.%3C/p%3E%3Cp%3EI%20made%20it%20again%20yesterday%20for%20Easter%20at%20my%20mom's.%20We%20celebrate%20with%20a%20trditional%20Polish%20breakfast%20-%20kielbasa,%20eggs,%20and%20babka.%20Then%20dinner%20is%20baked%20ham,%20au%20gratin%20potatoes%20and%20more,%20so%20a%20light%20appetizer%20in%20the%20afternoon%20is%20the%20perfect%20way%20to%20keep%20hunger%20at%20bay%20without%20adding%20to%20the%20calorie-fest!%3C/p%3E%3Cp%3EThis%20recipe%20is%20easily%20adaptable%20too.%20Add%20some%20cilantro%20or%20a%20bit%20of%20minced%20red%20pepper,%20or%20even%20some%20mango.%20It's%20also%20good%20served%20as%20a%20first%20course%20salad%20or%20for%20lunch%20(if%20there%20are%20leftovers!)%20It%20tastes%20best%20made%20a%20day%20ahead%20and%20the%20wonton%20crisps%20can%20be%20made%20a%20day%20or%20two%20ahead%20and%20stored%20in%20an%20airtight%20bag%20or%20container.%20If%20you%20don't%20want%20to%20go%20to%20the%20trouble%20of%20makign%20them,%20use%20white%20corn%20tortilla%20chips%20or%20cucumber%20cups.%20Doesn't%20get%20much%20easier!%3C/p%3E%3Cp%3ECut%20each%20wonton%20wrapper%20in%20half%20on%20a%20diagonal.%20Heat%20about%20an%20inch%20to%20an%20inach%20and%20a%20half%20of%20canola%20oil%20in%20a%20deep-fryer%20or%20heavy%20pan%20to%20360F.%20Drop%20the%20wonton%20wrappers%20into%20the%20hot%20oil,%20a%20few%20at%20a%20time%20and%20fry%20for%20a%20few%20seconds%20on%20each%20side,%20until%20golden.%20Drain%20on%20paper%20towels.%20Sprinkle%20with%20a%20little%20sea%20salt%20while%20still%20warm.%20These%20can%20be%20made%20a%20couple%20days%20ahead%20-%20be%20sure%20to%20store%20them%20in%20an%20airtight%20bag%20or%20container.%3C/p%3E%3Cp%3EPick%20over%20the%20crab%20meat%20for%20any%20shells.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20whisk%20the%20lime%20zest,%20juice,%20salt%20and%20pepper.%20Slowly%20whisk%20in%20the%20olive%20oil.%3C/p%3E%3Cp%3EAdd%20the%20crab%20meat,%20scallion%20and%20celery%20and%20stir%20to%20combine.%20Refrigerate%20at%20least%20a%20few%20hours%20or%20overnight.%3C/p%3E%3Cp%3ETo%20serve,%20place%20the%20crab%20in%20a%20bowl%20on%20a%20platter%20with%20a%20spoon%20and%20surround%20with%20the%20endive%20leaves%20and%20wonton%20crisps.%3C/p%3E){kind=link}
