,%20but%20I%20had%20my%20sights%20set%20on%20the%20truffle%20butter.%20It's%20one%20of%20those%20ingredients%20that%20sound%20so%20luxurious%20you%20feel%20silly%20to%20buy%20it,%20but%20when%20you%20have%20it,%20it's%20a%20constant%20source%20of%20inspiration%20because%20you%20can't%20stop%20thinking%20about%20what%20it%20can%20get%20added%20to.%20I%20wouldn't%20drown%20anything%20in%20truffle%20butter,%20it's%20like%20a%20finishing%20salt,%20something%20added%20towards%20the%20end%20of%20a%20dish's%20preparation%20for%20an%20added%20layer%20of%20complex%20flavor.%20It%20blesses%20food%20with%20that%20distinctive%20earthy%20umami%20that%20truffles%20have%20--%20slightly%20pungent%20and%20made%20all%20the%20more%20rich%20by%20being%20whipped%20into%20butter.%20Smearing%20a%20little%20pat%20on%20a%20prepared%20steak%20or%20a%20piece%20of%20fish,%20letting%20it%20melt%20and%20the%20flavor%20meld%20with%20the%20already%20cooked%20meat,%20or%20in%20my%20most%20recent%20makings:%20pasta.%3C/p%3E%3Cp%3ESimple,%20simple,%20simple.%20That%20was%20how%20I%20wanted%20to%20test%20drive%20the%20truffle%20butter.%20Pasta%20is%20a%20neutral%20vehicle%20to%20carry%20its%20flavors,%20so%20I%20did%20a%20couple%20of%20quick%20pantry%20pasta%20dishes%20that%20were%20finished%20with%20a%20pat%20of%20this%20wizard-like%20butter.%20I%20made%20a%20basic%20bechamel%20and%20added%20the%20butter%20in%20the%20final%20stage%20of%20tossing%20the%20already-cooked%20noodles%20with%20the%20creamy%20sauce.%20A%20few%20shavings%20of%20Parmesan%20and%20it%20was%20thoroughly%20enjoyed%20on%20a%20cold%20midweek%20night.%20But%20pale%20as%20an%20albino%20--%20if%20I%20had%20fresh%20parsley%20it%20would%20have%20perked%20it%20up%20for%20a%20photo-op.%20Maybe%20a%20chiffonade%20of%20fresh%20basil%20and%20a%20sprinkle%20of%20freshly%20toasted%20pine%20nuts.%20Meh%20--%20mental%20notes%20for%20another%20time.%20The%20best%20use%20for%20the%20truffle%20butter%20so%20far,%20both%20in%20flavor%20and%20looks%20department%20was%20the%20classic%20pasta%20carbonara.%20A%20light,%20buttery%20rich%20sauce%20thickened%20with%20egg%20and%20flavored%20with%20pepper%20and%20garlic,%20the%20savoriness%20of%20bacon%20or%20some%20kind%20of%20pan-crisped%20fatty%20meat%20--%20it%20holds%20up%20nicely%20with%20the%20truffle's%20distinctive%20unctuous%20quality.%20In%20this%20case,%20I%20had%20extra%20charcuterie%20of%20all%20sorts,%20so%20I%20fried%20those%20odds%20and%20ends%20up%20until%20crisp,%20set%20them%20aside%20and%20toasted%20some%20garlic%20and%20red%20pepper%20flakes%20in%20the%20oil%20before%20whipping%20up%20the%20quick%20pan%20sauce%20that%20lightly%20coats%20the%20noodles.%20Truffle%20butter%20goodness%20was%20added%20last,%20right%20as%20the%20cooked%20pasta%20was%20added.%20I%20like%20sprinkling%20the%20crispy%20meat%20over%20the%20top%20as%20a%20garnish,%20and%20reserving%20the%20egg%20yolk%20to%20top%20it.%20It%20makes%20for%20a%20very%20pretty%20presentation,%20that%20lovely%20golden%20yolk%20and%20browned%20meat%20crisps%20over%20a%20pile%20of%20lightly%20sauced%20pasta.%20Happy%20Valentine's%20Day%20to%20me.%3C/p%3E){kind=link}
