%202.%20They%E2%80%99re%20expensive.%20If%20they%20are%20not%20on%20sale,%20real%20Oreos%20break%20the%20bank!%20And%20for%20what?%20Not%20much.%3C/p%3E%3Cp%3ESo,%20if%20I%E2%80%99m%20going%20home%20for%20the%20weekend%20and%20Eric%E2%80%99s%20staying%20behind%20and%20I%20know%20I%E2%80%99m%20not%20going%20to%20have%20time%20to%20bake,%20I%E2%80%99ll%20pick%20up%20package%20for%20him%20to%20tide%20him%20over.%3C/p%3E%3Cp%3EBut%20I%20never%20buy%20actual%20Oreos.%20I%20am%20so%20cheap!%20As%20a%20result,%20my%20husband%20has%20become%20quite%20the%20expert%20on%20store-brand%20Oreo%20knock-offs.%20According%20to%20Eric,%20the%20Wal-Mart%20brand%20is%20satisfactory,%20the%20HyVee%20brand%20is%20downright%20inedible%20and%20the%20Target%20brand%20is%20the%20runaway%20favorite.%20To%20me,%20they%20are%20all%20about%20the%20same,%20but%20even%20I%20have%20to%20admit%20the%20HyVee%20ones%E2%80%A6ew.%20::shudder::%3C/p%3E%3Cp%3EI%20started%20seeing%20recipes%20for%20homemade%20Oreos%20pop%20up%20this%20past%20fall.%20I%20was%20immediately%20intrigued.%20No%20more%20chasing%20down%20imitation%20Oreos!%20Hooray!%20It%E2%80%99s%20funny,%20because%20when%20I%20finally%20decided%20to%20make%20them%20(to%20give%20away%20as%20holiday%20gifts)%20the%20Oreo%20lover%20in%20the%20house%20only%20got%20to%20sample%20ONE.%20What%20a%20cruel,%20cruel%20world.%3C/p%3E%3Cp%3EI%20used%20a%20combination%20of%20two%20recipes%20to%20come%20up%20with%20this%20holiday%20winner.%20I%20used%20the%20chocolate%20cookie%20recipe%20from%20Joy%20the%20Baker%E2%80%99s%20version.%20I%20was%20drawn%20to%20her%20description%20of%20the%20cookie%20being%20a%20combo%20of%20salty%20and%20sweet%20(which%20I%20LOVE.)%20I%20loved%20her%20idea%20for%20a%20white%20chocolate%20ganache%20filling,%20but%20since%20I%20was%20giving%20them%20away,%20I%20wanted%20something%20that%20wouldn%E2%80%99t%20spoil%20as%20quick.%20Because%20of%20that,%20I%20used%20Michelle%E2%80%99s%20filling%20from%20over%20at%20Brown%20Eyed%20Baker.%20I%20added%20a%20bit%20of%20peppermint%20extract%20to%20the%20filling%20and%20called%20it%20a%20delicious%20homemade%20treat!%3C/p%3E%3Cp%3EThese%20cookies%20were%20perfect.%20The%20filling%20was%20smooth%20and%20creamy%20and%20the%20cookie%20perfectly%20chocolaty%20and%20crunchy.%20Heaven.%20I%E2%80%99m%20sad%20Eric%20only%20got%20to%20have%20one.%20And%20I%E2%80%99m%20a%20little%20sad%20I%20only%20got%20to%20have%20one%20too.%20I%E2%80%99ll%20be%20making%20these%20again%20for%20sure!%3C/p%3E%3Cp%3ECHOCOLATE%20PEPPERMINT%20SANDWICH%20COOKIES%20(Cookie%20recipe%20from%20Joy%20the%20Baker,%20filling%20from%20Brown%20Eyed%20Baker,%20which%20she%20adapted%20from%20Gourmet,%20December%202007)%3C/p%3E%3Cp%3EINGREDIENTS:%3C/p%3E%3Cp%3ECookies:%3C/p%3E%3Cp%3EDIRECTIONS:%3C/p%3E%3Cp%3EMake%20the%20cookies:%3C/p%3E%3Cp%3EPosition%20the%20racks%20in%20the%20lower%20and%20upper%20thirds%20of%20the%20oven%20and%20preheat%20the%20oven%20to%20350%20degrees%20F.%20%20Line%20two%20baking%20sheets%20with%20parchment%20paper.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20a%20paddle%20attachment,%20combine%20the%20sugar,%20flour,%20cocoa%20powder,%20baking%20soda%20and%20salt%20and%20mix%20on%20low%20speed.%20%20With%20the%20mixer%20running,%20add%20the%20butter%20a%20few%20pieces%20at%20a%20time.%20%20The%20mixture%20will%20have%20a%20sandy%20texture%20at%20first%20and%20then%20will%20begin%20to%20form%20pebble-size%20pieces.%20%20As%20soon%20as%20the%20dough%20starts%20to%20come%20together,%20stop%20the%20mixer.%20%20Make%20sure%20all%20the%20butter%20is%20well%20incorporated.%20%20If%20there%20are%20large%20butter%20pockets,%20mix%20for%20a%20few%20seconds%20more.%3C/p%3E%3Cp%3EForm%20and%20roll%20the%20dough%20straight%20from%20the%20mixer.%20%20Do%20not%20chill%20the%20dough.%3C/p%3E%3Cp%3ETransfer%20the%20dough%20to%20a%20board%20and%20use%20the%20heel%20of%20your%20hand%20or%20a%20pastry%20scraper%20to%20shape%20the%20dough%20into%20a%20block%20about%205%20by%207%20inches.%20%20Cut%20the%20block%20into%20two%20pieces.%3C/p%3E%3Cp%3EOne%20at%20a%20time,%20roll%20each%20block%20of%20dough%20between%20two%20pieces%20of%20lightly%20floured%20parchment%20paper%20until%20about%201/8-inch%20thick.%20%20Cut%20into%202%20inch%20rounds%20with%20a%20circle%20cookie%20cutter.%20%20Place%201/2%20to%201%20inch%20apart%20on%20the%20prepared%20baking%20sheet.%20%20You%20can%20form%20and%20roll%20the%20dough%20scraps%20once%20after%20the%20first%20roll.%3C/p%3E%3Cp%3EBake%20for%2012-15%20minutes,%20rotating%20the%20sheets%20halfway%20through%20the%20baking.%20%20Remove%20from%20the%20oven%20and%20cool%20on%20the%20sheets%20for%202%20to%205%20minutes.%20%20They%E2%80%99ll%20be%20too%20soft%20to%20move%20straight%20from%20the%20oven.%20%20Transfer%20the%20cookies%20to%20a%20cooling%20rack%20and%20let%20cool%20completely.%20They%20will%20become%20crunchy%20as%20they%20cool.%3C/p%3E%3Cp%3EMake%20the%20filling:%3C/p%3E%3Cp%3EBeat%20the%20butter%20
