%3C/p%3E%3Cp%3EThere%20was%20a%20time%20when%20the%20aroma%20of%20a%20pound%20cake,%20baking%20in%20my%20oven%20on%20the%204th%20of%20July%20would%20have%20made%20me%20sad,%20and%20very%20homesick.%20Yesterday,%20I%20cherished%20the%20memories.%20I%20had%20been%20thinking%20about%20pound%20cake%20a%20while,%20longing%20for%20it,%20really.%20Then%20the%20time%20came%20to%20make%20one.%3C/p%3E%3Cp%3EI%20turned%20to%20the%20first%20cookbook%20I%20ever%20had,%20a%20church%20one,%20with%20local%20ladies'%20recipes,%20given%20to%20me%20by%20the%20minister.%20There%20are%209%20pound%20cake%20recipes%20in%20it,%20including%20sour%20cream%20pound%20cake,%20lemon%20pound%20cake,%20chocolate%20pound%20cake,%20marble%20pound%20cake,%20brown%20sugar%20pound%20cake,%20whipped%20cream%20pound%20cake,%20along%20with%20several%20icings,%20frostings,%20and%20glazes.%20I%20chose%20a%20buttermilk%20pound%20cake%20bacause%20I%20had%20all%20the%20ingredients%20on%20hand.%20Technically,%20I%20should%20call%20this%20a%20%22Half%20Pound%20Cake%22.%3C/p%3E%3Cp%3EGenerously%20butter%20and%20flour%20a%20tube%20pan,%20shaking%20out%20excess%20flour.%20Preheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3ECream%20together,%20the%20butter%20and%20sugar%20until%20pale,%20light,%20and%20fluffy.%20Mix%20in%20the%20eggs,%20one%20at%20a%20time.%3C/p%3E%3Cp%3EMeasure%20buttermilk%20and%20pour%20into%20a%20small%20bowl,%20then%20add%20the%20baking%20soda.%20It%20will%20become%20active%20and%20expand%20quicky,%20so%20make%20sure%20you%20have%20room.%20Think%20about%20those%20elementary%20school%20volcano%20experiments.%3C/p%3E%3Cp%3EAdd%20the%20salt%20to%20the%20sifted%20flour,%20then%20begin%20combining%20the%20buttermilk%20and%20the%20flour%20into%20the%20butter%20mixture,%20one%20third%20at%20a%20time,%20mixing%20well%20after%20each%20addition.%20When%20all%20is%20combined%20and%20mixed%20well,%20stir%20in%20the%20vanilla.%3C/p%3E%3Cp%3EMy%20grandmother%20did%20not%20have%20a%20KitchenAid%20mixer,%20and%20made%20the%20most%20beautiful%20cakes%20using%20only%20this%20hand%20beater.%20(Stamped%20onto%20the%20wheel%20of%20this%20beater%20are%20the%20words,%20%22HIGH%20SPEED%20SUPER%20CENTER%20DRIVE%20BEATER.%20Ekco%20USA.%22%3C/p%3E%3Cp%3EThank%20goodness%20I%20have%20an%20electric%20hand%20mixer%20to%20help%20with%20my%20work.%3C/p%3E%3Cp%3EPour%20batter%20into%20the%20prepared%20pan%20and%20put%20into%20preheated%20oven.%20Bake%20for%20about%2055-65%20minutes%20until%20a%20toothpick%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20in%20the%20pan%20for%2015%20minutes.%3C/p%3E%3Cp%3EPound%20cake%20is%20a%20good%20dessert%20for%20summer%20celebrations%20and%20family%20reunions,%20when%20many%20dishes%20are%20being%20served.%20It%20is%20delicious%20served%20with%20fresh%20summer%20fruit%20and%20homemade%20ice%20cream.%3C/p%3E%3Cp%3EI%20am%20sharing%20this%20recipe%20with%20Cookbook%20Sunday,%20at%20Melynda's%20blog,%20Mom's%20Sunday%20Cafe.%3C/p%3E){kind=link}
