.%3C/p%3E%3Cp%3EThe%20next%20eggplant%20epiphany%20came%20when%20my%20husband%20and%20I%20started%20visiting%20Utah%20before%20moving%20here.%20We%20worked%20by%20day,%20took%20a%20hike%20on%20the%20local%20trails%20in%20the%20afternoon%20and%20often%20ended%20the%20day%20with%20a%20meal%20at%20Robert%20Redford%E2%80%99s%20beautiful%20Sundance%20resort.%20Sitting%20in%20the%20Owl%20Bar%20with%20a%20beer%20(him)%20and%20Bloody%20Mary%20(me),%20he%20always%20ordered%20the%20chicken%20tortilla%20soup,%20while%20I%20was%20consistently%20drawn%20to%20the%20penne%20pasta%20tossed%20with%20eggplant%20and%20a%20light%20rosemary%20and%20olive%20oil%20sauce.%20I%20was%20hooked.%3C/p%3E%3Cp%3EWhen%20Maria%20of%20Two%20Peas%20and%20Their%20Pod%20and%20I%20decided%20to%20get%20together%20for%20a%20morning%20of%20shooting%20recipes%20and%20figuring%20out%20our%20new%20cameras%20(we%E2%80%99re%20both%20smitten%20with%20the%20Canon%207d),%20I%20set%20to%20work%20coming%20up%20with%20a%20lunch%20dish%20to%20share%20with%20my%20vegetarian%20friend.%20While%20Maria%20put%20together%20a%20beautiful%20salad,%20filled%20with%20all%20sorts%20of%20goodies%20(I%20won%E2%80%99t%20ruin%20the%20surprise%20%E2%80%93%20you%E2%80%99ll%20just%20have%20to%20see%20it%20on%20her%20blog),%20I%20worked%20on%20a%20simple%20lunch%20pizza,%20using%20whole%20wheat%20naan%20bread%20as%20the%20crust.%3C/p%3E%3Cp%3ENow,%20of%20course%20you%20could%20use%20homemade%20naan%20(visit%20Prerna%20of%20Indian%20Simmer%20for%20an%20awesome%20tutorial)%20and%20you%20are%20welcome%20to%20use%20a%20non-whole%20wheat%20variety.%20It%E2%80%99s%20up%20to%20you.%20The%20most%20important%20parts%20of%20this%20pizza%20are%20the%20broiled%20eggplant%20and%20the%20flavorful%20pesto,%20made%20with%20cilantro,%20jalapeno%20pepper,%20garlic%20and%20lime%20juice.%3C/p%3E%3Cp%3EThe%20pesto%20is%20one%20I%E2%80%99ve%20made%20before%20to%20accompany%20flank%20steak%20or%20chicken,%20but%20it%20works%20beautifully%20on%20this%20pizza.%20When%20I%20made%20it%20at%20Maria%E2%80%99s%20house,%20I%20diligently%20toasted%20some%20sliced%20almonds%20to%20add%20to%20the%20pesto.%20However,%20when%20we%20were%20cleaning%20up%20at%20the%20end,%20I%20discovered%20them%20sitting%20in%20the%20pan,%20waiting%20patiently.%20The%20pesto%20was%20fantastic%20without%20them,%20but%20if%20you%20would%20like%20a%20little%20nuttiness%20added,%20use%20about%203%20tablespoons%20of%20the%20toasted%20nuts%20to%20the%20mixture.%3C/p%3E%3Cp%3EAfter%20snapping%20our%20photos%20and%20reheating%20the%20pizzas%20(because%20of%20course%20they%20had%20become%20cold%20while%20being%20photographed%20%E2%80%93%20the%20bane%20of%20a%20food%20bloggers%E2%80%99%20family%20and%20friends%20existence),%20we%20sat%20down%20to%20our%20healthy,%20extremely%20tasty%20lunch.%20Since%20we%20had%20Maria%E2%80%99s%20lovely%20salad%20as%20well,%20we%20each%20only%20ate%20half%20of%20a%20pizza.%20However,%20if%20the%20pizza%20is%20going%20to%20be%20the%20only%20thing%20served,%20I%20would%20plan%20for%20one%20pizza%20per%20person.%3C/p%3E%3Cp%3ELet%20me%20tell%20you,%20making%20and%20photographing%20recipes,%20while%20talking%20about%20blogging%20and%20life%20with%20a%20sweet%20friend%20(and%20playing%20with%20an%20adorable%20little%20baby%20boy)%20is%20a%20heck%20of%20a%20lot%20more%20fun%20than%20doing%20it%20by%20yourself.%20When%20you%20throw%20in%20good%20food%20%E2%80%93%20well,%20it%20just%20doesn%E2%80%99t%20get%20any%20better.%3C/p%3E%3Cp%3EThe%20recipe:%3C/p%3E%3Cp%3EThe%20pesto:%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20food%20processor%20or%20a%20blender,%20combine%20cilantro,%20garlic,%20jalapeno,%20lime%20juice,%20salt%20and%20pepper.%20Pulse%20to%20roughly%20chop.%3C/p%3E%3Cp%3EWith%20the%20motor%20running,%20slowly%20pour%20in%20the%20olive%20oil.%20Blend%20until%20smooth.%3C/p%3E%3Cp%3EThe%20pizza:%3C/p%3E%3Cp%3EPreheat%20the%20broiler.%20Set%20the%20rack%202%20to%203%20inches%20from%20the%20heat%20source.%3C/p%3E%3Cp%3ELay%20the%20eggplant%20pieces%20on%20a%20baking%20sheet%20lined%20with%20foil.%20Brush%20both%20sides%20of%20eggplant%20with%20olive%20oil%20and%20season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EPlace%20eggplant%20under%20the%20broiler%20and%20cook%20until%20golden%20brown,%202%20to%203%20minutes%20per%20side.%20Watch%20it%20carefully%20so%20it%20doesn%E2%80%99t%20burn!%20Let%20cool%20on%20baking%20sheet%20for%20about%205%20minutes.%3C/p%3E%3Cp%3ELower%20the%20oven%20rack%20to%20the%20middle%20setting%20and%20turn%20the%20oven%20to%20425%20degrees%20F.%20Place%20the%20naan%20pieces%20on%20an%20ungreased%20baking%20sheet.%3C/p%3E%3Cp%3EDivide%20the%20pesto%20between%20the%20pieces%20of%20naan%20and%20spread%20evenly.%20Top%20with%20eggplant,%20overlapping%20the%20pieces%20slightly.%20Sprinkle%20with%20dried%20red%20chile%20flakes%20and%20top%20with%20mozzarella.%3C/p%3E%3Cp%3EPlace%20the%20pizzas%20in%20the%20oven%20and%20cook%20until%20cheese%20is%20melted%20and%20naan%20are%20starting%20to%20b
