%3C/p%3E%3Cp%3EWe've%20spent%20the%20last%20few%20weeks%20in%20south%20Florida.%20HOT,%20HOT,%20HOT!!!%20But%20then%20again,%20it's%20been%20pretty%20steamy%20everywhere.%20This%20week%20NC%20will%20be%20seeing%20temps%20in%20the%20high%2090s%20and%20ridiculous%20humidity.%20Lots%20of%20cool%20salads%20on%20the%20menu,%20I'm%20thinking.%3C/p%3E%3Cp%3ESo,%20in%20spite%20of%20some%20health%20issues,%20%20we%20had%20a%20wonderful%20time%20with%20some%20of%20my%20very%20favorite%20people.%3C/p%3E%3Cp%3EAs%20soon%20as%20we%20arrived%20a%20certain%20little%20miss%20asked%20WHEN%20we'd%20be%20making%20cupcakes!%3C/p%3E%3Cp%3ESo%20of%20course,%20we%20made%20cupcakes!!%3C/p%3E%3Cp%3EAunt%20Allie%20had%20a%20blast%20with%20fondant...%3C/p%3E%3Cp%3EAnd%20Uncles%20Timmy%20and%20Nick%20celebrated%20%22the%20Decision%22%20(how%20silly%20was%20THAT??)%20and%20had%20fun%20making%20space%20monsters%20and%20a%20princess%20(notice%20the%20crown-%20Grandpa%20named%20her%20Princess%20Steroid)%3C/p%3E%3Cp%3EGrandma%20cried%20(a%20LOT)%20when%20we%20left,%20but%20we'll%20be%20seeing%20our%20angels%20again%20very%20soon%3C/p%3E%3Cp%3EAnyway,%20as%20it%20happens,%20this%20is%20an%20easy%20dish%20that%20can%20be%20an%20appetizer%20when%20made%20in%20individual%20molds%20as%20I%20show%20here,%20a%20fabulous%20Meatless%20Monday%20entree%20made%20in%20a%20large%20tart%20pan,%20or%20a%20carnivores%20delight%20with%20the%20addition%20of%20sausage,%20chorizo,%20chicken,%20or%20shaved%20beef%20to%20the%20mushroom%20mixture%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20medium%20sauce%20pan%20over%20medium-low%20heat.%20Add%20the%20shallot,%20garlic%20and%20bay%20leaf%20and%20sweat,%20adjust%20heat%20to%20prevent%20browning.%20Add%20the%20sugar%20and%20broth%20and%20bring%20to%20a%20boil.%20Whisk%20in%20the%20polenta%20until%20combined%20and%20reduce%20to%20a%20simmer.%20Cook%20on%20medium-low%20heat%20for%2020%20minutes,%20stirring%20every%20few%20minutes%20to%20prevent%20burning.%20Turn%20off%20heat%20and%20cover%20for%20an%20additional%2010%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20bay%20leaf,%20discard.%20Pour%20the%20polenta%20into%20a%20large%20tart%20pan%20with%20removeable%20bottom%20or%20individual%20molds-%20make%20sure%20they're%20all%20well%20greased%20(I%20use%20Pam)-%20and%20spread%20into%20an%20even%20layer%20about.%20Cover%20and%20allow%20to%20cool%20completely%20in%20the%20fridge.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20Fahrenheit.%20In%20a%20large%20bowl,%20combine%20the%20mushrooms,%20olive%20oil,%20garlic,%20salt%20and%20pepper.%20Line%20a%20baking%20sheet%20with%20parchment%20paper%20and%20pour%20the%20mushroom%20mixture%20onto%20the%20parchment-lined%20baking%20sheet.%20Bake%20for%2020%20minutes.%20Stir%20and%20raise%20heat%20to%20450%20degrees.%20Roast%20for%20an%20additional%2010%20minutes%20until%20the%20mushrooms%20are%20tender%20and%20caramelized.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20allow%20to%20cool%20for%2010%20minutes.%20Place%20the%20mushrooms%20into%20a%20food%20processor%20with%20the%20thyme%20and%20oregano.%20Pulse%20until%20the%20mushrooms%20resemble%20a%20chunky%20paste.%20Add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EAssemble:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20%20Remove%20from%20tart%20pans%20and%20carefully%20transfer%20the%20polenta%20to%20an%20oiled%20baking%20sheet.%20Bake%20for%2010%20minutes%20or%20until%20the%20bottoms%20are%20a%20little%20crispy.%20Top%20each%20polenta%20shape%20with%20the%20warm%20mushrooms,%20a%20couple%20of%20tomatoes%20and%20fresh%20oregano%20leaves.%3C/p%3E%3Cp%3EServe%20warm%20or%20at%20room%20temperature%20with%20a%20fresh%20basil/garlic%20aioli.%20Drizzle%20with%20a%20good%20quality%20olive%20oil%20before%20serving%3C/p%3E%3Cp%3EBasil%20Aioli:%3C/p%3E%3Cp%3E1/3%20cup%20stale%20bread%20crumbs%3C/p%3E%3Cp%3E1/2%20tablespoon%20white%20wine%20vinegar%3C/p%3E%3Cp%3E6%20cloves%20garlic%3C/p%3E%3Cp%3E1/2%20teaspoon%20salt%3C/p%3E%3Cp%3E6%20egg%20yolks%3C/p%3E%3Cp%3E1%201/2%20cup%20olive%20oil%3C/p%3E%3Cp%3Epepper%3C/p%3E%3Cp%3EHot%20pepper%20sauce%3C/p%3E%3Cp%3E1/4%20cup%20fresh%20basil%20or%20cilantro%3C/p%3E%3Cp%3ECombine%20bread%20crumbs,%20white%20wine%20vinegar,%20garlic,%20salt,%20and%20egg%20yolks%20in%20a%20food%20processor.%20With%20the%20motor%20running,%20slowly%20drizzle%20in%20olive%20oil%20to%20make%20an%20emulsion.%20Add%20pepper%20and%20hot%20sauce,%20to%20taste.%20Add%20basil%20%20and%20pulse%20to%20combine.%3C/p%3E%3Cp%3E***Note-%20the%20basil%20aioli%20is%20excellent%20on%20sandwiches%20or%20panini%20as%20is%20the%20mushroom%20paste%3C/p%3E%3Cp%3EDessert%20tonight%20was%20made%20with%20Mr.%20Bramasole%20in%20mind.%20We%20drove%20the%2013%20hours%20home%20through%20the%20night%20and%20he%20would%20periodically%20stop%20and%20indulge%20in%20some%20gas%20station%20snacks%20(I%20know-%20YUCCH!!).%20His%20favorite%20is%20Drake's%20Orange%20Cupcakes,%20which%20he%20hasn't%20had%20since%20leaving%20NY.%20Some%20things%20
