Ingredientes

  • 140g desiccated coconut (unsweetened)
  • 140g powdered (confectioner’s) sugar
  • 100g egg white (from approx. 3 eggs), room temperature, divided 50/50
  • 100g granulated (white) sugar
  • 40g water
  • The filling
  • 1 x 425g (15 oz) can pineapple in juice (270g or 9 1/2 oz drained, according to the can)
  • 2 tsp rum (I used Bacardi Black because that’s what I had)
  • 1 tbsp corn starch
  • 100g (1/2 cup) granulated (white) sugar
  • 4 large egg yolks, lightly beaten
  • 30g butter (2 tbsp), diced, room temperature
