listing%20details%20until%20I%20get%20something%20that's%20worth%20sharing,%20and%20it%20was%20likely%20just%20gilding%20the%20dessert-lily%20anyways,%20since%20I%20made%20ice%20cream%20to%20go%20with%20the%20pie.%3C/p%3E){kind=link}
