.%3C/p%3E%3Cp%3EThe%20night%20before%20I%20had%20prepared%20chicken%20fried%20pork%20steaks%20for%20dinner,%20and%20as%20we%20almost%20always%20do,%20we%20had%20leftovers%20-%20two%20pork%20steaks.%20I%20hate%20seeing%20food%20go%20to%20waste,%20so%20I%20decided%20to%20make%20the%20Banh%20Mi%20sandwiches%20using%20the%20leftover%20fried%20pork%20steaks.%20I%20can't%20even%20describe%20how%20delicious%20they%20were.%20The%20slaw%20is%20crunchy%20because%20the%20carrots%20and%20radish%20are%20julienned%20instead%20of%20grated,%20and%20slightly%20sweet%20from%20the%20pickling%20step,%20with%20a%20little%20heat%20from%20the%20jalapenos%20and%20sriracha.%20What%20a%20wonderful%20combination.%3C/p%3E%3Cp%3EA%20week%20or%20so%20later,%20when%20I%20decided%20to%20make%20the%20Pork%20Banh%20Mi%20Sandwich,%20I%20happened%20to%20be%20in%20Kroger%20and%20lo%20and%20behold,%20they%20had%20three%20large%20daikon%20radishes!%20Yippee!%20I%20grabbed%20one%20daikon%20and%20a%20bag%20of%20julienned%20carrots,%20paid%20for%20my%20groceries%20and%20headed%20for%20home%20to%20make%20the%20slaw.%3C/p%3E%3Cp%3EThis%20time%20I%20did%20not%20grate%20the%20radish.%20I%20wanted%20the%20daikon%20to%20be%20the%20same%20texture%20as%20the%20carrots.%20I%20have%20a%20mandoline%20(this%20one)%20my%20son%20gave%20me%20over%20six%20years%20ago.%20I%20swear%20I%20use%20it%20almost%20every%20single%20day.%20Anyway,%20the%20daikon%20is%20much%20larger%20and%20easier%20to%20use%20on%20my%20mandoline,%20which%20has%20a%20julienne%20blade.%20I%20cut%20up%20two%20cups%20in%20no%20time.%3C/p%3E%3Cp%3EThis...%3C/p%3E%3Cp%3EBecame%20this...%3C/p%3E%3Cp%3EWe've%20used%20the%20Vietnamese%20Slaw%20on%20the%20chicken%20fried%20pork%20burgers%20and%20as%20a%20side%20with%20Bang%20Bang%20Shrimp.%20But%20on%20top%20of%20those%20juicy,%20flavorful,%20herby,%20slightly%20spicy%20pork%20burgers....oh%20my!%20I%20served%20the%20burgers%20with%20oven%20baked%20sweet%20potato%20fries,%20which%20was%20the%20perfect%20compliment%20to%20the%20spiciness%20of%20the%20burger.%3C/p%3E%3Cp%3EPork%20Banh%20Mi%20Burgers%20with%20Vietnamese%20Slaw%3C/p%3E%3Cp%3EAdapted%20from%20Chaos%20in%20the%20Kitchen%3C/p%3E%3Cp%3EFor%20the%20Burgers:%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20bowl,%20combine%20the%20carrots,%20daikon%20and%20jalapeno.%20Pour%20the%20vinegar%20into%20a%20measuring%20cup,%20add%20the%20sugar%20and%20stir%20until%20sugar%20is%20mostly%20dissolved.%20Pour%20the%20mixture%20over%20the%20carrot/daikon%20mixture.%20Stir%20well%20to%20combine.%20Set%20aside%20for%20about%20an%20hour,%20stirring%20occasionally%20so%20that%20all%20of%20the%20vegetable%20mixture%20is%20submerged%20in%20the%20vinegar%20mixture%20from%20some%20time.%3C/p%3E%3Cp%3EAfter%20an%20hour,%20drain%20the%20liquid%20from%20the%20carrot%20mixture%20and%20discard%20the%20marinade.%3C/p%3E%3Cp%3EAdd%20the%20green%20onions%20and%20cilantro%20to%20the%20carrot%20mixture%20and%20mix%20to%20combine.%20In%20a%20small%20bowl,%20combine%20the%20mayonnaise%20and%20sriracha%20and%20stir%20until%20combined.%20Add%20to%20carrot%20mixture%20and%20mix%20well.%20Taste%20and%20correct%20seasoning%20if%20necessary.%3C/p%3E%3Cp%3EChill%20until%20ready%20to%20serve.%3C/p%3E){kind=link}
