%20that%20I%20sliced%20an%20inch%20or%20a%20bit%20under%20thick,%20apple%20chutney%20that%20I%20had%20made%20but%20forgotten%20to%20put%20out%20on%20New%20Year%E2%80%99s%20Day,%20chopped%20cabbage%20that%20I%20had%20forgotten%20to%20add%20to%20the%20sweet%20and%20sour%20beef%20soup%20I%20made%20for%20and%20served%20on%20New%20Year%E2%80%99s%20Day,%20and%20two%20sweet%20potatoes%20and%20a%20shallot%20that%20I%20had%20on%20hand.%3C/p%3E%3Cp%3EThe%20major%20ingredients%3C/p%3E%3Cp%3EHere%20is%20the%20link%20to%20original%20recipe%20from%20which%20I%20was%20working:%3C/p%3E%3Cp%3EPork%20Chop%20Casserole%20Recipe%20with%20Sweet%20Potatoes%3C/p%3E%3Cp%3EI%20also%20did%20everything%20in%20an%20ovenproof%20skillet.%20%20Note%20to%20self:%20Do%20Not%20forget%20to%20use%20a%20pot%20holder%20when%20taking%20the%20skillet%20out%20of%20the%20oven%E2%80%A6)%3C/p%3E%3Cp%3EAnyway,%20I%20started%20by%20lightly%20browning%20the%20pork%20in%20a%20bit%20of%20olive%20oil%20to%20help%20seal%20in%20moisture%20in%20the%20pork%20and%20to%20give%20a%20nice%20flavor%20base%20for%20the%20rest%20of%20the%20ingredients.%3C/p%3E%3Cp%3EIn%20the%20middle%20of%20browning%20the%20pork%3C/p%3E%3Cp%3EAfter%20removing%20the%20pork%20and%20setting%20it%20aside,%20I%20added%20a%20bit%20more%20olive%20oil%20and%20lightly%20sauteed%20thinly%20sliced%20shallot%20and%20a%20few%20stems%20of%20fresh%20thyme%20until%20the%20shallot%20was%20soft%20and%20the%20thyme%20quite%20fragrant.%3C/p%3E%3Cp%3Egetting%20stated%20with%20the%20shallot%20and%20fresh%20thyme%3C/p%3E%3Cp%3EI%20then%20removed%20the%20shallot%20and%20thyme,%20added%20yet%20a%20bit%20more%20olive%20oil,%20and%20put%20the%20onion%20(one%20medium,%20sliced)%20in%20the%20pan.%3C/p%3E%3Cp%3ENext,%20the%20onions%3C/p%3E%3Cp%3EOnce%20the%20onion%20was%20starting%20to%20get%20soft,%20I%20added%20about%203%20cups%20of%20chopped%20savoy%20cabbage.%20(I%20am%20sure%20any%20type%20of%20cabbage%20would%20do%20%E2%80%93%20in%20fact,%20the%20red%20kind%20would%20make%20for%20a%20REALLY%20colorful%20dish!)%3C/p%3E%3Cp%3EThen,%20add%20the%20cabbage%20to%20the%20onions%3C/p%3E%3Cp%3EOnce%20the%20cabbage%20cooked%20down%20a%20bit%20(after%20maybe%205%20minutes%20or%20so),%20I%20stirred%20in%20the%20sliced%20sweet%20potato%20and%20the%20pork,%20including%20the%20juices,%20and%20then%20arranged%20the%20shallot%20and%20thyme%20on%20top.%20Finally,%20I%20put%20the%20lid%20on%20the%20pan,%20and%20into%20the%20oven%20preheated%20to%20350%20degrees%20it%20went.%3C/p%3E%3Cp%3EReady%20for%20the%20oven!%3C/p%3E%3Cp%3Esensual%20close-up%20shot%3C/p%3E%3Cp%3EAfter%2050%20minutes,%20the%20potatoes%20were%20just%20tender%20and%20the%20meat%20was%20still%20moist,%20so%20I%20put%20the%20pan%20with%20the%20cover%20on%20it%20back%20in%20the%20oven%20on%20the%20%E2%80%9Ckeep%20warm%E2%80%9D%20setting%20(170%20dgrees)%20since%20we%20were%20not%20quite%20ready%20to%20eat.