%20and%20me%20in%20showcasing%20some%20of%20the%20best%20recipes%20of%20our%20fellow%20foodie%20bloggers.%3C/p%3E%3Cp%3EThis%20week,%20I%20attempted%20a%20recipe%20I%20found%20at%20Joy%20the%20Baker.%20%20She%20has%20created%20a%20homemade%20version%20of%20my%20very%20favorite%20candy%20bar,%20Almond%20Joy.%20%20Her%20post%20for%20this%20delectable%20sweet%20contains%20great%20step-by-step%20photos%20(great%20photos,%20by%20the%20way),%20and%20a%20wonderful%20sense%20of%20humor.%20%20My%20completed%20version%20of%20her%20recipe%20turned%20out%20to%20look%20more%20like%20Almond%20Joys%20on%20steroids,%20so%20my%20try%20at%20them%20resulted%20in%20only%20about%2020%20candy%20bars%20instead%20of%20her%2030.%20%20Ah%20well.%20%20They%20are%20delicious,%20the%20perfect%20homage%20to%20my%20candy%20bar%20of%20choice.%20%20Thank%20you,%20Joy!%3C/p%3E%3Cp%3EHomemade%20Almond%20Joy%3C/p%3E%3Cp%3E(Source:%20recipe%20found%20on%20www.joythebaker.com)%3C/p%3E%3Cp%3EYield:%20makes%20about%2030%20little%20bars%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F,%20spread%20raw%20almonds%20onto%20a%20baking%20sheet%20and%20toast%20for%20about%2010%20minutes.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20together%20sweetened%20condensed%20milk,%20powdered%20sugar,%20salt%20and%20vanilla%20extract.%20%20Stir%20in%20the%20unsweetened%20coconut.%20%20The%20mixture%20will%20be%20thick.%20%20Place%20mixture%20in%20the%20freezer%20for%2030%20minutes%20for%20tom%20make%20the%20mixture%20easier%20to%20work%20with.%3C/p%3E%3Cp%3ELine%20a%20baking%20sheet%20with%20parchment%20paper.%20%20Remove%20the%20coconut%20mixture%20from%20the%20freezer.%20%20With%20clean%20hands%20shape%20one%20tablespoon%20of%20coconut%20into%20a%20little%20log%20about%202%20inches%20long%20and%203/4-inch%20thick.%20%20Press%20the%20logs%20together%20very%20well%20so%20they%20don't%20crack%20when%20dipped.%20%20%20%20Place%20the%20log%20on%20the%20lined%20baking%20sheet%20and%20continue%20until%20all%20of%20the%20coconut%20mixture%20is%20gone.%20%20Rinse%20hands%20occasionally%20if%20they%20get%20too%20sticky.%20%20Press%20an%20almond%20on%20top%20of%20each%20coconut%20log.%20%20(I%20pressed%20the%20almond%20into%20the%20mixture%20a%20bit.)%20It%20might%20not%20completely%20stick.%20%20That's%20ok.%20%20Place%20the%20baking%20sheet%20in%20the%20fridge%20to%20chill%20while%20you%20melt%20the%20chocolate.%3C/p%3E%3Cp%3EPlace%20a%20medium%20%20pot%20with%20two%20inches%20of%20water%20over%20a%20medium%20flame.%20%20Bring%20the%20water%20to%20a%20simmer.%20%20Place%20chocolate%20chips%20in%20a%20heat%20proof%20bowl%20and%20place%20the%20bowl%20over%20the%20simmering%20water.%20%20Stir%20the%20chocolate%20as%20it%20melts.%20nbsp;Turn%20off%20the%20flame%20once%20the%20chocolate%20has%20melted%20but%20keep%20the%20bowl%20of%20melted%20chocolate%20over%20the%20hot%20water.%20(I%20melted%20the%20chocolate%20in%20a%20bowl%20in%20the%20microwave.%20I%20started%20with%201-1/2%20minutes%20at%20High%20power,%20and%20continued%20at%2010%20second%20intervals,%20until%20the%20chocolate%20was%20thoroughly%20melted.)%3C/p%3E%3Cp%3ERemove%20the%20coconut%20candies%20from%20the%20fridge.%20%20Place%20one%20coconut%20almond%20log%20on%20a%20fork.%20%20Use%20a%20spoon%20to%20scoop%20a%20bit%20of%20chocolate%20over%20the%20almond.%20%20This%20will%20help%20the%20almond%20stick%20to%20the%20candy%20and%20not%20fall%20off%20during%20dipping.%3C/p%3E%3Cp%3ELower%20fork%20into%20chocolate%20and%20spoon%20chocolate%20over%20candy%20to%20coat.%20%20Lift%20fork%20and%20gently%20shake%20to%20release%20some%20of%20the%20chocolate.%20%20Scrape%20the%20bottom%20of%20the%20fork%20along%20the%20side%20of%20the%20bowl%20and%20place%20on%20the%20lined%20baking%20sheet.%20%20You%20might%20need%20a%20toothpick%20to%20help%20get%20the%20candy%20off%20the%20fork.%20Repeat%20until%20all%20candy%20is%20coated%20in%20chocolate.%20%20If%20chocolate%20gets%20thick,%20just%20turn%20on%20the%20flame%20and%20heat%20slightly.%20(I%20used%20a%20candy-dipping%20utensil%20for%20a%20bit%20more%20ease%20of%20use.)%3C/p%3E%3Cp%3ELet%20dipped%20candy%20harden%20in%20the%20fridge%20for%2045%20minutes.%20%20Store%20in%20an%20airtight%20container%20at%20room%20temperature.%20%20If%20you%20need%20to%20layer%20the%20candy%20in%20a%20container,%20use%20waxed%20paper%20to%20separate%20the%20layers.%3C/p%3E){kind=link}
