%20and%20decided%20to%20send%204%20plain%20and%208%20filled.%20Some%20with%20white%20chocolate,%20some%20with%20milk%20truffle%20and%20some%20with%20chocolate%20mint.%20This%20meant%20that%20I%20needed%20a%20total%20of%2060%20cookies.%20Busy%20night%20was%20ahead%20of%20me.%3C/p%3E%3Cp%3EThe%20house%20was%20quiet%20and%20I%20started%20chopping%20and%20mixing%20and%20baking.%20The%20smells%20these%20cookies%20spread%20are%20wonderful,%20and%20I%20thought%20that%20everyone%20probably%20had%20some%20great%20dreams%E2%80%A6%3C/p%3E%3Cp%3EI%20made%20a%20double%20batch%20of%20the%20cookie%20dough%20and%20started.%3C/p%3E%3Cp%3EThe%20recipe%20for%20these%20truly%20wonderful%20cookies%20is:%3C/p%3E%3Cp%3E2.5%20cups%20Almonds%20(or%20other%20nuts%20you%20like%20%E2%80%93%20Hazelnuts%20is%20wonderful%20as%20well).%3C/p%3E%3Cp%3EHow%20to%20prepare%20the%20dough:%3C/p%3E%3Cp%3EFirst%20turn%20on%20the%20oven%20to%20190C/375F.%3C/p%3E%3Cp%3EI%20like%20to%20lightly%20roast%20the%20almonds%20(or%20hazelnuts)%20on%20a%20dry%20pan%20before%20I%20grind%20them.%20It%20adds%20a%20depth%20of%20flavor%20to%20the%20cookies.%20Then%20you%20need%20to%20grind%20the%20almonds%20to%20a%20fine%20texture.%3C/p%3E%3Cp%3EIn%20a%20saucepan%20combine%20sugar,%20butter,%20honey%20and%20water%20and%20bring%20to%20a%20boil%20over%20medium%20heat.%20Stir%20continuously.%20Add%20the%20flour,%20nuts%20and%20cinnamon%20and%20stir%20well%20until%20you%20get%20a%20thick%20paste.%20To%20get%20a%20caramel%20consistency,%20you%20need%20to%20let%20it%20all%20boil%20for%20more%20than%2060%20seconds%20while%20constantly%20stirring.%3C/p%3E%3Cp%3ETurn%20off%20the%20heat%20and%20let%20cool%20but%20this%20paste%20must%20be%20pipped%20or%20spooned%20while%20still%20hot.%20Once%20it%20cools%20it%20is%20very%20hard%20to%20work%20with.%3C/p%3E%3Cp%3EI%20tried%20pipping%20the%20cookies%20but%20soon%20found%20that%20using%202%20spoons%20is%20easier%20and%20faster.%3C/p%3E%3Cp%3EArrange%20at%20least%203-4%20trays%20and%20place%20baking%20paper%20on%20them.%3C/p%3E%3Cp%3EWith%202%20spoons%20spread%20cookies%20on%20the%20baking%20paper%20leaving%20a%20lot%20of%20room%20in%20between%20as%20these%20cookies%20spread%20out%20a%20lot.%20Pat%20the%20dough%20down%20a%20bit%20to%20get%20thin%20lace%20like%20cookies.%3C/p%3E%3Cp%3EBake%20for%205-6%20minutes%20only.%20As%20soon%20as%20they%20are%20light%20brown,%20take%20out%20of%20the%20oven.%20They%20burn%20fast.%20Once%20out%20of%20the%20oven,%20take%20the%20baking%20sheets%20with%20the%20cookies%20on%20them,%20off%20the%20baking%20trays%20and%20leave%20to%20cool%20on%20a%20table%20or%20cool%20surface.%20Leaving%20them%20on%20the%20hot%20baking%20trays%20will%20keep%20them%20baking.%3C/p%3E%3Cp%3EOnce%20the%20cookies%20are%20cold%20they%20harden%20you%20can%20take%20them%20off%20the%20baking%20paper,%20and%20only%20then%20can%20they%20be%20filled%20with%20chocolate.%3C/p%3E%3Cp%3EI%20melted%20white%20chocolate,%20milk%20truffle%20and%20chocolate%20mint%20and%20filled%2048%20cookies%20(total%20of%2024%20double%20layered%20cookies).%3C/p%3E%3Cp%3EFilled%20with%20white%20chocolate%3C/p%3E%3Cp%3EFilled%20with%20chocolate%20truffle,%20and%20Chocolate%20mint.%3C/p%3E%3Cp%3EThen%20the%20cookies%20were%20wrapped,%20boxed%20and%20shipped%20to%20the%20Food%20Bloggers.%20All%20that%20was%20left%20was%20to%20enjoy%20packages%20and%20look%20forward%20to%20feedback%20from%20the%20recipients%E2%80%A6..%3C/p%3E%3Cp%3EThank%20you%20Lindsay%20and%20Julie%20for%20organizing%20and%20to%20Imperial%20Sugar%20and%20OXO%20and%20Gradmas%20Molasses%20for%20the%20great%20gift%20we%20got%20%20and%20for%20matching%20the%20donations!%3C/p%3E%3Cp%3EFor%20inspiration%20visit%20the%20wonderful%20bloggers%20I%20sent%20cookies%20to:%3C/p%3E%3Cp%3EAesthetic%20Eats%3C/p%3E%3Cp%3EA%20Couple%20in%20the%20Kitchen%3C/p%3E%3Cp%3EBeth%E2%80%99s%20Blue%20Plate%20Special%3C/p%3E%3Cp%3EI%20really%20enjoyed%20the%20cookies%20I%20got%20from%20the%20bloggers%20like%20Chocolate%20and%20Carrots%20%20(great%20website),%20Cupcakes%20and%20Bakes%20and%20also%20from%20Food,%20Pleasure%20and%20Health.%3C/p%3E%3Cp%3EI%E2%80%99m%20already%20looking%20forward%20to%20next%20year%3C/p%3E%3Cp%3EHave%20a%20great%20Holiday%20Season%20with%20your%20loved%20ones!!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
