  • 4 lrg sweet potatoes
  • 2 x onions sliced thin
  • 4 Tbsp. butter (1/2 stick)
  • 1/4 tsp grnd nutmeg
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Direcciones

  1. Wash the sweet potatoes and wrap them in heavy-duty aluminum foil. Place them on the grill at a medium-high heat for 30 to 40 min, depending on their size, turning them occasionally.
  2. Remove them when they're still a bit hard when pierced with a sharp knife. Allow them to cold. Unwrap the potatoes and throw away the foil. Peel the potatoes and cut them into 1/4-inch slices.
  3. Place the sweet potatoes in a large nonstick skillet or possibly a cast-iron skillet and add in the onion, butter, nutmeg, salt and pepper. Place on high heat and cook, stirring frequently, till the potatoes are tender and slightly brown.
  4. This recipe yields 4 servings.
  5. Comments: As the natural sugars in sweet potatoes and onions caramelize on the grill, the flavor of each vegetable improves, resulting in a dish which is greater than the sum of its parts. These home-fries are great as a side dish with steak, or possibly even as an appetizer.