%20If%20I%20had%20wanted%20to%20serve%20sooner,%20I%20probably%20would%20have%20put%20it%20back%20in%20at%20the%20350%20degrees%20for%20another%205-10%20minutes.%3C/p%3E%3Cp%3EFinished!%3C/p%3E%3Cp%3EIf%20I%20had%20had%20more%20sweet%20potatoes%20on%20hand,%20or%20a%20few%20white%20potatoes%20to%20add%20to%20the%20mix,%20this%20could%20very%20well%20have%20been%20a%20one-dish%20meal.%20%20Or,%20I%20could%20have%20added%20some%20extra%20liquid%20and%20rice,%20or%20cooked%20rice%20separately%20and%20serve%20the%20pork%20and%20veggies%20over%20it.%20But,%20since%20it%20was%20a%20cold%20and%20stormy%20night,%20I%20thought%20soba%20noodles,%20made%20from%20the%20hearty%20buckwheat%20(often%20cited%20as%20good%20food%20for%20cold%20weather)%20would%20be%20the%20perfect%20match.%20%20And,%20it%20was!%3C/p%3E%3Cp%3Eon%20a%20bed%20of%20soba%20noodles%3C/p%3E%3Cp%3EThis%20turned%20out%20to%20be%20quite%20tasty.%20%20Upon%20reading%20the%20reviews%20of%20the%20original%20recipe,%20I%20think%20that%20it%20would%20fine%20as%20written,%20but%20both%20the%20original%20and%20my%20version%20would%20benefit%20from%20the%20sauce%20being%20thickened%20a%20bit,%20perhaps%20with%20cornstarch,%20and,%20in%20my%20version,%20I%20think%20a%20little%20more%20sweetness%20to%20counter%20the%20tart%20chutney%20would%20be%20nice.%20%20But%20overall,%20I%20think%20the%20dish%20works%20well%20as%20written,%20as%20adapted%20by%20me,%20and%20as%20a%20base%20for%20further%20adaptations.%20%20One%20note%20about%20the%20soba%20noodles:%20%20They%20do%20not%20expand%20as%20much%20as%20regular%20pasta,%20so%20you%20may%20not%20have%20as%20much%20leftover%20as%20you%20would%20have%20thought.%3C/p%3E%3Cp%3Eleftovers!%3C/p%3E%3Cp%3EIf%20you%20don%E2%80%99t%20care%20to%20eat%20meat,%20this%20recipe%20can%20easily%20be%20adapted%20to%20suit%20a%20vegetarian%20diet.%20%20If%20you%20want%20a%20concentrated%20protein%20source%20to%20serve%20as%20does%20the%20pork,%20then%20I%20%20think%20tempeh%20would%20work%20wonderfully%20with%20this%20recipe.%20Tofu%20and%20seitan%20may%20work,%20also,%20albeit%20the%20textures%20of%20tofu%20and%20the%20usual%20tamari-based%20flavor%20of%20seitan%20would%20give%20a%20%20different%20slant.%20This%20recipe%20could%20also%20inspire%20the%20creation%20of%20a%20rice,%20sweet%20potato,%20and%20cabbage%20(or%20other%20vegetable)%20casserole.%20Or,%20add%20edamame%20to%20replace%20the%20pork%20and%20still%20serve%20over%20the%20soba.%3C/p%3E%3Cp%3ESo,%20that%E2%80%99s%20it%20for%20now.%20%20I%20really%20need%20to%20get%20back%20to%20blogging%20here%20on%20a%20more%20regular%20basis.%20%20I%20have%20drafts%20and%20photos%20of%20various%20dishes%20and%20meals%20that%20I%20hope%20to%20document%20on%20this%20blog%20one%20of%20these%20days,%20but%20one%20the%20one%20ingredient%20I%20seem%20to%20always%20be%20low%20on%20is%20time,%20something%20for%20which%20thyme%20is%20no%20substitute%E2%80%A6%20%20%3Cgrin%3E%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
