.%20When%20it%20was%20her%20turn%20to%20choose%20the%20next%20recipe%20of%20the%20Stirring%20the%20Pot%20Challenge,%20she%20chose%20lobster%20cakes.%20Not%20what%20I%20would%20pick%20on%20a%20teacher's%20salary,%20but%20I%20digress.%3C/p%3E%3Cp%3EThis%20was%20a%20very%20tasty%20recipe%20-%20the%20aioli%20was%20phenomenal.%20It%20had%20a%20real%20bite-%20salty,%20acidic,%20creamy.%20Just%20what%20I%20wanted%20to%20contrast%20the%20buttery,%20almost%20flat%20taste%20of%20the%20lobster.%3C/p%3E%3Cp%3EBut%20to%20be%20honest,%20I%20had%20a%20real%20problem%20trying%20to%20get%20the%20cakes%20to%20stick%20together.%20Tyler%20said%20in%20the%20instructions%20%22%20The%20mixture%20should%20just%20hold%20together%20in%20a%20ball%20in%20the%20palm%20of%20your%20hand.%22%20Mine%20absolutely%20did%20not.%20Perhaps%20it%20had%20to%20do%20with%20the%20quality%20of%20the%20lobster.%20It%20was%20frozed%20when%20I%20purchased%20it.%20But%20for%20goodness%20sake,%20for%20only%20half%20of%20a%20pound%20it%20was%20$28%20at%20Whole%20Paycheck%20Foods.%20Maybe%20my%20bread%20crumbs%20were%20too%20coarse%20-%20I%20did%20use%20my%20homemade%20breadcrumbs%20after%20all.%20And%20perhaps%20I%20slightly%20overestimated%20two%20slices%20worth.%20Or%20maybe%20the%20problem%20was%20with%20the%20recipe.%20It%20only%20calls%20for%20one%20egg%20white%20and%201/4%20cup%20mayonnaise%20to%20bind%20one%20whole%20pound%20of%20lobster%20and%202%20slices%20of%20white%20bread%20made%20into%20crumbs.%20That%20just%20doesn't%20seem%20like%20enough%20to%20me.%20They%20did%20stick%20together%20enough%20to%20form%20loose%20lumps%20in%20the%20frying%20pan.%20So%20I%20just%20went%20with%20it.%20I'd%20make%20this%20again%20for%20sure,%20but%20perhaps%20I%20would%20use%20only%20fresh,%20never%20frozen%20lobster.%3C/p%3E%3Cp%3EI%20tweaked%20it%20a%20little%20by%20making%20toast%20points%20for%20the%20cakes%20to%20sit%20on%20-%20just%20by%20pan%20frying%20buttered%20bread.%20In%20addition%20after%20sauteing%20the%20lardons%20and%20removing%20them%20from%20the%20pan,%20I%20put%20one%20pint%20of%20cherry%20tomatoes%20into%20the%20pan%20to%20brown.%20Then%20I%20added%20these%20burst%20tomatoes%20to%20the%20frisee%20salad.%3C/p%3E%3Cp%3ETag.%20You're%20it.%3C/p%3E){kind=link}
