  1. Slice the Salmon into 8 two ounce slices
  2. place in plastic wrap and pound lightly
  3. In a skillet heat peanut oil,add garlic and eggplant pieces for about 5 minutes or until browned,remove eggplant to a mixing bowl
  4. Add the scallops,onions,ginger,sesame oil,salt and pepper
  5. Stuff the Salmon by placing a tbls or so of the mixture on each slice
  6. Fold the Salmon around the filling and roll each up with plastic wrap
  7. Twist the ends of the wrap
  8. Poach the Salmon balls in simmering water five to eight minutes
  9. Remove the Salmon from the plastic and place one ball on each plate surround with a ring of Jasmine rice,and garnish with blanched snow peas and carrots.
  10. In a small bowl mix peanut oil,soy sauce and szechwan oil and sprinkle over the salmon..for dessert some freshly sliced pineapple ,All healthy and fresh and so delicious .Try it this weekend and share with someone you love
