%20as%20well%20as%20a%20serving%20of%20something%20Szechuan.%20The%20way%20the%20sticky%20sweet%20red%20sauce%20tasted%20to%20so%20good%20after%20a%20fiery%20taste%20of%20a%20spicy%20stir%20fry%20was%20delectable.%20%20Instead%20of%20making%20two%20separate%20meals%20in%20order%20to%20satisfy%20my%20craving%20for%20something%20sweet,%20sour,%20salty%20and%20spicy,%20I%20just%20made%20a%20couple%20of%20additions%20to%20the%20%22standard%22%20sweet%20and%20sour%20sauce%20and%20had%20it%20all%20in%20one%20dish.%3C/p%3E%3Cp%3EI%20took%20a%20small%20piece%20of%20pork%20(I%20had%20a%20pork%20rib%20eye%20roast%20in%20the%20freezer%20but%20pork%20butt%20or%20tenderloin%20would%20work%20too)%20and%20cut%20it%20into%201%20inch%20x%201%20inch%20cubes.%20%20In%20a%20bowl%20I%20added%20the%20pork%20cubes,%20a%20minced%20clove%20of%20garlic,%20a%20teaspoon%20of%20fresh%20ginger,%20about%202%20tablespoon%20of%20soy%20sauce%20and%20an%20equal%20amount%20of%20cornstarch.%20%20After%20mixing%20it%20all%20together,%20I%20let%20it%20marinate%20in%20the%20refrigerator%20for%20a%20few%20hours.%3C/p%3E%3Cp%3EMeanwhile,%20there%20was%20plenty%20of%20time%20to%20make%20the%20sauce%20and%20prep%20the%20vegetables.%20%20I%20diced%20green%20pepper%20and%20onion%20and%20set%20it%20aside.%20%20While%20fresh%20pineapple%20would%20certainly%20be%20ideal,%20I%20already%20had%20a%20can%20of%20pineapple%20in%20juice%20in%20the%20pantry%20so%20that's%20what%20I%20used.%20%20Drain%20the%20juice%20from%20the%20pineapple%20but%20be%20sure%20to%20reserve%20it%20for%20use%20in%20the%20sauce%20and%20set%20the%20pineapple%20with%20the%20onion%20and%20green%20pepper%20for%20later%20use.%3C/p%3E%3Cp%3ETo%20make%20this%20sauce%20for%20my%20sweet%20and%20sour,%20salty%20and%20spicy%20pork,%20I%20started%20with%20the%20usual%20ingredients.%20%20In%20a%20mixing%20bowl%20combine%20about%201/2%20cup%20ketchup,%20the%20reserved%20juice%20from%20the%20pineapple,%201%20tablespoon%20sugar,%20and%201/4%20cup%20of%20rice%20wine%20vinegar.%20%20Give%20a%20taste%20and%20make%20sure%20it%20has%20a%20nice%20balance%20of%20tanginess%20and%20sweetness%20and%20adjust%20as%20necessary%20(I%20like%20things%20a%20little%20less%20sweet,%20so%20you%20may%20want%20to%20add%20more%20sugar).%20%20For%20a%20bit%20of%20saltiness,%20I%20added%20a%20few%20tablespoons%20of%20soy%20sauce%20and%20spoonful%20or%20two%20of%20Asian%20chili%20paste%20for%20a%20good%20kick.%20This%20sauce%20is%20very%20adaptable%20and%20is%20easily%20adjusted%20to%20meet%20your%20tastes%20so%20feel%20free%20to%20make%20it%20more%20or%20less%20spicy%20or%20leave%20out%20the%20heat%20altogether%20and%20it%20will%20be%20an%20outstanding%20sweet%20and%20sour%20as%20is.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20heat%20about%20an%20inch%20of%20canola%20oil.%20%20Remove%20the%20pork%20cubes%20from%20the%20refrigerator%20and%20dredge%20each%20one%20through%20some%20flour,%20knocking%20off%20the%20excess.%20%20When%20oil%20is%20hot,%20add%20the%20pork%20cubes%20and%20fry%20each%20until%20golden%20brown%20and%20crisp.%20%20Remove%20from%20skillet%20to%20a%20paper%20towel%20lined%20plate%20and%20season%20with%20a%20little%20salt.%3C/p%3E%3Cp%3EIn%20another%20large%20skillet,%20heat%20a%20tablespoon%20of%20oil%20and%20add%20the%20green%20peppers%20and%20onions.%20%20Cook%20for%20a%20few%20minutes%20to%20soften%20and%20then%20add%20the%20fried%20pork%20cubes%20to%20the%20pan.%20%20Stir%20to%20combine.%20%20Add%20the%20pineapple%20and%20the%20sauce%20and%20stir%20well.%20%20Let%20the%20sauce,%20the%20pork%20and%20vegetables%20simmer%20together%20for%20a%20few%20minutes.%20%20If%20the%20sauce%20is%20too%20runny%20add%20about%201%20tablespoon%20of%20cornstarch%20mixed%20with%20a%20couple%20of%20tablespoons%20of%20water.%20%20When%20the%20sauce%20begins%20to%20bubble,%20it%20will%20thicken%20perfectly.%20%20Serve%20over%20fluffy%20white%20rice.%3C/p%3E){kind=link}
