%20love%20it%20as%20well.%20It%E2%80%99s%20where%20they%20spend%20many%20a%20Saturday,%20working%20on%20projects%20of%20various%20sorts.%20The%20other%20evening%20as%20we%20were%20getting%20ready%20to%20start%20dinner,%20Levi%20made%20his%20usual%20%E2%80%9Cuh?%20uh?%E2%80%9D%20sound%20while%20pointing%20emphatically%20towards%20the%20garage.%20There%E2%80%99s%20no%20ignoring%20that%20request.%20Once%20inside,%20we%20turned%20our%20backs%20for%2020%20seconds%20while%20we%20opened%20the%20garage%20door%20and%20got%20out%20the%20BBQ%20in%20anticipation%20of%20grilling%20some%20pork%20tenderloin,%20and%20he%20had%20climbed%20about%206%20rungs%20of%20the%20extension%20ladder%20that%E2%80%99s%20propped%20up%20agained%20the%20wall.%20Parenting%20fail.%20When%20we%20got%20him%20safely%20on%20the%20ground,%20%20he%20pointed%20to%20the%20BBQ%20and%20blew%20three%20times%20(the%20indication%20of%20it%20being%20hot).%20%E2%80%9CYou%E2%80%99re%20right,%E2%80%9D%20I%20say,%20%E2%80%9CIt%E2%80%99s%20not%20hot%20yet,%20but%20it%20will%20be%20soon.%20We%E2%80%99re%20going%20to%20grill%20some%20pork%20tenderloin%20tonight!%20Are%20you%20hungry?%E2%80%9D%20(Oh,%20and%20by%20the%20way,%20never%20do%20that%20again.%20You%20scared%20the%20sh!t%20out%20of%20me).%3C/p%3E%3Cp%3EA%20jar%20of%20apricot%20jam%20in%20the%20pantry%20inspired%20this%20pork%20tenderloin,%20which%20came%20from%20El%20Salchichero,%20our%20community%20butcher.%20We%20decided%20to%20make%20a%20sweet%20and%20spicy%20glaze%20by%20combining%20the%20jam%20with%20some%20minced%20rocoto%20pepper%20from%20our%20backyard.%20These%20peppers%20are%20spicy%20%E2%80%93%20almost%20like%20a%20habanero%20%E2%80%93%20so%20we%20used%20them%20sparingly.%20Some%20fresh%20Meyer%20lemon%20juice%20added%20a%20little%20acidity%20to%20balance%20things%20out.%3C/p%3E%3Cp%3EWhen%20the%20coals%20were%20hot%20and%20the%20tenderloin%20had%20been%20marinating%20in%20a%20little%20olive%20oil,%20rosemary,%20salt%20and%20pepper,%20I%20asked%20Levi%20to%20get%20the%20%20BBQ%20tongs%20and%20bring%20them%20to%20daddy.%20Not%20surprisingly,%20he%20knows%20where%20they%E2%80%99re%20located%20and%20is%20always%20eager%20to%20help%20if%20it%20means%20retrieving%20something%20from%20the%20garage.%20After%20grilling,%20we%20allowed%20the%20pork%20tenderloin%20to%20rest%20so%20that%20it%20would%20be%20nice%20and%20moist%20when%20we%20sliced%20into%20it.%20The%20glaze%20caramelized%20nicely%20on%20the%20outside%20and%20imparted%20a%20subtle%20sweet%20and%20spicy%20flavor.%20Not%20bad%20for%20a%20quick%20weeknight%20meal.%20Levi%20enjoyed%20it%20too.%20Climbing%20an%20extension%20ladder%20makes%20for%20a%20good%20appetite.%3C/p%3E%3Cp%3EPork%20Tenderloin%20with%20Spicy%20Apricot%20Glaze%3C/p%3E%3Cp%3EPlace%20the%20tenderloin%20in%20a%20baking%20dish%20(or%20on%20a%20big%20plate)%20and%20drizzle%20a%20little%20olive%20oil%20over%20it.%20Season%20with%20salt,%20pepper,%20and%20rosemary.%20Using%20your%20hands,%20rub%20the%20oil%20and%20seasonings%20all%20over%20the%20tenderloin.%20Cover%20and%20refrigerate.%3C/p%3E%3Cp%3EMeanwhile,%20in%20a%20small%20bowl,%20combine%20the%20apricot%20jam%20with%20the%20minced%20hot%20pepper,%20lemon%20juice,%20and%20some%20salt%20&%20pepper.%20Mix%20well.%20Taste%20and%20add%20more%20ingredients%20as%20necessary%20to%20balance%20the%20flavors.%20I%20ended%20up%20adding%20a%20little%20more%20lemon%20juice%20and%20more%20peppers%20after%20tasting.%3C/p%3E%3Cp%3ETake%20the%20tenderloin%20out%20of%20the%20refrigerator%20as%20you%20prepare%20a%20charcoal%20grill.%20When%20coals%20are%20ready,%20brush%20the%20apricot%20glaze%20on%20the%20tenderloin%20so%20that%20it%20covers%20all%20surfaces.%20Place%20on%20the%20grill,%20cover,%20and%20cook%20for%20about%204%20minutes.%20Brush%20more%20glaze%20on%20the%20top,%20flip%20the%20tenderloin,%20and%20glaze%20the%20other%20side%20as%20well.%20Cover%20and%20cook%20for%20another%203-4%20minutes.%20Continue%20glazing%20and%20flipping%20every%20few%20minutes,%20until%20the%20inside%20of%20the%20tenderloin%20reaches%20an%20internal%20temperature%20of%20160%20degrees%20and%20the%20outside%20is%20nicely%20caramelized.%20Transfer%20to%20a%20cutting%20board%20and%20allow%20to%20rest%20for%20several%20minutes.%20Slice%20and%20serve%20with%20your%20starch%20and%20vegetable%20of%20choice.%20We%20had%20couscous,%20grilled%20summer%20squash,%20and%20a%20salad.%3C/p%3E){kind=link}
