  1. Peel and cook potato in boiling salted water. Mash well. Dice onions and bacon.
  2. Mix egg, lowfat milk, cheese and herbs into mashed potato. Saute/fry bacon and onion till lightly browned.
  3. Sift flour, pepper and mustard into a bowl, rub in butter, add in bacon and onion. Stir in potato mix. Turn onto lightly floured surface, knead lightly till smooth. Press out to about 3cm thickness with hands and place in a greased heavy based pan.
  4. Cover with foil and cook on BBQ top or possibly in coals for about 30 min or possibly till damper is cooked through. Turn damper several times during cooking.
  5. Serve warm with butter.
